    Bring a veggie saurus, I tend to shy away from Cuban food, as there aren't many options. But I had seen this food truck many times during my work weeks in Bishop, so I thought I'd be bold and give it a try. Their menu has breakfast, bowls, and sandwiches, with a choice of 3 different side sauces. I went with the loaded saltado burrito, with tofu. It was very filling, tasty, and I loved the fries as part of the "load" in the burrito. Their habanero salsa definitely topped me off with a very satisfying burn. I wish there had been some more beans, avocado, or tomato in there, but overall it was a great dinner. Quick service and very reasonable prices.

    Best breakfast burrito I've had in a long time! Meat is juicy, eggs were perfection. I asked for friend eggs instead of scrambled and they were happy to oblige! This breakfast has everything you want and is perfect grip for a day of climbing, hiking, or....any physical endeavor really Super cool guys who made the best burrito I've had in Bishop and I've been coming here for years! Everything I've had here has been great! The loaded salad burrito and the Cuban to bowl are fantastic. The salsas here are also fantastic Get the spicy orange sauce! It adds a ton of heat and flavor to things amazing burrito!

    We were recently in Bishop and had the chance to try The Rolling Chef food truck. All I can say is Wow! We got to the truck a short time before they closed. The staff was really friendly, helpful and appreciated the business. We had a hard time deciding on what we wanted to eat, everything sounded so good. But with decisions made, Mr. B ordered the Loaded Saltado Burrito. The flour tortilla was large and filled with black beans, Jasmine rice, and he chose steak for the meat option, red onions, tomatoes and French fries. After the first bite, he was hooked, it was scrumptious and packed with flavor with the steak seasoning, avo spread and queso frito. I chose the Arroz Chaufa, it was a bowl with Peruvian fried rice, with egg, green onions, and I chose Tofu all in their delicious stir fry sauce. It was also full of flavor. The tofu was tender, the rice perfectly fried, with crispy bits. They have plenty of vegetarian options for those who don't want meat. We were able to park in the lot for the building next door. Rolling Chef is located on a side street, just off of Main Street, across from Chase Bank. They do have a few picnic tables in the parking lot for those that want to eat there. What a gem of a food truck, and a wonderful addition to the Bishop food scene. We will eat there again and try one of the other dishes we would love to have had. You must stop when in the area, on your way to Mammoth or passing through on a longer trip.

    Not sure if they drive from bishop to mammoth, but i tried out this food truck in mammoth. They're parked by the rite aid parking and across the street from the grocery outlet. Really good Latin food! They have tacos, burritos to cubanos and a few rice plates. Order the pinche shrimp tacos $14 and they each had 2-3 large shrimps inside as well as really crispy cheese. It was a bit on the dryer side so def ask for some of their hot sauces. The "hot" was really sour with a kick at the end. Just an fyi, as i expected it to be hot but not so sour LOL

    Amazing food and staff. Havana burrito with habanero sauce was so tasty. You can tell they put thought into their ingredients and process. Love this local business!

    I got to try their food in Mammoth Lake, and I was surprised by how well executed their dishes were coming from a food truck in a mountain town. Typically, I wouldn't expect too much, but it surprised the technique required to make a moist burrito that wasn't wet and dripping. The fish tacos were fried perfectly where it was slightly crispy but soft on the inside without being chewy. I was extremely impressed by the food, also make sure to get the chimichurri sauce and hot salsa to be blown away. Service was super kind and very quick. Ambiance was super nice since they brought their own tables and chairs for customers to sit at. They really made sure to make customers feel taken care of after a long ski day! Super glad that I saw their truck outside of my ski rental.

    Empanadas

    Stopped at the taco truck in Bishop, CA on our drive home from LA. We ordered a Cubano sandwich and empanadas (one shrimp and one ground beef with peas and corn). Oh my gosh!!! They were both so delicious, best Cuban Sandwich ever and the empanadas were fantastic and came with a salad with shaved carrots and red onion and a side of white rice. If you are ever in the area and want some amazing food, check this truck out!! They have Cuban, Mexican, Argentinian, and other food from Latin countries. AGAIN AMAZING!!

    Amazing pollo saltado burrito!! A very filling burrito filled with Peruvian goodness, their salsas were also delicious and spicy.

    Wow. Delicious! Everything in Bishop closes at 2 apparently and I'm so glad it does cause this food truck was awesome! Great service and bishop is gorgeous so.

My friend and I both ordered summer roll (pork and lettuce wrapped in rice paper) and spring rolls (shrimp and lettuce wrapped in rice paper) at $12 for 4 rolls. The Vietnamese owner lady was very nice and let us order them as a mixture of 2 spring rolls and 2 summer rolls as one order. Freshly made to order. They look and taste very "home made", also on the smaller side compared to what I'm used to (lots of Vietnamese restaurants near where I live), and these rolls do not come with rice noodles as many others I'm used to. All that aside, we took our very first bite a few hours later and my friend immediately felt stands of hard thin strings in her mouth, and spitting out SEVERAL STRANDS of short hair, which is not the same color as her own long hair. Shocking. Very shocking. My rolls were just fine with no foreign substances, however the more we eat the more we are getting grossed out from the encounter...she didn't finish eating that roll with hair in it and continue to eat 2 out of the 3 rolls left and so did I, since we were both very hungry and it was our only food option during the long journey, but the whole time we were getting more and more grossed out and none of us ate the 4th last roll in our order. Payment: She accepts credit card or Venmo, but any other form of payment besides cash would be an extra dollar of up charge. Instead of paying $13 for a $12 item, we decided to scramble for cash to pay her. Location: One of three food trucks located in a dirt road parking lot with active large and live mosquitoes flying around attacking us while we order food and dine. A Mexican taco truck each to the left and right side of this Vietnamese food truck. Other: This lady owner says she's had her business here for 5 years now. Had wanted to try several items on the menu but already made a purchase with the taco truck to its right. Perhaps it's a good thing, because the sanitary and hygiene issue here is questionable. I hope she starts to wear a hair net when she preps food. I mean, I understand we all shred hair daily and she must of been working hard to chop the veggies and hand roll each spring roll...but we really don't need that evidence in the form of strands of hair in our food...

This was the best part of our meal. We also tried the vegetarian spring rolls and the bbq beef rice noodle (#13). I was disappointed in the measly portion of beef on my plate. The banh mi was definitely the better option. I do recommend this place either way if you're craving Vietnamese :)
