    What's Fresh? - Food Truck Thursday…read more Holy crap! I'm not usually a cold sandwich type of guy for food truck Thursday but on the recommendation of a friend I had to try it. Warren, the executive chef and owner of What's Fresh?, crushed the competition today. I was immediately greeted by a very friendly smile, none other than the owners Mom. Yup, Warren's mother. This is the lady who makes the pickles for their sandwiches and wraps. I ordered the porktastic sandwich with the hope that it would be good. Unwrapping this meal I was pleasantly surprised by the quality of bread Warren uses for his sandwiches. The mustard used on it is the perfect complement to the fresh greens and pork. The explosion of flavors complimenting each other was absolutely awesome!!! Fresh tomato, a fresh mix of greens (baby spinach is always good with pork) and those pickles. Pickles! Crisp with a lot of flavor! I loved it! Just so you know, for the $8 you not only get the sandwich but a bag of chips and a drink. That's $2 less than any other food truck on the street. I guess fresher is better! While Warren and his wife Bonnie have only been working the food truck for 4 months, it is definitely a hit around here. Whether it's a sandwich or a wrap, it will always be fresh and delicious. If you get a chance to catch What's Fresh, make sure to tell Warren to ride his bike more often! Yes, he rides. In fact, he was proudly representing a local ride t-shirt. Support a local biker who uses locally sourced ingredients. Feed your face, and be good to one another. Grumpy PS. Ask for extra pickles!!! They are THAT good!

    I work at Gila River Casino Lone Butte as security and noticed the Casa Reynoso food truck pulling…read moreinto the parking lot. I believe they were assisting another customer who pulled into the lot with them with an order. I approached them to ascertain if they were staying on lot and if so, if they could relocate to the east side of the lot as we advise all big trucks or trailer hitches on site to be relocated to that side. They complied happily but advised me they weren't staying and making a brief stop which is never a problem. What happened next was not what I expected... The male gentleman asked me if I was hungry or even wanted a burrito. I replied with a "thank you, but I was okay." He had a warm smile and true consideration for me, which surprised me as this was the first time I've ever had interaction with Casa Reynoso. The male gentleman insisted politely and I could not refuse this offering as I was hungry and hadn't had breakfast that morning. The female who was with the male gentleman began to prepare me not one but TWO egg, chorizo, potato and cheese burritos with salsa!!! I was overwhelmed with emotion I could barely contain myself and thanked them both. And just as fast as they arrived they were gone. To Casa Reynoso, thank you for gifting me with great food, excellent service and an experience that went well above and beyond. To God, thank you for blessing me through the many people in your flock whom you give your unfailing love too.

My wife and I love to cook and have prepared some outstanding meals at home over our 40 years together. We have extensively traveled and lived throughout the world and as such developed pallets for superb cuisine from all over. As we grew older we gleaned the best of what we enjoy and developed them into our own cooking skills. My wife being Korean born refined her cooking skills in the eastern cuisine like Korean, Japanese, Thailand, and others while I have refined my skills with French and Italian. Prescott is a beautiful place to live but its culinary basis is built on sawdust. We usually cook for ourselves if we want a top notch meal. Now the past several years I have been confined to a wheelchair and transport is very limited. We used to spend winters in Hawaii where we could get great quality meals and seafood whether we prepared them or went out. So our 40th! I wanted to do something special for my wife since I have not been living up to my end of our culinary relationship being confined to a wheelchair. Thus I started seeking out a Chef that would come to our home with his staff and prepare a custom made meal for us. I selected Chef Thomas and Copper State Kitchen. I started by a rather lengthy discussion via phone and followed up with sending Chef Thomas some of our favorite recipes, sufficient for him to develop a five-course meal for us. Chef Thomas is very professional and easy to work with. We refined the meal over the next two days we agreed on the following proposed menu; I supplied the wines. Amuse-Bouche * Fig Jam, Blue Cheese, Red Wine Poached Pear & Arugula Crostini Starter * Prime Rib Poke with sesame crunch and microgreens and pipkuala aioli (based on my deconstruction of the infamous Tiki Bar in Waikiki dish) Pasta Course * Lobster Tagliatelle in a Champagne Cream Sauce Main Course * Beef Wellington with foie gras and red wine demi-glace Dessert * Crème Brûlée (torched table-side) Wine Pairings * Santa Margarita Prosecco DOCG * Domaine Salmon Sancerre Sauvignon Blanc * Tenuta de Sesta Brunello di Montalcino 1996 * Chateau Rieussec 1st Grand Cru Classe 1863 Sauternes 2004 Every course was perfect and very enjoyable. And they cleaned the kitchen meeting my wife's expectations. I highly recommend Copper State Kitchen for your personal culinary experience to celebrate your special occasions.
