    Risotto cakes, Cubano and the stacked #99 burger.

    If you try nothing else, you must eat the risotto and goat cheese cakes. Cubano, the stacked #99 burger. This was what was on the menu for today. There are of course several other options but these were the options that captured out attention the most. Now for me, I could have had about 3 dozen more of the risotto cakes with goat cheese. A play on the crab cake, the risotto with goat cheese is an amazing taste adventure you really just have to try to believe. Now do keep in mind, that goat cheese is a much stronger cheese and if you are not into that, then stay far away. However if you have taste buds like mine that are always looking for the amazing experience, then you need not look any further than this great little morsel. Of course that wasn't all, as my wife loves Cuban Sandwiches and even though I didn't get but a single bite, after looking at what was left, I would venture to guess that her sandwich was spot on. The meat inside was flavorful and moist, the cheese was the gooey mess your hoping for and the overall flavors were exactly what one should hope for. I ended up with the stacked #99 burger. It was all I could do to unhinge my jaw and try to get around this monster of a burger. What I can say, is that it was cooked to perfection, cheese, sauce and flavors were all executed to perfection and what you have is a fantastic restaurant experience put together from a food truck, and you would never know the difference had you not picked up the food yourself. Truly a great experience, and of course one would also need to have the libations provided when you first walk in and with that you are all set for a fantastic meal. Shame on you if you don't try curbside bacon at least once!

    Soo good I went twice in 3 days during the pop up at Shades of Brew. First trip had the rum Monte Cristo, nice thick ham, bread perfect texture, and right amount of cheese. Potato salad on the side also really tasty. Next time in wife got the cubano she loved it and the bite I tried was really tasty. The Boss Hog was probably my favorite, juicy burger topped with cheese, bacon and super tender pulled pork with Chef Rudy's awesome bbq sauce. The menu changes often so truly hoping he does frequent pop ups here, or, better yet, pulls the truck in on a more permanent basis.

    Check this place out for the unique and delicious version of a Cuban. They substitute bacon for ham and press the sandwich. Pickles and mustard come standard. For fun we are decided bacon and it came out on a plate and was super delicious and going great with beer.

    Risotto cakes and Stack special

    I have visited Chef Rudy's food cart three times now. Each time, his food and service did not disappoint! Most recently, my SO and I ordered a meal each, but unfortunately that meal was taken by another customer (dine and ditch at its finest). Chef Rudy and his team handled this with grace and finesse. We were informed of a delay in our meals, and were provided with our meals somewhat delayed, but excellent in flavor. Each meal is prepared with creativity and a delicious palate in mind. Specials vary, but are sure to please. He uses high-quality ingredients, and each meal is plated with care and confidence, adding to a dining experience that is unparalleled coming from a food cart. I highly recommend to anyone who is hoping to have a delicious meal! The risotto cakes are especially delightful, and the ground beef patty "stacks" are something to crave.

    New food cart lot 'General Duffy's Waterhole' by Chase Bank in downtown Redmond Burger has some incredible new options like Curbside Bacon. I prefer the Boss Hog which has a burger, pulled pork, bacon, cheese and house made BBQ sauce. Being a BBQ sauce lover, a request for more sauce was greeted with 2 new sauces the chef has been working on. The Bourbon sauce was great, the beer bbq sauce was even better. Will visit this place again for sure.

    This is probably the best food truck I've have ever eaten from. I found him in front of Spider City Brewing on the east side of Bend. I briefed the menu but told chef Rudy i would eat anything and like spicy. He plated me up some pork, with spicy mustard, jalapeños in what appeared to be a giant toasted roll with other amazing mystery seasoning and herbs. It was also served with potato salad. All of which was incredible, savory, fresh, and cooked to perfection. It sounds like Chef Rudy is a hard working family man who is passionate about what he does and it really shows. I can't wait to come back and try something else from the menu. Keep it up Chef Rudy!!

    Omg! Don't walk...run to this food truck! The food was amazing. The chef was so engaging and made something on the fly to add to our order. Love this place and will definitely be back.

    My husband and I tried Chef Rudy's food truck at The Barn in Albany today. OH. MY. GOODNESS! So so yummy. We ordered two specials and we were stealing from each other's plates. But we couldn't even finish. Also Chef Rudy is super nice. I walked back over to tell him how much we loved everything and he was so grateful for the feedback. We will be going back soon!

    We have enjoyed Curbside Bacon for some time, and Chef Rudy and his team do not disappoint. He is accommodating of dietary restrictions, and the Customer Service is off the charts. We recently hired him for a Catering event, our friends and family are still raving about his menu and food. Whether you're looking for a place to go for an elevated dinner, or catering an event, I cannot recommend Curbside highly enough!!

After reading so many books and providing a report-you receive a free meal. Luv, luv, luv the concept. I wish other restaurants would mirror this example.

Having been a loyal patron for years, I was unaware that the restaurant had undergone an ownership change approximately one year ago. Unfortunately, the shift in management has been accompanied by a marked decline in both service and food quality. Service Concerns Table service fell well below expectations. Our server did not introduce herself, nor did she demonstrate any gestures of hospitality throughout the meal. Twice, plates were handed to us stacked, leaving the guests to distribute them ourselves--an approach inconsistent with professional table service. Water glasses were never refilled, and there was a general lack of attentiveness to our table. Menu Changes The menu has been reduced to a simple two‑sided laminated sheet, a stark departure from the former Marco Polo menu that once offered an impressive variety of thoughtfully curated dishes. Food Quality The food, regrettably, did not meet even basic standards: Singapore Noodles: The most disappointing dish of the evening. I shared my feedback with the server, who later reported that the cook had not seasoned it properly and offered to remake it. We declined. Salad Rolls: Flavorless, with a peanut sauce that was thin, cold, and lacking depth. Broccoli with Tofu: The broccoli was overcooked, wilted, and visually unappealing. The dish was marginal at best. Green Beans with Garlic: Cooked adequately, but lacking seasoning and overall flavor. Vegan Pot-stickers: The one bright spot--excellent texture, well‑prepared, and accompanied by a flavorful sauce. Overall Atmosphere The ambiance felt tired, and the restaurant appears to have lost the vitality and care that once made it a thriving local favorite. Based on our experience, it seems clear that both the kitchen and front‑of‑house staff would benefit from renewed training and leadership. Our server confirmed that the business changed hands about a year ago, and unfortunately, the decline is evident in nearly every aspect of the dining experience. We will not be returning, and it saddens me to say so--Marco Polo was once a beloved establishment in the community.
