First, definitely plan to spend some extra time here because the food and drinks can take a while to come out. The raspberry hibiscus tea especially doesn't taste as fresh as it used to. It almost has an "old" taste to it, and I'm not sure if they changed the syrup or the way it's made, but it definitely doesn't taste the same as it did when they first opened. I've also noticed that the coffee is very inconsistent. Even when I order the exact same drink, it seems to taste different every time. Some days it's really good, and other days it tastes completely different. I'm sharing this because I genuinely used to enjoy Trio, and I'd love to see the consistency and quality return to what it was when they first opened. The owners need to pay closer attention to quality control, customer experience, and the small details that actually matter in hospitality. The main thing that stands out here is their 1987 coffee roaster which is the center piece of the cafe. They roast various single origin beans on a daily basis, so you know you can purchase some fresh coffee beans here. If you need your beans grounded, they do grind it for you depending on your brewing method. They have beans of light roast, medium roast and dark roast and sell by various weights for a very reasonable price. They also sell various tea leaves, baked goods (croissant, muffin, scones, bagel, Danish, coffee cake, Dessert Therapy cookies, and merchs. They also have a seasonable menu that changes. When I went, it was the Sakura season menu. Staff were all friendly and were very willing to answer any questions regarding the menu. Please note, the base coffee blend for each day varies and rotates on a daily basis For my visit, I tried ... 1. Buttered Coffee (4.5/5) The base coffee for the day was the Peru single origin, which was well-balanced; slightly sweet with a hint of tartness and nuttiness. They then add a chunk of butter into the coffee, which helps cut some of the acidity, but also is supposed to enhance the caffeine effect and give you additional energy from the fat. It does leave a layer of fat/oiliness so if you are not a fan of that, then this may not be for you. The butter did give it a subtle buttery flavor, which I personally liked. 2. Matcha with Sakura Cold Foam (4/5) The matcha was blended smoothly and was not grassy at all. The Sakura cold foam didn't really taste like Sakura (been to Japan, so know what real Sakura flavor should taste like), but instead, just tasted floral. 3. Columbia Supremo Whole Beans Full body and aromatic. Good for those who like to drink black coffee 4. Guatemala Huehuetenango Whole Beans: Crisp, acidic and a hint of nuttiness Glad I found this local roaster where I'll definitely be coming back to get some more fresh beans.

It was in the morning on a Saturday when I came so there was a bit of a line but not too long. After about five minutes, I got a chance to order. I opted for an iced mocha. I would've liked to try one of the yummy looking croissants they had available from Pinyon but the people in front of me got the last one! After a couple of minutes, my order came out.
