Ok, the first few times I came to Thyme Matters I was unimpressed. It managed to stay open for all these years and I swear it has matured into a fine restaurant. A year ago I would have given this place two stars, now I really enjoy going. They have an amazing tuna ceviche that I highly recommend. It is a HUGE tower of fish and mixins and practically filled my mom and I up before we ever got our meal. Speaking of, the service was S.L.O.W. Minus a star. The place didn't look that crowded and there were multiple servers and bussers buzzing around, so I seriously cannot understand why it took nearly an hour to serve us lunch. The food made up for it though and I will be back. Now onto the bar! The have some good bartenders here. One likes to invent drinks and as Albert K. said, the Blue Agave is excellent. The most impressive feature about this place is the bartender, Daniel. That's saying a lot, because everything about this place is impressive. I've had several items on the menu, and the steak frites is my resolved favorite. But seriously, whatever you order is going to be amazing. My fiancé and I try to frequent on Wednesdays, because the margaritas are half off. All the margaritas are good, but the jalapeño and green prickly pear are my favorite. If tequila isn't your thing, Daniel--the bartender--can mix up any cocktail legit style. Got here early and ordered a drink at the bar with mixologist Christopher while I waited on my guest to arrive. FRESH grapefruit the BEST!!! While the bar area is small the breadth of liquors is not. The bar stools are a little short for the height of the bar and the door to the patio gets busy right where the bar begins. When my guest arrived we were immediately seated and greeted by our hostess. They have beautiful patio seating but I elected to sit inside as the earthen called for high temperatures and wind in the evening. What an amazing experience! The ambiance, the food, the service were all top quality. There were three of us for lunch and we enjoyed a couple of appetizers. The mussels were served steaming hot and, me being from New Jersey, I was so impressed with the flavor and presentation. The calamari,as well, was great. We had three entrees that were generous and delicious. One last thing, we requested extra lemon and the waiter took the time to bring it promptly on a bed of ice. Saturday night out on the town with good friends! Even though we were dining at 6:30 on a Saturday evening, there were plenty of seats available. We enjoyed appetizers of ceviche and guacamole (not made table side as menu indicated) that were delicious. Two salmon plates were made to perfection! Moist, flaky, and perfectly seasoned. I wouldn't give this place anything less than 5 stars. Being our local go-to fancy/casual/event restaurant for many years, the service, the food, and the place keeps us coming back for more. I won't elaborate on the food too much, but anything and everything is excellent. Some people have criticized it for having almost the same menu throughout the years - but they're good at what they make. Owner/chef Alejandra Chavez does add seasonal items that again are absolutely delicious. I cannot pin point one dish that you have to order because they are all good. To further elaborate on the menu, their drink menu is top par. Again, no one drink is good so I suggest you try all. They have a margarita special every Wednesday. The service is also top notch. Some of the waiters have been long time employees so they know you very well, and even the ones that haven't been there long are exceptional at their job. Lastly, the location and the look of the restaurant are perfect. The location is great and the restaurant is always clean and beautiful on the inside. The patio is lovely for the spring and summer and their second floor offers a great area for events. Overall, as you can tell - this is one of my favorite restaurants. I hadn't been here in a while since developing a soybean allergy so I called to ask questions about their cooking oil. I was given the runaround and not a clear answer. When your employees cannot answer a simple question, that gives me pause. I am not trying to steal your kitchen secrets or recipes. I just need to know if you use vegetable oil/soybean oil to avoid getting sick. And if you use it in your kitchen at all, I can't eat there -- cross-contamination. So here I am. New restaurant. St Germaine margarita in hand. Which I admit is delicious. Just got the crab Asiago artichoke dip. Don't touch the bowl. It is hot. Have the kid with me and she is well behaved (7 years old) and can order on her own. She has her meal when the appetizer arrives. And she loves it. Kids linguini with meat sauce. Come with a small bowl of parm cheese that she can add herself. Now the dinner has arrived and it looks delicious. Tenderloins medallions. Holy moly so delicious. I should have had it medium rare instead of medium but the sauce is so good and the cheesy corn sauce is so good. Topping this with a tamarind mojito that is way too sweet. Kinda makes me a little ill. Don't order unless you like super sweet drink. I swear if it wasn't for the relaxation factor I would think I drank flavored sugar water. Flavors explode and the play with the meat and corn stuff is amazing. Just trod the kids meal and it is good. She is a little confused about the meat sauce. They have a definite difference between red sauce and meat sauce. Alright so now it is dessert time. Creme brûlée is the only option for me. It was delicious if just a little under whelming. Ok bill has come and convinced myself it is once in a while have paid am stuffed but a little ill from the sweet mojito. Time to roll. Bottom line: good food great service and nice atmosphere. I called to reserve a table for 5 for my husbands birthday. When I got there they did not have my reservation. Not sure when they ask for my name and phone number that they can't at least find it. They put together a table along the bench setting. Soon people squeezed in and sat at the table next to us. Two of the people had their backs to us and their chairs were almost against the end of our table. We could hear all of their conversations. They might as well of sat with us. Came to do a nice dinner to celebrate an occasion. I had the veal and my wife had the salmon. The veal was a special and also had linguini. The salmon was a regular menu item. Our appetizer was a bruschetta type of item and was delicious. Both plates were quite good and we shared with each other. The drinks were awesome and the service was great. This place is really a gem in the city of El Paso! I got the AIRLINE CHICKEN dish and it was really everything. We were a party of five and we each had the best meal of our stay in El Paso. Non-spanish family, recently moved to El Paso celebrating the Birthday of my wife with a party of 6.... We ordered the ceviche, table guacamole, baked brie, chili con queso, salmon x3, tenderloin, panini x 2. Their dishes seemed tastefully prepared and well thought out, but the flavor profile ultimately did not stand out in any particular direction. The food gets a 3.5 stars from me. The host Justin was very accommodating, friendly, and a people person -- 4.5 stars from me. Our waiter.... Robert was distantly polite and very economical with his communication. In fact, he was so economical with his words. His interactions with us almost reached the level of terse.... No summary of the featured dishes. No attempt to engage in banter. I don't know if it was the end of the shift or he simply didn't want to be serving, but if the 20% gratuity wasn't mandatory I would have tipped him less. When a patron spends close to $300, he expects a somewhat personable waiter with emotional IQ to recognize that a celebration merits happy vibes. No one wants to be served by a stiff waiter bringing that sort of dour energy. Maybe he had an off day. Wow, I saw the reviews and I'm actually kind of shocked at how low the stars this restaurant has received. I'm trying to be completely objective in my review, and I wish I could do half stars, but since I can't I will bump them up because my issue is incredibly minor (mojito was made with waaay too much lime). We were seated at a two person table/booth. The hostess was incredibly friendly and cordial. Our server was right behind her and wasted no time in getting our drink order. He came back two times, because we weren't quite sure what we wanted. We got the Caprese Bruschetta for an appetizer (holy moly was that mozzarella fresh!) and I couldn't stop eating it. We also got a small chopped salad which we split between both of us because it was such a large portion. For the entree, I ordered the Peppercorn Sirloin Steak, my friend had the Andouille Sausage and Chicken Pasta. My steak was teensy bit undercooked, but not enough to keep me from cleaning my plate. The potatoes were so flavorful, the steak was juicy, and the sauce complimented everything so well. I didn't even get to try my friend's pasta because she was done before I looked up. Dessert was divine. We had the strawberry shortcake, which sounds like such a basic dessert, but this was AMAZING. The shortcake was still homemade and warm, like it had just come out of the oven. The strawberries were fresh and not overly sweetened. The homemade whipped cream was the icing on this whole meal. We were so incredibly satisfied, and the two girls that sat next to us in the awkward arrangement were nice and we actually started up a conversation with them. I don't mind that kind of seating because I like to be social, but if it bothers you, asked to be moved to a four top, I doubt they will decline your request. Overall, fantastic. Decided to try something new and had heard positive things about Thyme Matters. The server named Bobby introduced himself then took around twenty minutes to come back and ask for our drink order. The drinks were great and very fresh. We tried the tuna ceviche and it was fantastic. The grilled steak and tacos were delicious. Our only problem was that of the service. We tried to order several times and the server told us he was "very busy". He kept giving me inappropriate looks and we could hear him cussing from all the way across the room as well. I've also never seen a server wear a hat on the job and it didn't look very professional or sanitary. We will definitely come back for the food but we will ask for a different server next. read more

I was going to stop by Maria Chuchena for lunch the other day, but apparently they are closed (and based on the note on the door, that might be permanent), so I had to blindly choose another restaurant in the area. I had heard good things about Thyme Matters, which is right across the street. A walked in and notice that for lunch time, the restaurant was quite empty. The waiter sat me at a 2 person table next to another couple even though the rest of the tables were open. I found that strange. For the appetizer, I started with a Poblano and Corn Soup. The soup had a nice heat (both spice and stove) to it. The taste was pretty good, but I would definitely say it was over salty. For the main course I had a Tuna Melt with homemade potato chips. The Tuna Melt was just that, your average tuna sandwich with cheese melted on top. It needed something else to make it pop, though. Also, I would have preferred this to be an open face sandwich. The coleslaw that came with the sandwich was unique. It almost tasted like they mixed store bought and homemade coleslaw together. It was sweet with the pineapple and not over mayo-y. Finally, I snacked on the potato chips. You could tell that they were fresh, but boy did they need salt. They were crunch and bland; such a strange combination. Finally for desert, I had churros with hot chocolate. This was without a doubt the best part of the lunch. The churros were fried well, hot without being greasy. The cinnamon sugar mix added a nice additional crunch without making it too sweet. The dipping chocolate brought it home with a nice bitterness. To make it a little different, I may suggest putting some red chili into the chocolate. For now, I am rating this a 3 since other than the Churros, this place was totally average. I think if they tightened up their flavors and adjusted the spices, it could be better. If a friend asks me to join them for lunch there, I will go, but it won't be something I'll go out of my way to try again. read more

That's my personal choice and others might find that OK. The small corn tortillas were dry and chewy. My wife and her mother both enjoyed their coconut chicken oriental salads. The atmosphere was delightful. Music was mellow and at a level where you can enjoy conversation. Service was very good, if a bit slow. Wouldn't be the best place if you're in a hurry. I've been coming since the place opened and the food is always good. I've been for dinner and lunch and never been disappointed. For lunch I would recommend the southwest turkey sandwich with sweet potato fries or homemade chips! And dinner... The salmon is my go to. For appetizers I'd definitely get the calamari and PLEASE PLEASE do not leave this place without trying the poblano soup. Overall good food and pretty good service. A disappointment. The menu was promising but the execution was lacking. I ordered "Sautéed Tilapia", which was actually tilapia piccata, but the sauce was watery and too salty. It was served with a gummy risotto they are calling "southwestern rice" and mostly raw carrots. My husband ordered the salmon, which was dry. It came with some mealy potatoes and spinach. The spinach was fine but the potatoes must have been deep-fried and were simply awful. To my way of thinking you have to really work at it to ruin potatoes! The service was quite good and the venue was nice (but don't sit under the stairs unless you like the sound of elephants clambering up and down!). The bread was the best thing on the table-crusty and warm. I gave it 2 stars: one for the setting and one for the service, but we will not be returning. read more

Everything about Thyme Matters is 5 stars! From the delicious food to the service and the great drinks. I mean, seriously, every bartender on there is amazing at their job because it's hard to find a good martini in town and this is one of the very few places that gets it right. With options to sit inside or by the lovely patio overlooking the mountains, it's always an experience to be remembered. I am not exaggerating, you have to try the ceviche or the jalapeno margarita and just relax.
