The server that's a shorter than the other two, with dark brown hair was not very friendly. The other two servers were friendly . Sadly, this place feels like a soft opening restaurant. Three servers and they seemed very disorganized.

The cilantro was actually the highlight of the burrito--it tasted fresh and added some flavor--but there wasn't enough of it to make much difference overall. We had an incredible dinner at Valley Kitchen during our stay -- truly one of the highlights of the weekend! The tomahawk steak was perfectly cooked and full of flavor, the salads were fresh and vibrant, and the jalapeño cornbread was absolutely amazing -- warm, savory, and just the right amount of kick. We ended the meal with the most delicious raspberry sorbet for a refreshing finish. Our server, Benjamin, was outstanding -- attentive, knowledgeable, and made the whole experience feel elevated and special. Our server was very nice and attentive, but there was some unevenness in the courses due to a disconnect between what he described and what the kitchen actually delivered. For example, I mentioned that my partner has an aversion to cilantro, and in one course the kitchen actually replaced it entirely with chives, which was amazing. However, when our server came by, he mentioned they had put the cilantro on the side. In another dish, a full cilantro stalk came right on top of the plate. Not a huge deal since we could just pick it off, but it was a sign of inconsistency in service. We also ordered the cod dish, and when we mentioned we were avoiding undercooked proteins, our server said he would make sure it was cooked through, which confused me a bit since I believe cod is always fully cooked through. On to the food itself, we started with the plum lacquered duck kefta, which came out on two cinnamon sticks used as the skewers. These were absolutely fantastic, with the yogurt sauce acting as the perfect foil for the expertly seasoned duck and the cinnamon stick adding a subtle spice. The Moss Landing black cod was likewise delicious, with the cod cooked to a buttery and flaky texture, and it was paired with a sumptuous vanilla bean butter sauce over a bed of pepper and green bean panzanella that was out of this world. My only complaint was that for the steep price, the portion was quite small. The curried lamb shoulder was exceptional as well. It arrived with a striking presentation, encased in a three-quarter dome puff pastry shell filled with shredded lamb shoulder meat. It came with a side of some kind of fruit compote or chutney, though we were not given a detailed description of most dishes. This portion felt appropriate for the price and was the favorite of the night. We mentioned we were celebrating our wedding anniversary, and while we were not expecting anything over the top, we were a bit disappointed when we saw them bring out a dessert with a candle for what I assume was a birthday celebration at another table. For a restaurant of this caliber and at this price point, I have always experienced at least some sort of gesture, even if just a small card or message at the table. Overall, we had a pleasant evening, but it is not somewhere we would return to based on the uneven service and the mismatch between price and portions.

To start, we ordered the Caesar Salad (3/5) to share. Ish brought 2 plates and dished up our split Caesar which was a nice touch...in lieu of setting the salad in the middle of the table and making us split the salad. The dressing was very flavorful with lots of croutons and Parmesan shavings. The romaine was served split-in-half and then grilled, which is normally a nice twist. The grilling adds additional great char flavor, that seems appropriate and in alignment of the Char brand. However there must have been something left on the grill previously and the charred romaine had a slight acrid flavor. We grill our romaine at home all the time. The acrid flavor is unusual, so the chef should have burned off and brushed whatever was on the grill previously prior to grilling. For entrees my wife order the petite filet (3/5) and I the NY Strip (4/5). My steak was cooked to the proper medium rare temperature. Unfortunately, my wife's steak was undercooked. She didn't want to send her steak back to finish cooking to the medium temp that she ordered, so she ate around the perimeter and gave me the middle of her steak. Both steaks were seasoned well and was good quality meat. The unexpected highlight of the dinner was our side order of the harissa fries (10/5). The fries were super crispy and had an unusual and delicious seasoning that we've never tasted before...and trust me, we've ate a lot of fries all over the world. Char has a great selection of desserts. We ordered the chocolate toffee mousse with kahlua (4/5). It was a tasty dessert but the flavor and texture implied didn't align with the name of the dessert. Char is a new restaurant (maybe 6 weeks since opening) that still has some QA/QC in the kitchen to work out. We will come back after a few months to see how they are progressing. Before the food began, I told our waiter that I had no idea what cocktail I wanted. I just knew that I loved gin and spicy cocktails. They came back with something custom that was incredible. My wife told them what she liked, and they created something specifically for her too. From that moment forward, I knew we could stop worrying and completely trust them. The dining room only has a handful of tables and is definitely quiet. That can feel intimidating in your head, especially when you are walking into a prestigious restaurant for a surprise tasting menu. But the staff made us feel completely at home. They carefully explained every dish, and anytime I still had no idea what they were talking about, I just asked. Nobody scoffed, acted too posh, or made us feel like we did not belong there. Some of the dishes were so creative that they almost transcended where we were. One course was a soup that somehow tasted like sour cream and onion chips. It was familiar and comforting while still being unlike anything we had eaten before. Many courses also came with stories about the ingredients and why they were prepared a certain way. Those stories were almost as good as the food itself. Each dish felt like it had a reason for being there, which made us slow down and appreciate everything even more. The plating was immaculate, but this was not food that only looked impressive. We have had tasting menus where a few courses were incredible and others felt like filler. Aubergine somehow avoided that entirely. Then came the dessert. The chef prepared an ice cream tableside with local honeycomb and pumpkin seeds while telling us the story behind it. It was so fucking good. It was not only the best ice cream we have ever had, it might be the best dessert either of us has had in our entire lives. We still dream about it. Staying at L'Auberge Carmel made everything even better. We got dressed in our room, walked downstairs, had the best meal of our lives, and then walked right back to our room afterward. It made the entire night feel like its own private world. This meal is extremely expensive. Obviously. But Aubergine accomplished something no other high-end restaurant we have visited has been able to recreate, and it made us feel at home. Even after visiting New York City and trying countless other restaurants there and throughout California, nothing has topped Aubergine for us. If I could experience one restaurant again for the first time, this would be it.
