First time here and my wife and I are impressed. Everything we had was delicious. The staff are friendly and the atmosphere is just chill. We came in for a quick caffeine boost before our trip to lessen national park and ended up hanging out for a bit. Good vibes, good people, and good food & drinks. Definitely recommend. Samoa Doughnut - moist and decadent. Not too sweet and paired well with the butter beer latte. Hazelnut croissan - crispy, flaky buttery goodness. Bacon Quiche - savory with a little crunch. My wife and kids just moved up to Redding and always love getting Theory Coffee. It's got such a great atmosphere and staff seems to always be friendly. Theory Coffee never disappoints! We stopped while running errands last night and my wife and I ordered their Peppermint Mocha Latte, which is fitting for the season. I haven't tried any of their food items but was looking at the menu while waiting for the drinks and I definitely can't wait to try some of their items. Being a coffee junkie myself I can appreciate quality and Theory is definitely on point. Super cute coffee shop! Definitely has a nice vibe and aesthetic, super modern inside! They also use holy kakow syrup which is delicious! We got vanilla lattes and they were so good! We also got breakfast sandwiches. They were good except just wasn't a huge fan of the mustard aioli sauce, wish they offered a different sauce. A must try if you're passing through Redding. This location is new and super clean. We got the iced oat lavender latte & iced mocha, both were smooth & fantastic (keep in mind I'm not a huge coffee person). Best of all, their brioche breakfast sandwich was likely the best coffee shop breakfast sandwich I've ever had. read more

It's way over priced an Americana is 4.25 and watery I had to add another shot which was 1.50 more so for 5.75 I got a small Americana that is drinkable. The beans are very terrible the flavor awful. I'm not a snob just like a regular coffee. I've been drinking it against my will to keep awake as I am visiting a family member for the last nine days. I stopped here as I was passing through town, looking for some GOOD coffee (the kind you won't find at a Starbucks). Immediately, I was pleased with how open, bright, clean and cute this place was. A younger guy was at the register and was extremely helpful and so nice, answering my questions about their coffee/menu. He provided recommendations and allowed me to try their cold brew before making my decision. The girl who was making the coffee it was also very nice. Probably the best service I have had at a coffee shop in a while! Kudos to this team (& management for hiring such pleasant staff!). This is also the perfect spot to work remotely as it has plenty of seating (including a cute upstairs, "loft" style area). I didn't get to try their pastries but they looked AMAZING. I am a coffee snob so I am hard to impress. Theory coffee is honestly one of the best roasters I've ever had in my entire life. Redding, California has a true gem of a business. Any time that a business competes nationally because their product is so good that really says something to me. So I went with my family to the location in the mall and had a pour over which was from Columbia. The range of flavors from the coffee was something I rarely get, it is comparable to very fine wine. If you like coffee, I mean like you are a coffee snob like me. You may really like this place. The coffee truly is as good as you can possibly get on earth. read more

It's quaint with a hipster feel to it. Lots of places to sit and chat, read or work on a computer. There's an upstairs with more seating, its nice. The staff are extremely friendly and helpful, the girl who helped me is a total asset to this location. She's friendly, happy, open. welcoming, and pretty knowledgeable. It's good for this store that she is the first person every customer sees and interacts with when they enter this location, she is a refreshing face. Personally, I found the menu items to be a bit on the pricey side, but I have a tight 'out of pocket money budget' so to someone else, the prices might be "no big deal" I ended up getting a bottled ginger lemonade drink, which I found to be delicious. I may or may not return, as it really depends on what I am able to afford. But its a cute place, if you dig that hipster vibe. read more

I love the vegan Donuts here. I ordered a mint tea steamer and while it tasted delicious, there wasn't enough almond milk to create foam. This was a delivery order so I'm sure it would be better in store. I like the display case of baked goods, I also think the decor is welcoming. read more

The wait staff was very friendly and helpful taking our order. We ordered several breakfast sandwiches, drinks and donuts too. We were given a buzzer that never went off for our food so we ended up waiting a longer time than necessary. We loved the breakfast croissants and almond donuts, we tried both flavors. The drinks themselves were just okay, my husband felt the coffee wasn't very strong and I tasted it and it was a bit weak, we also had a peppermint mocha and a tea which were just so-so too, don't get me wrong it was good but nothing you couldn't get someplace else. I love the food and coffee here and the service honestly. But for 2 straight days over near the window in mid spring they crank the AC and it has not been that warm out. Too cold to even sit there for me. I wanted to stay there really. But when I asked the baristas about it they acknowledged the situation but offered no solution or reason it had to be that way. Just a shrug. I wish this place would take their service all the way to the top by acknowledging and offering something. read more

Beautiful shop. Kind people. A convenient stop in between errands. The consistency of the quality of coffee I get is unmatched, unfortunately the quality in question is that you pay 100% for the branding (note: specifically at this location; downtown is great). I have never seen so many shots of espresso die, and sit, waiting for minutes after being pulled, until the baristas stop talking to each other and make a single americano with the cold dead shot. If you want watery espresso you will never be disappointed. If you want a pourover but don't want it as soon as it's ready, you're in the right place. They're kind and always ready to make it up to you if you waited too long, but 90% of the time I come here I'm afraid I leave disappointed, especially given the clout of the brand. read more

I wanted to like this place. I look for independent coffee shops when passing through. For $6.50 a latte, I would expect the people making the coffee know how to create a coffee drink. I waited a long time while the girl making the drink pulled the shot, the. let the espresso shot sit for a long time, overdid the almond milk and then put them together without care. As a self-admitted coffee addict who is very particular about my coffee, Theory Coffee is what I brew most of the time at home. I have had coffees from La Columbe on the East Coast to roasters in Seattle, WA. In fact, I used to regularly drive to Sacramento just to buy coffee beans to brew at home. Without question I can say the best coffee I've had is right here in Redding at Theory! Not only do they have the best quality beans and brew, their staff is extremely knowledgeable, and the service is excellent. baristas are noticeably slower at this location. the last visit, the barista wasn't sure if the cappuccino he gave me was decaf or regular.
