So the first ever review i had ever made for this place was a not so good one, they've since gotten rid of that girl with the attitude. So periodt on that! LoL Now? MY GOD the new crew is absolutely amazing! Especially the afternoon crew. There's this girl with i think braces and glasses; ABSOLUTE angel and because of her service I'm always tipping. She's like the Valerie's soul of the restaurant. I kid you not. She knows all her regulars order and is always serving with a smile. Also when she's working with whom I assume is her regular staff, you can always count on the condiment tables to be stocked, til it gets around the evening time. The ambiance of the restaurant is pretty simple, nothing to extravagant, but it is welcoming nonetheless. The food? I mainly come here for the Menudo (the girl who I was just talking about will immediately know who I am LoL) but yes, the menudo. My homegirl told me about menudo, and now Valerie's is my plug for that. It's flavored to my liking, which I deeply appreciate. Do understand that sometimes you may get more bones and cartilage than the cow honeycomb tripe. So ask if you could not get that bones and stuff? I haven't, but I don't think it'll hurt to ask. I like the crew that makes my menudo, so I accept it no matter what I get. If you are drunk off your behind, then baby, come on down to Valerie's for some pretty okay food. I'm not a huge fan of tacos and such, but they're menudo is *chefs kiss* in my opinion. So I can only give my opinion on that. As well as the service. Don't forget to tip them! Gas station tacos in the middle of utah Growing up in San Jose and being exposed to homemade tacos, this is definitely something. Staff were so sweet but food was so slow... One of us almost fainted due to diabetes and waiting over 30 minutes for some tacos. The cinnamon bun was also hard.. But $5 for ONE carne asada taco is foul.. tortilla was dry and there were barley any cilantro, onion, & lime. The burrito was good tho. read more

As a truck driver I think this place is one of the best taco shops on the road that I have access to. The California burrito and carnitas burrito are my go to but the rolled tacos and fish tacos are very good too. I haven't eaten anything from here the wasn't good. Service is good most of the time but there was a girl I haven't seen in a while that had a bit of a problem. I think she is gone now so that is a plus. I recommend trying it out if you are passing by Beaver Utah. Good vibes and good food. read more

Just roll past this place. What happened to the real Valerie's Tacos? New owners, or some other major change has occurred. The staff is friendly and the restaurant is clean, but the food is not even a shadow of what it used to be. The food is bland and the portions are smaller. This used to be a planned stop for us when coming up or down the 15, muscling through hunger pains and growling tummies, but that will no longer be the case. Food here is overpriced! Ordered a burrito to go and there was nothing but rice and beans! Very little protein if any. I definitely felt ripped off especially for what they charge. If you must have mexican food I would eat it there that way you can give them a piece of your mind if they try to rip you off! Never again will I give away hard earned money to them! read more

**UPDATE** I haven't came to this location since October 2020 because they were messing up so badly. Today my husband and I decided to try it out again since it's been so long. Let me just say I am very glad that I did. They have new staff, they are amazing. Sweet, welcoming, and they got our order correctly with no issues at all. The burritos are better than ever. Stopped to use the restroom, and wow i was happy and surprised to see a taco shop in the middle of no where in Utah, and the little ladies who run it were so amazing, so friendly, they treated me like family; and asked how i was doing, where i was from and everything. She explained how everything was made ready and fresh, she told me her favorites. My sister and I were craving breakfast so we got two combination breakfast burritos it had back on, ham, and sausage, egg and rice and cheese and cream. We got a horchata as well. The hot sauce is so bomb the red sauce is hot as hell but fire. Definitely was amazing, everything was very good, the food was exceptional, honestly i am so happy that we found this place, will definitely be coming here more often when we are in the area. Awesome gas station taqueria! Stopped into the Flying J for fuel and restrooms when Valerie's piqued our interest. I took a look at the menu and saw they have a large variety of items including soft, crunchy and rolled tacos, burritos, chimichangas, tortas, enchiladas, all-day breakfast burritos, chile rellenos, and combination platters, all cooked fresh upon ordering. Although some of my favorite tacos in the world come from gas stations, I also know that not all gas station taquerias are created equally, so there's always a slight risk for disappointment... But not today! We opted for a shredded beef taco on a soft corn tortilla and a bean and cheese chimichanga and were not disappointed! The portions were very generous as well, and our "snack" to share turned out to be a full-on meal - haha! The taco was so loaded up, it looked like a tostada to us when we opened the tray. The shredded beef was flavorful and juicy, with chopped slightly sweet peppers cooked into it, then topped with lettuce and a generous amount of freshly shredded cheddar cheese. Yum! It was a little messy, so we ate part of the filling with a fork first to be able to wrap the tortilla around the remainder of the generous amount of fillings. The chimi was also delicious. It wasn't fancy: just loaded with refried beans and melty shredded cheddar cheese. However - the tortilla was soooo perfect! It was soft and fresh on the inside, but the outside was light and crispy, and a little bubbled up, almost like a lightly fried egg roll. It paired perfectly with the fresh salsa verde. And side rant to the people who say they're from California so they *know* these aren't up to par: 1) Open your minds! 2) Don't represent Californians as stuck-up jerks by giving a poor review to a little mom & pop joint in the middle of the desert! When I was 11 and tried Mexican food in LaJolla the first time, I thought it was gross because it wasn't the Tex-Mex my undeveloped palate was used to. Now that I've had another 30 years of food experience I've also developed the understanding that just because it's different from what you're used to, doesn't mean it's bad, as well as the maturity to appreciate the subtle and not-so-subtle variations between the regions' cuisines (and it's rare I eat anything *but* Mexican food when I visit San Diego now - haha!)... I've lived in Texas, I have a Mexican Grandma-in-law, I currently live in California, I've spent lots of time as a food tourist in the Southwest and I've lived in the Midwest. Each has their own version of "authentic" Mexican food. Just like American food (however one even defines that), Mexican food varies regionally. I'm actually really bummed. I used to look forward to this place on my drive to LA and back. It was amazing. At a gas station no less. But, suddenly the food is horrible. Last time I got food to go and the tacos were stale and seemed reheated. They were hard to chew and had hardly any meat or cheese. Plenty of lettuce though! I've got to say this place is NOT good! The only good thing I can say is the Service was pretty quick. I ordered the chicken taco and chicken burrito #6. The burrito had nothing in it except slightly spiced pepper chicken. Lots of tortilla, a bit of inadequately shredded chicken and there it. Practically bland. And jeez o pete they didn't strain it at all. Every bite was a tidal wave of bland chicken juice! The taco had absolutely no seasoning at all, straight up boiled chicken. The shell might of been nice and appeared homemade, except it was hard as a rock. -- My gf got the 3 rolled tacos. Again straight boiled chicken, zero seasoning. Shells also hard as rock on the ends. She could only eat the middle of one before giving up. Another meal uneaten. -- the rice and beans were ok. Not great. Beans got a metal taste but they are tolerable if you mix them together. Sad to say I didn't like their crispy tacos. The shell was extremely hard ,oily and could be used as a weapon. Center lacked flavor, was kinda bland. The Chimichanga was delicious, flavorful, moist and not greasy. I would try them again, because the chimichanga was so delicious. Gross. How does this place have 4 stars? Got 2 orders of rolled tacos with guacamole. First off, they weren't crispy. Secondly, the guacamole was smeared all over the top with a spatula instead of in a nice little pile, probably to disguise the fact that it tasted like shit and was bland as hell. I had to add salt to everything. Tried 2 salsas, the creamy green was pretty good, the chunky green salsa had good flavor but was too watery. The horchata tasted like a gallon of horchata was mixed with 2 gallons of water. Service was friendly although inefficient and slow. If I could give 3.75 I would. I have stopped at this gas station before. I have seen this taco shop. I have not eaten at it before today. Long lines, looked a little sketch, etc. whatever the reason. We are driving to Disneyland and needed somewhere to eat and this is what came up. Seems average in cleanliness for a gas station food shop. It was busy. Took a minute to order. There were a few people that got their food before us but we ordered meals and it looked like they ordered just burritos so maybe that's why. Husband got a #1.
