The best Hojicha latte I've had at a coffee shop hands down!! Witness Coffee Roasters has a creative menu, the highest quality ingredients, and friendly staff that take time to craft your drink with care. My mind was blown at the perfect balance of Hojicha with oat milk, a lot of times when I get matcha or Hojicha lattes I find shops don't get the ratio right but Witness created a delicious harmony of flavors. My husband got the drip coffee and he said it was the best he'd had on the west coast, I can confirm the coffee had incredible berry-forward, rich flavors. The vibes inside Witness Coffee Roasters is so chill, too. You can request a vinyl album to be played. Our barista was incredibly knowledgeable about coffee drinks, we enjoyed chatting with him. Also, their vegetarian-forward menu looks great. While their inside is super cozy, they do have a few outdoor tables in the front for folks with dogs. I wish we had a Witness Coffee Roasters where we live. I can't recommend this local shop more, they get a 12/10, they are a total gem in Eureka. read more

One year later review update: STILL kicking ass at making the best coffee I've ever had. After traveling all over Ca,Or, & Nv, Witness is still making the best coffee drinks. I'm so damn spoiled now. Other coffee shops in Humboldt CA should see this place as an aspirational influence! Coffee and food are brought to you (unless it's busy, then food is brought to you and your drink is announced at the bar to collect); every food item is great flavor, texture, fresh ingredients, and no-nonsense sauces (only quality sauces can be found here!) I was in Humboldt County for work and as a big coffee fan I had to make sure to find some local spots. I visited Witness twice. The first time I got a dirty chai latte and the overnight oats. The chai ended up being a little too strong flavor wise for me and the owner was kind enough to remake me a drink the next day. The oats were 10/10 and I ordered them the second day as well. Great little coffee shop! I loved the vibe and aesthetic inside. They only serve plant based here which includes coffee creamers as well as food. I like my lattes with oatmilk so no problem for me. I ordered my usual drink: hot, oatmilk latte and it was delicious. I ordered the larger size and the barista made sure to let me know that both sizes contain 2 shots of espresso so I opted to pay more for a third shot. Interestingly enough, they seem to make 2 shot espresso drinks so he split the second drink in half since I thought 4 shots would be a bit too much for me and only wanted 3. Amazing experience. Ordered a macchiato. The barista nailed it. That's not a lot to work with. You have to know how to mix the limited amount of milk with your shots. I'm soooo happy I tried this place when I was in town. The pastry was also good. But I love good coffee. Highly recommend. When I am back I will repeat. So good. read more

First of all, amazing. We have tried multiple coffee spots in the Humboldt Area and this is the best. The inside and outside of the building is nice. The service was also nice. Now for the rating of the items I had tried. The Breakfast Sando: 9/10. (Best breakfast sandwich I've tried.) Coffee Cake: 9.5/10 (Best I've ever tried, very sweet without an overpowering coffee taste) Hot Latte: 9.5/10 (I don't drink coffee, but my girlfriend says it is one of the best, and near perfect) Organic Golden Rooibos Chai: 6/10 (It's not bad, and I also don't like chai that much I'm usually a hot chocolate person. Though I've drank a few different chai drinks, and this one is just not the best for me.
