The guys in the truck were incredibly friendly. Love that one of the guys was from Lafayette, Louisiana! The breakfast croissant was heavenly. The crispy prosciutto on it was chefs kiss. PS, don't sleep on Gold Point either when in RiNo. It's a cool kids club spot with a large patio and great drinks! Anyway, back to Sauvage. I tried a few things and they're worth raving about. The Bayou Fries are BANGING. These seasoned fries doused in herbs, crispy shallots, cheese and a creole sauce are addictive. And for $9, an insane portion of them. Definitely get these and split them with someone you don't hate. A few hours later I ended up ordering the burger and it hit the dang spot. I forgot to snag a pic of the menu (and the burger itself) so I don't remember all that was in it. Plus, I may have had a cocktail or two...ANYWHO a great burger. The most notable thing about it is that they use grass-fed beef. ON a food truck? Hell yes they do! Best part of all this was the [assumed owner/chef] and the entire crew working. It was a busy Friday night on Larimer with prime weather and their ticket times were extremely efficient. I love watching businesses in their element and they seem to be seasoned vets. If y'all are reading this, I was the dude who bought you the Topo Chico! Let the good times roll.

First, there was no standard printed or digital menu on the side of the food truck no longer. Instead, they had a hard-to-read dry-erase board with NO PRICES listed; strike one. We waited patiently in line for about 15-20 minutes (even though we were first), and when we finally got to order, we politely asked if we could substitute carne asada or barbacoa for al pastor on the smothered fries since we don't eat pork. We received a curt and rude "No!, We don't do substitutions!" I laughed and replied kindly that we just don't eat pork, then turned to walk away. Suddenly, the same person leaned out of the truck and yelled, "Ok, I can put shredded chicken tinga on it!" I laughed again and said, "No, thank you. You already said you don't do substitutions." Others were in line now and said "Wow that was rude how he said that to y'all." We ended up going to E&T Thai nearby and had an amazing meal, then returned to enjoy the brewery. As we sat, someone next to us mentioned they paid $40 for three tacos and smothered fries and weren't impressed. He said the tacos had barely any meat, and the fries were overly greasy. Not great value. Honestly, I'm glad we walked away. The rudeness and lack of flexibility saved us a lot of money and disappointment. Based on our experience and others' feedback, we won't be trying this truck in future sightings. Please do better -- a little kindness and clarity go a long way.

The location is smallish, so we try to go before or after the lunch rush, but it's clean and inviting. I also ordered catering for pickup last June. The communication to get everything just right was friendly, precise, and polite, and they went above and beyond to get my little order together between their bigger June events (weddings, graduations, etc.). Outstanding customer service, plus the first food to disappear at our party was all No Ke Aloha - no bigger or better set of review stars than that. Mahalo to all and see you for lunch soon!

So many choices of protein for the plate lunches and I was torn between poke and kalua pig. But poke always wins. And I was discussing Hawaiian Sun flavors with the next person in line. Passion orange guava my fav but I caved to his recommendation of lilikoi passion fruit. It was refreshing and tasty. A more subtle flavor. The poke was fresh and the rice so good. And of course the Mac salad was delicious. So many memories of HI. Can't wait to eat the spam musubi for lunch tomorrow. It'll be so awesome. They are a fantastic family and an amazing restaurant to frequent. Their catering is yummy so I'm glad to support their pop up fundraiser.

Service was amazing! Their staff is primarily women who are kind, friendly, and provide excellent customer service. The food took less than 10 minutes to bring out even when the restaurant was packed; phenomenal. Food is remarkable, they have a huge menu and the cost matches the portions that they served. I had the Azteca Burrito and it was excellent I also had a Mexican Coke. They have a unique menu, they elegantly pair a sit in experience along with a coffee shop feel. They give both their coffee options, and food options much love; to my surprise they had matcha options!! I've only eaten here once but I can see they adapt their menu to what the people watch kudos to them! This Restaurant is more compact but holds plenty of season and you're not too close to strangers. They have a lot of valentines decor which was awesome to see, subtle and doesn't scream a holiday. I saw them sing happy birthday to another customer, and they let them wear a cute little hat, I love when restaurants go the extra mile to make you and your loved ones feel celebrated. Even for a table of two, we were quoted about 30 minutes, and it felt like larger groups would easily push closer to the 45-minute to an hour range. It also doesn't quiet down once you're inside- the space is tight, loud, and a bit chaotic, with energy that borders on post-night-out frenzy. That said, the food is the true star. The chilaquiles are beautifully presented and packed with flavor. I ordered the Christmas chilaquiles, and while the green sauce was delicious, the red sauce fell a bit flat - I'd skip it next time or hope for a ranchero alternative. Adding al pastor was a great move and really brought everything together. Huge portions, with plenty of sauce and cotija, and I easily had enough left for another full meal. We also tried the fajita burrito, which came with a flavorful ranchero sauce,, though the chilaquiles were still the standout. The horchata latte was another highlight - delicious. Overall, Santos Cafe feels like elevated Tex-Mex with more flavor and colorful presentation. It's a place I'd return to, though probably when I'm in the mood to embrace the slightly chaotic atmosphere. I'd also be interested to see how well the food holds up as takeout - might be the best of both worlds.
