They are currently operating out of a food truck as the restaurant is recovering from a fire. They have some benches with seats nearby. Given the extreme Texas heat, we opted to take this back to our hotel to eat. Definitely make sure to check their hours before coming as they are open later on Thursdays to Sundays, but close at 3pm on Mondays-Wednesdays. Each order came with slices of white bread, pickles, and pickled onion. Also since we did not eat there, we did not realize that there were no BBQ sauce, our fault and big mistake. 1/2 lbs Brisket The slices were lean cut. It had a smokey flavor, however a bit dry. I think if we had some sauce, it would've been better or if they had fatty brisket. 1/2 rack of Ribs These were good, slightly tender with a bite to it. I prefer my ribs to be a bit more tender where it's almost falling off the bone. The broccoli salad was a great contrast to the meats. Overall, a decent BBQ place. Milller's Smokehouse serves up some killer smash burgers! My family enjoys hunting for great Texas BBQ. We have completed the 2017 and 2021 TX Monthly Top 50 BBQ list. We started the 2025 list and we are more than half-way through the list as of June 2026. Heading to the spots in West Texas takes some logistical planning, patience, and lots of gas for the drive from the Texas Gulf Coast. On our recent BBQ quest to West Texas,we drove home via Fort Worth from Amarillo with our eyes set on hitting one of the most consistent BBQ joints in Central Texas, Miller's Smokehouse in Belton, TX. This was our fourth time to visit Miller's. Unfortunately, Miller's Smokehouse had a surprise overnight fire late February 2026. That hasn't stopped them from feeding the community great food from a mobile trailer. They had an abbreviated menu of the BBQ staples like brisket, chicken, pulled pork, pork steaks, and St. Louis Style Ribs, and assorted sandwiches and sides. Generally, I'm a Texas Trinity traditionalist. But we he had our fill of brisket, ribs, and sausage on our West Texas journey. Instead, we jumped at the Smash Burgers! First time for us and they made a favorable impression. My wife had the Single Smash. My son and I had the Double Smash. Of course we had to try the tallow Fries. Wow! Homemade buns, oversized patties, cheese, with a smattering of pickles and burger sauce. We destroyed those burgers. Compliments to the kitchen staff cooking up some great food. The tallow Fries, seasoned with just the right amount of salt were a perfect crisp while being soft in the center. Don't cheat yourself - try the Fries. We arrived around noon and there was a very short line at that time. Parking is easy with ample parallel parking and free lots close by. The staff took good care of us. It was a bit warm but they had shaded picnic table seating with plenty of fly fans at the table to keep the critters from buzzing to nibble at your food. Before we left, we inquired about nearby restrooms to wash-up before we got back on the road. We were directed across the street to Muscovy Coffee Roasters across the street. It turns out that Muscovy is Miller's upscale sister coffee house that opened days before the February fire. I could not help but notice the spacious seating area that was packed. Nor the rich roasted coffee wafting through the air. They also serve an interesting menu of breakfast items and homemade Kolaches. Got to go back for coffee and Kolaches next time. By the way, the restrooms were Buc-ee's clean+. This is the fourth time we visited Miller's Smokehouse. Hat's off to the pitmasters and staff at Miller's Smokehouse for their perseverance. They are currently working out of a food truck due to remodeling. Due to that they are currently offering a smaller menu. They have plenty of outdoor picnic tables to sit at or you could take to go. Foot was prepared relatively quickly, which was nice. Overall, the food was OK. A solid 3-star. Nothing too exciting. I had the pulled pork sandwich and the corn. Went here and ordered 1/2lb of brisket. It was absolutely delicious. Hands down best most juicy brisket I've ever had in my life. This was my first day in Texas so I don't have any other Texas bbq to base it off (I'm from ca) but it was absolutely delicious. I also got the elote corn which was also really really good but being from Ca it didn't taste like the elote corn I'm used to. But none the less it was sweet, spicy, savory, still really good. It's Labor Day. I'm driving back from Granbury to Hutto, and I think about my Texas Monthly passport. I'm addicted to stamps. I'm addicted to putting points on the board. What BBQ place on the list happens to be open on a Monday (and quite frankly, seven days a week)? Miller's Smokehouse in Belton. Miller's Smokehouse has one of the longest tenures on the Texas Monthly Top 50, making the list four times in a row (the third-highest behind Louie Mueller and Snow's). They've got their business down. As I arrived, I parked in a free parking lot just across the street and got into the line around 12:30. The line moves pretty efficiently, and you order separately from the barbecue line. I think this immediately felt disheartening as a barbecue fan. You kinda expect to get your food while in line and watch the assembly of workers put it together, instead of them being in a separate location in the back giving you order numbers. It doesn't feel like a true Texas barbecue experience and more like a Dickey's Barbecue Pit. Instead of going for a tray, I opted for one of their specialty sandwiches, the El Gallo Picante. It has their spicy hot link sausage and their smoked chicken topped with coleslaw, onions, jalapeños, pickles, and barbecue sauce. I also got a side of their broccoli salad out of curiosity and a roll of their homemade cornbread. I got my drink and sat down with my roll of cornbread. It wasn't long until my tray came to me. The sandwich stood on its own as a behemoth. So much chicken and sausage fell out of the bun. The sandwich was less concerned about being a sandwich and more focused on creating a space to try and contain a mixture of ingredients. It wasn't bad, but it was hard to say anything other than that I felt uninspired by the entire thing. The sausage was fine, the chicken was kinda dry, but everything together with all the separate ingredients masked the meats' faults. The broccoli salad was a unique side that I had never seen before at a barbecue joint, so I wanted to try it. It was cool, but not something I'd get again. As for the cornbread, it was quality, but if that's the most impressive part of the meal, then I'm questioning the establishment's ability to create a good barbecue experience. I think it's so cool to have so many special barbecue places near me and the ability to try so many, but I'm starting to wonder if the places that stay on the list for four editions start to lose their oomph. Do they become complacent knowing they already have their business and are established? Is there any need to try and push the envelope when you're just a recurring guest on top barbecue lists? Is it a me issue? Is it my fault I went to Burnt Bean a week prior and now I'm trying a place that sells all-day barbecue? With your big brick-and-mortar and your TV screen menus, you're not as hungry as you used to be. read more

Thursday at 11 week before christmas and there's a line out the door. Line moved fast though! Tried the turkey and brisket for meats, then green beans and mac and cheese for sides. The brisket was solid, turkey was alright too... turkey is usually not my favorite but this is not dry at all. The mac and cheese was delectable but the green beans so SOOOO mf salty. Difficult to eat because of the salt. It's a green no need to cover in salt. Front service guy and the people working the food are super nice. Girl who brought our food was a little lackluster (no eye contact no response just threw food down and left). I ended up buying a sopapilla cheesecake afterwards and that was the best decision EVER. The pinto beans were cooked al dente, but again the flavor was heavy in black pepper. The mayo skin-on potato salad was excellent! Overall, I would go back. As we make our way through the Texas Monthly Top 50 BBQ list; I have decided that the best way to try a sampling of the bbq is to get the Texas Trinity (ribs, sausage and sliced brisket). My favorites were the ribs and sausage. The jalepeno cheddar sausage is probably the spiciest I have tried so far in our bbq adventures. I have no problem with that though. The seasoning on the ribs (St. Louis Style) was spot on and they were my favorite of the meats I tried. So, the more I try the broccoli salads at the bbq joints, the more I enjoy it. Get those veggies in! My husband really likes to have just regular pinto beans instead of all the frills that some of the joints add. He was a big fan of the beans. I enjoyed the two choices of bbq sauce and especially liked the tangy version. Wow! So good! One of the things that stood out the most to me was the amount of tables and space for dining and the organization. It seems like a lot of the popular bbq joints are streamlining the way the food is served to get customers to the table more quickly. You are assigned a particular numbered table and you go to that table and the staff bring the cue to you! They also place all the extras like the onions, pickles, white bread on the platter so customers don't "gum up the works" by hovering around the extra fixings. Brilliant if you ask me! We love when a restaurant has freshly brewed tea. Miller's has EXCELLENT iced tea. You can see all of the goings on downtown Belton out of the large bay doors in the dining room. It's a really cool setup. I noticed that Miller's has a lot of their items prepackaged and prepared for you to take home and load up the freezer. I would definitely return to Miller's! read more
