You've made the long trek back from a party at one in the morning and all you want is a delicious stomach-stuffer, and there's only one option- Top Dog. Congratulations, you've made it to the front of the line. Long gone are those hormone-charged fraternizers sweating it out on the dance floor. You've already traded your night's stories with the random guy next to you in line, and now all that matters is the menu and the--
"Speak up folks! You, in the doorway! Speak on up!"
Right, it's rush hour and you can't possibly hold up the line. You get skipped, but don't worry, the menu deserves a second glance. Hmm.. the chicken apple sounds good, but so does the bockwurst. Mmm.. the linguiça looks delicious too, that porky perfection. But alas, a decision must be made. Don't be distracted by cartoons on the little TV behind the counter...
"One calabrese," you promptly tell the man behind the counter, as he gives you an affirmative nod. You shuffle on over as you wait for your dog, making way for what is quite possibly the most hilarious train of customers you will ever see, given that it is now 1:10 AM and these are the fortunate souls who have strayed from the evil temptation of late night at crossroads. Sorority girls retelling the story of the guys who hit on them that night in vivid detail? Check. Guy legitimately trying to order the entire menu? Check. Your dog is almost done, so you shell out the cash.
"One calabrese!"
He hands it to you. A steaming sausage packaged in a perfectly-toasted seeded sandwich roll. The rest is up to you. You turn around to see what deceptively look to be many choices of toppings, though there is only one true recipe for the best dog:
1) A line of Russian mustard right beside the dog (the thickness of such eye-watering mustard depending on the current level of congestion in your sinuses)
2) Enough onions to make it seem like the next topping won't fit. Don't worry, it will.
3) A generous heap of warm, fresh sauerkraut piled on top of it all.
You stroll out, dog in hand, friends at the side. Now there's only one thing left to do. Dive into the dog, and experience a blitzkrieg of flavor and texture:
-bun: crunchy
-kraut: sweet-sour
-onions: savory
-Russian mustard: spicy.. wasabi-esque
-calabrese: pork, paprika, cayenne, fennel in a snappy casing. Echoing the flavor profile of the dog as a whole package, the calabrese is its own harmony of flavor, from the sharp kick of paprika and cayenne to the sweet, licorice-y fennel seed.
By the time you finish your dog (likely within one or two blocks), you realize that you ate something that was not only delicious, filling, and a bite of Berkeley history, but absolutely chock full of love and soul. And sometimes that's all you need. read more
