The husband and wife team of Jan Ostle & Mary Wilson of Wilson's in Bristol initially opened in 2016 with many struggles. They endured a difficult financial start, plus the challenge of raising a toddler whilst running the restaurant with minimal kitchen staff to try keeping costs manageable.
The couple's journey to success was largely built on their "farm-to-table" philosophy - with Mary tending the restaurant's own two-acre vegetable garden while husband, Jan worked in the kitchen creating amazing meals from their vegetable garden offerings and availability of seasonal local farmers.
As one can observe, the fresh creative cuisine is beautifully presented and delicious. A true testament of the love of their combined crafts.
Eventually Wilsons developed a positive robust following, plus critical acclaim which included a Michelin Green Star in 2022 for their sustainable practices, before earning their first (well deserved) Michelin star in February 2025.
