The ambiance here is very nice, with a retro apothecary style vibe. It is clean, open, and inviting (albeit hard to find). It is clear that the distiller is very passionate about his craft. That being said, I don't think he's quite found his "voice" in spirits yet. Overall, I found the gins to be ok, not amazing. The vodka was, well, vodka. I really enjoyed the tour with lot of useful information about how he makes the drinks and he testes the products. As the distiller is very very passionate about his craft, I am sure things will get better over time. I look forward to him finding his own unique style.

Discussing the distillation process with John Howie

Absolutely wonderful place to visit. I was here as part of a Yelp event, so the person giving us the Distillery tour was chef and co-owner John Howie, which I imagine doesn't happen as often, but the rest of it seemed to be what you would experience any other time here at Wildwood, which is excellence. We started off in the Tasting Room, where Chef Howie discussed the process of distillation and what goes into it. He described how many awards their products have learned recently, which was very impressive. We then went through the Distillery, where he told us all sorts of things about the process and showed us how it is done. I'm not much of a drinker and I'm not much of a liquor snob, but I found this really fascinating and I found his passion for distillation to be infectious. The tour itself took about 30 minutes, then it was on to the sampling part of the tour, the happiest part of all! We were given, in my opinion, rather generous pours of each gin and the vodka they produce, as well as the whiskey. In this case, they were sold out of the Dark Door whisky but Chef Howie was kind enough to bring his own personal bottle to the tasting so we could try it. I imagine that's not very common, but if you ever have the opportunity to try this whiskey, you should because it was smooth as butter and had plenty of amazing flavor and caramel notes. (Point of confession: This is coming from someone who can't stand Jack Daniels.) Their Kur gin, the most popular and best for cocktails, made the strongest impression on me, especially after we were invited to try it in a Negroni. Smooth as butter! I bought a bottle on site. Most of the bottles are around $30 a piece before tax. I expected them to be even more expensive considering how many awards they have won and how good they were but thankfully they kept it in a more reasonable price range. (The Dark Door whiskey is $50, when available.) While you can buy their gin and vodka in Whole Foods or Total Wine, it's fun to buy it at Wildwood Spirits because you can sample it first. Where else can you do that? I will be back and I'll be bringing my friends.

They have a beautiful facility and the tasting room was filled with souvenirs from shirts, jackets, flasks, glasses and all of them looked top-notch. Loved to buy a baseball cap, but my head is 61cm and I must have the velcro closure as the plastic snap hats are just too small & cheap for me. They have a counter bar area strategicly set with no chairs where it's comfortable for four 1/4 to 1/2 oz taste, but you don't get too comfortable. The hostess was pleasant, inviting and we honestly enjoyed reviewing the menu of +10 different whiskeys where we need to pick out 4 of them for the standard flight. They had a cross section of proofs between bourbons and ryes with a premixed old fashioned that was made by aging in maple syrup barrels. My wife went for ryes and i did the bourbons. I started with the 80 proof then navigated toward the highlight of the 115-proof. I was pleasantly impressed how drinkable without the burn going down was the 115-proof as it benefits from a sweeter, corn-forward base + cooler aging that results in better integration and less aggressive burn -- it "drinks easier" than the numbers would suggest. Of course, try what you can and it's great when you can share tastes between 2 people all the choices. For me, I found the cast strength aged 6 years 115 proof to be the best.

We each decided to do a tasting. I had a few that I past on to the husband but there was one that I actually enjoyed. The person was explaining the differences between each and was really trying to find something that I would like. I appreciated that extra step. It was a good experience. Definitely better whiskey than you get at bars. Hmmm, maybe that's why I don't like whiskey? Next time I need to write down the whiskey I like so that I can just order that and not the rest. :) ....... .. ......... .. ....

There's a distillery part and also a food shop (de la something and so delish) both under the same roof. Huge tables so big groups will have no problem. I had the whisky flight, got a lovely explanation by the dude. All were amazing including one from a Washington peat bog!! How cool is that. Also had an Old Fashioned and it was just perfect, so cocktails are also well done here. Go!

The concept is casual/partial self service (order beverages/food at the counter; food will be delivered to your table, drinks are picked up by customers at the bar). Self-bussing of tables works relatively well - the space is pretty clean, all things considered. As far as the beverages go, they're pretty good - they only have mixed drinks with Copperworks' distilled liquor at the moment (beer and wine to come). Prices are okay ($12/drink, approximately), but there's not much of a rhyme or reason to the drink sizes (some come in a 16 oz-ish glass, some in 12 oz, and outdoor/patio drinks are poured in wee plastic cups, so avoid those if you want your money's worth). Food-wise - DLS' food is visually pretty, but the salt/pepper levels on everything were heavy. Not inedibly so, but the heavy seasoning impacted the enjoyment of the food. For example: the kimchi fried rice was not fun to eat after 4/5 bites. Kimchi itself is salty all by its lonesome; additional salt has to be used very sparingly with it imo. That all being said: I really liked the space, the staff, and the vibe - I think we'd give this another shot in the future.
