Tre Galline serves up a dining experience that is absolutely unmatched. Nestled in the heart of Valle de Guadalupe, this Italian gem brilliantly combines traditional Northern Italian flavors with the fresh bounty of Valle.
Chef Ivan, originally from Northern Italy, welcomed us with open arms, expertly guiding us through his menu of signature dishes. The personal touch was something we truly appreciated and it set the tone for the evening.
Our meal commenced with fried zucchini and lamb carpaccio appetizers. The freshness of the zucchini and tomatoes, which we were told were picked right from their on-site garden, was a delightful opener. The lamb carpaccio offered the perfect blend of salty and savory and was a dish we kept reminiscing about.
For pasta, we opted for the lamb Ragu and the cheese wheel pasta - both dishes were simply exquisite. We savored every bite, loved the incredible flavors and textures.
The main course consisted of fish served two ways - one with a red pepper sauce and the other with a pea based green sauce. The flexibility in the choice of sauce was appreciated, and the fish was perfectly cooked. We also ordered the chef's selection filet which was another standout - arguably the best steak I've ever had in Valle.
Despite being full, we couldn't resist trying their desserts. The tiramisu, creme brûlée, and pana cotta were all delightful, but the standout was undoubtedly the pana cotta - incredibly fresh, balanced, and the best we've ever had.
Their thoughtful wine pairing only elevated the overall meal, perfectly complementing each dish.
