I got my bowl and the broth looked a little bit like it was weak and not concentrated enough...I figured maybe it's a little bit weaker flavor. I dip my little ladle spoon and take a sip....that looked like weak tonkatsu, but the flavor was something other than tonkatsu. I don't know what it was. The noodles were cooked appropriately, but the ajitama was not seasoned and it was not soft boiled, it was hard boiled. Okay, try out the meat. The meat was a little bit on the tough side and it did not have the flavor of chashu pork. I have had tonkatsu ramen at many different places through California. Even Missouri has a stellar tonkatsu ramen shop. Unfortunately this place does not leave me satisfied. I am afraid I can not give it a 3 star rating due to the fact that tonkatsu is unrecognizable as tonkatsu in relation to flavor. Was the flavor good? Not really. My recommendation would be to remove tonkatsu as an option on the menu altogether because although it looks like tonkatsu, it does not have anything in it that tastes like a tonkatsu ramen.
