Parking is located in a rocky parking lot near the pit where you can say "hi" to Willy, the pit master. Wheelchair access provided by a ramp located on both sides of the entrance. Bar seating is available and as we were waking in, during their down time, we were told to sit anywhere we liked. They have booths as wells as tables. Because we arrived after the rush hours and after a huge call in order, many items on the menu were unavailable. We tried the brisket, ribs, brisket nachos, potato salad (unsweet), jalapeño sausage, and brisket sandwiches. Everything was delicious! We recommend the jalapeño sausage as they run out quickly. Kid menu items are available. They serve a coconut water sweet tea rather than regular sweet tea. Staff were friendly and helpful with the menu. The restaurant was clean.

Spicy Beef Nachos Appetizer: Chips topped with queso, green onions, jalapeños, black olives, tomatoes, guacamole, and sour cream. My friend got this and I had a couple bites. Chips were not soggy and it was large enough to cover as his dinner. Green Chile Burger: Topped with monterey jack cheese and roasted chopped Chaves County-grown hot green chile. Served on a jalapeño bun with a side of our hot green chile sauce. Their signature burger and it tasted good. I don't need too much food but the amount of fries I got was too little even for me. Got two Johnny Walker Blacks with a splash of coke and they came well mixed and quickly. We did end up getting rained in and hilariously went back for a second dinner to wait out the rain. Black corn taquitos were OK, I would not get the fried shrimp basked again, the shrimp was too small and there was too much breading.

You do have to ask for the 10% discount for staying there (show them room key). Only reason to take a star away was service.

I had a burning desire to experience Variety and when the National Air Race got too hot I used it as an opportunity to come here during the afternoon to see what it was like. Sarah was amazing and even offered me some of the food they had set up under the TV. Not sure if this is a normal thing but it looked like a lot of potluck style home made and pre-made food they had out. I tried the squash soup she made since the whole trip I was trying to find something Native American and it was great. The drinks were cheap and there aren't so many people so you will get our order quickly. This is the very definition of a dive bar and I'm sure everyone here was a local except for me. I am very outgoing and can get along with a lot of people so I felt comfortable but this isn't somewhere I would bring my kids and wife. For better or worse this was one of my most memorable stops in Roswell.
