The food quality is slightly different based on the times you come in to eat. Which has slowly started catching my attention more and more. The service here is good. Always has been for me each time I come in. Refills, questions, and all the things you expect to get. I have never been treated rudely either or like I am different from other quests, but I have heard with a couple of my friends that they are treated differently. Which isn't good at all for keeping business. When you walk in the place is how it always looks. To me it hasn't seemed to change except a couple of the neon lights not being on. I got my bowl and the broth looked a little bit like it was weak and not concentrated enough...I figured maybe it's a little bit weaker flavor. I dip my little ladle spoon and take a sip....that looked like weak tonkatsu, but the flavor was something other than tonkatsu. I don't know what it was. The noodles were cooked appropriately, but the ajitama was not seasoned and it was not soft boiled, it was hard boiled. Okay, try out the meat. The meat was a little bit on the tough side and it did not have the flavor of chashu pork. I have had tonkatsu ramen at many different places through California. Even Missouri has a stellar tonkatsu ramen shop. Unfortunately this place does not leave me satisfied. I am afraid I can not give it a 3 star rating due to the fact that tonkatsu is unrecognizable as tonkatsu in relation to flavor. Was the flavor good? Not really. My recommendation would be to remove tonkatsu as an option on the menu altogether because although it looks like tonkatsu, it does not have anything in it that tastes like a tonkatsu ramen.
