This is easily the best ramen you can get in Geneva. They charge a price that would make one expect to get a flawlessly executed bowl of ramen.
The broth more than meets expectation. They have a good variety of choice when it comes to this part of the dish, where most other shops I have been to usually just have one option. I thought the lack of focus would translate into poorer quality, but I am happy to admit I was wrong, it was incredible. This got them the third star instead of just 2. I would expect tonkotsu to be thicker, but it was still great.
Then we come to the egg. It was absolutely overcooked. When I say overcooked I mean the yoke dried out my tongue. A ramen egg should be soft boiled. This egg was overcooked even if it was meant to be hard boiled and not soft.
The chashu also needs work. Good chashu should be falling apart. You should not be able to cut it as thin as what I was served and it still hold together. This meat was rather tough in comparison to most chashu I have had. It wasn't terrible, but there is a lot of room for improvement here.
Now we come to the noodles. I felt like they were one step up from the instant noodles you get for 50 cents in the USA. The portion was good, but I know for a fact there are better quality noodles than these. Again, not bad but could definitely be better.
The selection of vegetables was great. Sprouts and leeks is my favorite combo for ramen. I would not change anything about this, they were great.
Overall it was an okay bowl of Ramen. Nothing I am going to be telling my friends in California about. I do wish I could get a bowl from Tsujita Annex on Sawtelle. This ramen was good enough to satisfy my ramen itch, but isn't something I would get 2 or 3 times a week like I have been known to get Tsujita. It left me a bit disappointed I paid as much as I did for it. Probably worth about half of what it cost me. read more
