The steak is always prepared perfectly, the lobster is excellent, and the chef consistently delivers. The atmosphere is cozy and comfortable, making it a great spot for a nice dinner in Carmel. The service on this visit was professional and polite, although the bartender/server was a little short on warmth and personality. Nothing bad enough to spoil the evening, but a smile and a little friendly conversation never hurt anyone. Someone might also want to remind the staff that conversations about staffing problems or the performance of other servers are best saved for the back of the house. Hearing employees complain about staffing and coworkers in front of customers is uncomfortable and reflects negatively on the culture of the restaurant. This a leadership problem that needs to be addressed. Whatever you do, save room for dessert. Their chocolate brownie with chocolate syrup and vanilla ice cream is easily one of our favorite desserts in Carmel by the Sea. Rich, warm, decadent, and worth every calorie. The atmosphere from the staff was warm, pleasant, and welcoming. Every single person working front of house seemed to have unlimited knowledge about the wine and each element of each course. They were kind, professional and seemed genuinely passionate about the kind of service they were able to provide. We went in October so the dining room was decorated with gorgeous seasonal florals such as sunflowers and marigolds, displayed in hand made vases crafted by their in-house ceramicist who has worked with Chef Cogley for 10 years. Of course, all of these elements were merely supporting the main event: the food. Each course was thoughtful, innovative, unique, intentional, and a work of art. It wasn't the typical tasting menu experience where you try some cool new stuff and walk away a bit disappointed and still kind of hungry. In fact, I was amazed at how I was so excited to keep eating up until the second to last course, when I suddenly realized I was full. How did they do that?! Everything was perfectly balanced between refreshing and deeply savory. There wasn't a single dish that I didn't love, but there were a few standouts: a perfectly seared scallop with a dashi beurre blanc and a house made sourdough brushed with beef tallow and served with cultured butter topped with consommé gelée. Even if you don't know anything about food or what those words mean, it's impossible to bite into these things and not freak out about how delicious they are. My fiancé and I were literally hitting eachother at certain points because we simply couldn't believe what we were tasting. I highly recommend coming to Aubergine for a dinner service if you want to sit back, relax, and have some incredible professionals show you the absolute best of what this part of California has to offer from a culinary standpoint. We kept wanting to love the food and waiting for something to really stand out, but unfortunately nothing did. What ultimately left the worst impression was how uncomfortable we felt by the end of the evening. As we were leaving, we noticed some of the team members sneering in our direction. I can't speak to their intentions, but it left us with an unpleasant feeling as we walked out and put an unfortunate ending on an already disappointing experience. We're accustomed to dining at steakhouses and know what a great steakhouse experience can be.
