One year later review update: STILL kicking ass at making the best coffee I've ever had. After traveling all over Ca,Or, & Nv, Witness is still making the best coffee drinks. I'm so damn spoiled now. Other coffee shops in Humboldt CA should see this place as an aspirational influence! Coffee and food are brought to you (unless it's busy, then food is brought to you and your drink is announced at the bar to collect); every food item is great flavor, texture, fresh ingredients, and no-nonsense sauces (only quality sauces can be found here!) The vibe is still very welcoming, they've added sidewalk tables, and another window bar to sit and enjoy the plants and sunshine that beams in from the courtyard - for that matter, you can sit IN the courtyard! read more

I like the vibe of this place! Staff are nice and the interior is very clean and cozy. I got a That'll Do It drink with espresso, ginger beer, and lime essence. We also tried the drip. It was an intense flavor. So good! I liked the couches. It has nice mellow music too. The ingredients seem to be super fresh. I love the plants that decorate this place. Great little coffee shop! I loved the vibe and aesthetic inside. They only serve plant based here which includes coffee creamers as well as food. I like my lattes with oatmilk so no problem for me. I ordered my usual drink: hot, oatmilk latte and it was delicious. I ordered the larger size and the barista made sure to let me know that both sizes contain 2 shots of espresso so I opted to pay more for a third shot. Interestingly enough, they seem to make 2 shot espresso drinks so he split the second drink in half since I thought 4 shots would be a bit too much for me and only wanted 3. I'm so glad that Witness is here! Bo and his staff serve the best coffee around - sometimes from local roaster Fogline but most often from Portland roasters Futura and Push X Pull. My kids and I love the food here. My favorite is the breakfast sandwich on a biscuit that I never would have guessed was vegan and the avocado toast is a big hit with my daughter. Amazing experience. Ordered a macchiato. The barista nailed it. That's not a lot to work with. You have to know how to mix the limited amount of milk with your shots. First of all, amazing. We have tried multiple coffee spots in the Humboldt Area and this is the best. The inside and outside of the building is nice. The service was also nice. Now for the rating of the items I had tried. The Breakfast Sando: 9/10. (Best breakfast sandwich I've tried.) Coffee Cake: 9.5/10 (Best I've ever tried, very sweet without an overpowering coffee taste) Hot Latte: 9.5/10 (I don't drink coffee, but my girlfriend says it is one of the best, and near perfect) Organic Golden Rooibos Chai: 6/10 (It's not bad, and I also don't like chai that much I'm usually a hot chocolate person. Though I've drank a few different chai drinks, and this one is just not the best for me. I've only had a chance to try their breakfast sandwich which was a good size (they use just egg and a really melty cheese). Best Coffee in Town We visited Eureka and looked for good coffee. This roastery just opened in March, so it's very new! We ordered the Bali pour-over coffee, a cappuccino, and a coffee cake. The pour-over coffee was amazing--we could taste notes of blueberry, raspberry, and a hint of chocolate. We could also tell how fresh and delicious the beans were. The most interesting thing was that everything was vegan! So, I had an oat milk cappuccino. It's definitely worth visiting if you want to enjoy artisan coffee in Eureka! read more
