They are also cutting their cream cheese with water. I worked in the business. We soften cream cheese with a little water in a big stand mixer to make it more spreadable. Some businesses add more water than they should to stretch the cream cheese. You lose flavor and end up with slop. Not only did this look disgusting, it smelled down right disgusting. Never again. I was burned the first time with their flavorless watered down veg cream cheese. I thought if I got the scallion, it would at least have a little more flavor. Straight in the trash.

When I questioned why he didn't wash his hands first he replied "I'm putting gloves on". Why do food servers think putting gloves on unwashed hands is acceptable? IT IS NOT!
