As one who has had several encounters with Yoder's Butcher Block, I figured it was high-time I expressed my appreciation for the consistent high quality at a reasonable price that I have received. Everyone complains when something isn't right, but few people pause to say something nice when things go well. On a number of occasions, I've taken wild hog to Mr. Yoder. Every time I have received exactly the cuts I requested. Everything was professionally wrapped and frozen solid. This alone is praiseworthy, but there's more! The pork breakfast sausage I received was the BEST pork sausage I've had anywhere. I've eaten sausage from around the world, and this sausage ranks among the best. The sausage was so lean that I had to add spray oil to the pan as it cooked - so it wouldn't stick to the pan! The flavor of the sausage was mild, but flavorful. My wife loved it so much that she asked me to make "hamburger" patties with it and hamburgers for the grill. I complied. I was glad I did, because it made some delicious "hamburgers". Since it was pork sausage, it was closer to "ham"burger than beef!
Additionally, since the pork sausage is so mild in flavor, it lends itself to uses that go beyond the breakfast table. I found a recipe on the I-net that turns pork sausage into Italian sausage. I have used this "breakfast sausage" in ways that would inspire the "Iron Chef". The next time I bring him a wild hog to process, I'll be tempted to have the whole hog turned into "breakfast" sausage! read more
