Both bartenders were friendly, attentive, and happy to answer questions about the menu while offering thoughtful recommendations. We began with the Creamy Burrata Mozzarella Salad, featuring Cobalt Farms mixed greens, tomatoes, basil pesto, extra virgin olive oil, and a balsamic reduction. It was absolutely incredible. Every ingredient tasted remarkably fresh, and the creamy burrata was the perfect centerpiece. Cobalt grows much of its own produce, and it definitely makes a difference. We also ordered a cup of their Gazpacho, and it was one of the finest renditions of this classic Spanish soup that I've ever tasted. Refreshing, flavorful, and beautifully balanced, it was the perfect way to begin the meal. My wife chose the Catch of the Day - Mediterranean Seabass Special ($36): a pan-roasted Branzino fillet topped with lobster and crab, served over a Parmesan risotto cake with fresh asparagus and finished with a rich lobster cream sauce. Every component complemented the others beautifully. The presentation was elegant, and while the photographs certainly help, they still don't do this dish justice. It was outstanding. I decided on the Double Smash Burger served with fresh-cut fries and a dill pickle spear. The burger was cooked perfectly, seasoned just right, and topped with melted cheese and grilled onions. The fries arrived piping hot, crisp on the outside, fluffy on the inside, and finished with flaky salt. It was comfort food executed at a very high level. From the fresh ingredients to the attentive service and thoughtfully prepared dishes, Cobalt Grille delivered an exceptional dining experience from beginning to end. If you're looking for an excellent meal before a show at the Little Theatre--or simply searching for one of Virginia Beach's better dining experiences--put Cobalt Grille on your list. For a place that positions itself as a serious burger spot, seasoning the meat feels like Burger 101. The fries were good. They offer different seasoning options, but I kept it simple with salt and pepper. I also ordered the Cheerwine sangria, which sounded like it would be something special. In reality, it mostly tasted like regular sangria that someone carbonated. Not bad, just not particularly interesting. Service was friendly and quick, which I appreciated. Overall, the meal was fine.
