Arrived around 10:45am , place opens at 11am. A few people in line and only street parking available behind the place. Free Lone Star beer makes the wait enjoyable on a warm Texas day. My crew of four got the Texas Trinity and added 1/2 pound of brisket along with a slice of carrot cake. Sides we got potato salad and Brussel sprouts. Brisket 9/10 is was good but not a 10/10 Ribs 8/10 as they are good but could have been more tender. Sausage we got 1 link of each type 10/10 but my favorite was the brisket boudin. At 99.75 plus our add ons this enough food for 3 guys and little me. We sat outside as it was a picture perfect day for Texas Saturday. I would return and I highly recommend this place to everyone driving on 290 on the weekends early morning.

I'd stop again if in the area while hungry, but I wouldn't go out of my way to come here. There are likely better places where you are coming from or going to.

But of course, the real star was the food. Let's start with the brisket. I tried both the lean and the moist cuts, and they were both cooked to absolute perfection. The bark was fantastic--a deep, flavorful crust that gave way to incredibly tender meat. We were also offered a sample of the burnt ends, and they were delicious, a rich and savory bite that left me wanting more. The Hatch Chili Oaxaca sausage was another highlight. It had a smooth, mild flavor that let the sausage itself shine. The cheese had a nice texture and a subtle hint of chili that wasn't overpowering. The ribs were also outstanding. They had a great bite, just the right amount of pull from the bone, and a wonderful flavor. The classic salt and pepper rub was perfectly balanced, enhancing the meat without dominating it. For the sides, I was impressed with the potato salad. It was wonderfully creamy, loaded with big pieces of potato and bacon, and had just the right amount of onion for a nice tang. The mac and cheese was also great, with a very creamy sauce that had a fantastic flavor. While the noodles were a little on the softer side, it didn't take away from how delicious the dish was overall. Overall, this is a top-tier barbecue joint that I would highly recommend to anyone looking for a truly great BBQ experience.

We immediately took our food the car to eat and the food was not as good as it once was. The fries were cold and stale. Look ok if you're crunched on time the company needs to order thinner fries like McDonald's. The bbq sandwhich was tough and dry, and it was a Tx toast style bun instead of a hamburger style bun. The young lady at the gift shop didn't acknowledge me even after I greeted her first. The young ladies behind the bakery counter were just the same. The only people that acknowledged us first were the older folks behind the food counter. Just to show there's some missed training opportunities across the board. I always try to be supportive of small, locally owned businesses everywhere I go. Look at some of my other reviews, it will bear this out. For once, it wasn't a Sunday when we were passing by and we weren't in a hurry, so we thought we'd stop for lunch. It looks like everything you'd expect for a barbecue restaurant. Everything rustic and country. There was a menu painted on the wall with no prices anywhere. They have a nice selection of sides in meats. My wife ordered the 2 Meat Plate with Brisket and Sausage, Potato Salad and Pinto beans. I was thinking about Pork Butt; however, when I saw it , I decided to pass. Strike 1! I ordered the Brisket Plate with Black -Eyed Peas and Coleslaw. When the young woman handed it to me, It had Pintos on it rather than Black-Eyed Peas. When I cited the error she indignantly snapped, "That's what you ordered!" Strike 2! (who argues with civil paying customers?) I said, " I'm not trying to be any trouble. I just want what I ordered." at which point the older woman told her to give me a side of Black-Eyed Peas, which at this point seemed completely academic. We found a table, found our way to the drinks and also to the Barbecue Sauce and various condiments. I really wish I could say that this was the best Barbecue that I ever put in my mouth but unfortunately, I have to say just the opposite. Strike 3! This is singularly the worst barbecue experience that I have ever had anywhere in Texas or elsewhere in the country. The Brisket was gray, dry, and there wasn't a smoke ring in sight. It was no better than the Pork Butt had looked to me, in fact it was probably worse. My wife loves Sausage and she is not as discriminating about it as I am, but she said that was the worst Sausage she ever bought from a Barbecue Restaurant in her life, and she's the lifelong Texan in this couple, not me. I see mixed reviews out there besides my own and I'm wondering if perhaps the problem here is just inconsistency with the food because other than that and the little service blip, this wasn't a horrible meal but it was pretty far from a good one. The brisket was dry and tasted like it had been sitting around for days. The sausage was literally uneditable even drowned in BBQ sauce. The sides were okay, but it's hard to ruin potato salad and mac and cheese. I actually threw my food in the trash. It was almost $60 for 2 people. Even the diet pepsi was bad. Do not under any circumstances eat here.

What BBQ place on the list happens to be open on a Monday (and quite frankly, seven days a week)? Miller's Smokehouse in Belton. Miller's Smokehouse has one of the longest tenures on the Texas Monthly Top 50, making the list four times in a row (the third-highest behind Louie Mueller and Snow's). They've got their business down. As I arrived, I parked in a free parking lot just across the street and got into the line around 12:30. The line moves pretty efficiently, and you order separately from the barbecue line. I think this immediately felt disheartening as a barbecue fan. You kinda expect to get your food while in line and watch the assembly of workers put it together, instead of them being in a separate location in the back giving you order numbers. It doesn't feel like a true Texas barbecue experience and more like a Dickey's Barbecue Pit. Instead of going for a tray, I opted for one of their specialty sandwiches, the El Gallo Picante. It has their spicy hot link sausage and their smoked chicken topped with coleslaw, onions, jalapeños, pickles, and barbecue sauce. I also got a side of their broccoli salad out of curiosity and a roll of their homemade cornbread. I got my drink and sat down with my roll of cornbread. It wasn't long until my tray came to me. The sandwich stood on its own as a behemoth. So much chicken and sausage fell out of the bun. The sandwich was less concerned about being a sandwich and more focused on creating a space to try and contain a mixture of ingredients. It wasn't bad, but it was hard to say anything other than that I felt uninspired by the entire thing. The sausage was fine, the chicken was kinda dry, but everything together with all the separate ingredients masked the meats' faults. The broccoli salad was a unique side that I had never seen before at a barbecue joint, so I wanted to try it. It was cool, but not something I'd get again. As for the cornbread, it was quality, but if that's the most impressive part of the meal, then I'm questioning the establishment's ability to create a good barbecue experience. I think it's so cool to have so many special barbecue places near me and the ability to try so many, but I'm starting to wonder if the places that stay on the list for four editions start to lose their oomph. Do they become complacent knowing they already have their business and are established? Is there any need to try and push the envelope when you're just a recurring guest on top barbecue lists? Is it a me issue? Is it my fault I went to Burnt Bean a week prior and now I'm trying a place that sells all-day barbecue? With your big brick-and-mortar and your TV screen menus, you're not as hungry as you used to be.
