Stop in while visiting the Capital. Fresh made bread, enjoyed the chicken bacon ranch sandwich. It's got a little kick but the flavor is great. Has a full bar and beer on tap. Great stop.

Such a fun menu!! Yummy food and drinks (Brussels are to DIE for). Located in a cute little spot downtown Salem with friendly staff. I have no complaints!!!

Loved this place. We drove from McMinnville to Salem to try their burgers. Service was excellent and friendly. The atmosphere is clean comfy and trendy. I was immediately impressed with the affordable cocktail prices on the chalk board menu by the bar. Typically $8, $9 and $10 cocktails are on a Happy Hour menu. Valiant prices their drink specials for anytime of day which is refreshing and will bring me back for sure. The food menu is easy to read, and affordable. Not a huge menu but perfectly curated. It consists of salads, wings, sandwiches, burgers, and BBQ. We ordered a house salad, a Lil Val Smashburger (special) which comes with a pint of beer for $12 and a Crème Screamer Burger $15.00. This Smashburger has pepper jack, bacon, torched marshmallow fluff, red onions, chili sauce on a handmade sesame bun. Both burgers were incredible and true smashburgers. The Lil Vals burger was juicy, cheesy with the perfect amount of burger sauce and the fresh house bun sets it apart. The Screamer burger with an extra patty. This burger was juicy and unexpectedly phenomenal. The unique pairing of the sweet marshmallow fluff and the savory spicy chili sauce is next level. This burger is a work of art in your mouth. Designed by a chef who thinks outside the box. If you are looking for a farm fresh sandwich shop Valiant is your spot. *Note, we met the owners who are really nice hard working people. I will go out of my way to support locally owned businesses.

Green Goblin Sandwich. Nice flavor. - lemon grass and spicy part of flavor profile. Bread was soft.

Dine in and Take home options. Friendly staff. Lots of space to sit. I got the green goblin sandwich, which was tasty.

The sandwich was delicious. It was loaded with meat! The Pegasus sauce was very yummy. Usually horseradish is very overpowering but that's certainly not with this tamed down version. Anything with blue cheese is always my go to,

I would give it more stars if I could! The service was fast and friendly. Ambiance is nice. Very clean everywhere. We had the fancy pants fries, chicken caesar salad and chicken bacon sandwich, everything was fresh and delicious!

Are you looking for a tasty burger and sandwich shop in Salem, OR? Look no further, @valianteats has one of the best cheeseburgers in town! Their hand-made patties with melted cheese and fresh toppings, along with a side of crispy fries, make it one of the best in town. We also tried the Reuben sandwich, which was good but a little fatty. The atmosphere is really chic with their red brick some abstratic artwork. The waitress was friendly and we didn't have to wait long for our food. They also have Happy Hour and a great cocktail menu! I will definitely be a returning customer.

Outstanding. I had the Cubano sandwich with the tomato soup. The soup was excellent. The sandwich was packed with delicious meats. It was even better dipped in the soup. Oh my, it was good. My wife had a Cindy burger and really enjoyed it. I got to say, I ate some of the overflowing bacon on it. That bacon was sooooo good. Dang it was good. Our server was super busy and hustling. But that didn't impact our service. She checked on us 4 or 5 times. Super duper friendly. I'd definitely recommend this place. We came on a Saturday, I'd worry about how busy it would be during the week. Still, outstanding.

You choose what you want and order at the counter and they give you a number. Then they'll bring it to your table. I enjoyed the rice bowl. The tofu seemed to be fried and the sauce on it was spicy. The miso Moon coffee thankfully did not taste like miso, lol. My friend had an espresso and said it was terrible, very sour. Everyone else at our table seemed to enjoy our food, there were a lot of burgers and fries being ordered at the group. They have my daughter's favorite sort of salad, with blue cheese and steak. Sadly, they were out of salmon the day we visited. Would definitely consider coming back if I'm in Salem again.

And that's saying a lot. You do not want to know of the torture. Suggestions: 1st: If you want to have a steak on the menu, at least serve the cut that is on the menu. 2nd: if you're worried about food cost, do something pounded, and marinated, OR do a small trimmed cut that is excellent quality, and serve it with a lot of mash and veg, and that bordelaise sauce (which wasn't bad). 3rd: Meatloaf

The stark difference in our second experience was night and day, making this visit truly exceptional. The cozy and romantic aesthetic of the restaurant remains fantastic, and the food and drink menu is still absolutely amazing. This time, however, we had the pleasure of being seated downstairs in Tiffany's section, and she was beyond stellar. Tiffany is the definition of exceptional service. She gave us a complete, helpful rundown of how they structure their tapas menu, offered fantastic recommendations, and was incredibly attentive throughout the evening. We had a great time chatting with her and her professionalism and warmth instantly made our return worthwhile. Her suggestions were perfect--she expertly helped us select a great wine and recommended the black ink pasta, which was a showstopper. Cozy Taberna, when paired with service like Tiffany's, is easily a 5-star restaurant. From now on, we will only return if we can be seated in her section!

Comfy chairs. Lower lighting, well placed. Service was excellent, friendly and fast. I think our server's name was Mikayla; a gem. Attentive and observant but never intrusive. Drinks: my old fashioned was absolutely perfect and my husband's margarita was fine. Appetizers: beer cheese was well balanced and a bit runny, which I prefer over the library paste version some places serve. The elotes dip was a standout, mildly spicy, with lime in the cilantro, and warm, crispy chips. (Whatever is in their seasoning for chips and fries should be sold separately -- I wanted to try it on everything.) We probably should have stopped there, as the portions were abundant, but our mains were amazing. Smash burger was insanely juicy, nice and onion-y with a few Crunchy Brown Bits around the edges. The roll was fresh and tender, with a good crust; flavorful, not just a shingle. The fries were the best I've had in Salem. Get the garlic-thyme upgrade; you won't regret it. My ribeye was cooked perfectly. Unfortunately they were out of both compound butters, apparently due to a busy Friday, but everything was well seasoned. The vegetable of the day was roasted Brussels sprouts with a sweet-and-salty sauce, almost like kettle corn; amazing. The outer leaves were caramelized without being burned, and the hearts were tender but not mushy. Crispy fried onions were perfect. Fried potatoes were fine, and enriched by their placement between the steak and the sprouts. The diners who came in before us were all smiles when they left, so it wasn't a fluke. Can't wait to come back!

The only thing that made this place of four stars for me is that the drinks are very small for the price they are. Customer service was amazing. We came in an hour before closing were the last ones there and they treated us so well. I would definitely go back and try other foods!
