    Pork Chop Lemon Zest Asparagus

    Brilliant. The pork chop I ordered was cooked to perfection, and was juicy, tender, flavorful and had a great side of lemon zest asparagus. The service was great, and the old fashioned with the popcorn kernel whiskey was delightful. This food made my headache go away....unbelievable. This is the best high end restaurant in college station, next time I will order a steak. The ambiance is very delightful, and the dark lighting was a vibe. Looking forward to my next visit!

    Had a date night at the republic tonight and as usual it did not disappoint. Let's start with our waiter, Dawson. Dawson was amazing. He is very knowledgeable about everything on the menu, the wine list and the cocktail list. He has a great personality that meshes well in a steak house environment. He made excellent recommendations on both drinks and food. We started with the Gulf Shrimp Beurre Monte, Holy Cow!!!! This is an amazing appetizer and I highly recommend it. I had the Prime New York Strip and my wife had the Petite Filet Mignon with the twice baked potatoes. Both were cooked to perfection and seasoned perfectly. We love The Republic and will return for sure

    This is one of the very few fine-dining establishments in this small city of ours, and it does strive to provide a very authentic high-end steakhouse experience, be it in terms of service, presentation, or the food itself. I had been waiting to eat here for a long time, and finally got the chance to do so. I will say that I have had better steak for similar (or lesser) prices elsewhere (nowhere in College Station though), given that I couldn't even notice even a hint of dry-aged flavor on the steak (although it was soft like butter). The oysters were good, but again, I have had better. The sides (mashed potatoes and asparagus) were like standard steakhouse sides. We had mocktails which were rather nice. So overall, a very nice experience, but maybe not worth the eye-watering prices. Also, maybe age the steaks more so the dry-aged funk really comes through.

    What an absolute treat! This was my first time trying the Republic and it did not disappoint. Our waiter was great and have good recommendations. We were provided bread and butter, that were great. I so enjoyed the New Mexico Fried Chicken! The flavors were unique and memorable. I ate in the leftovers for two meals. The place had a great ambiance. They provide free valet. There isn't much parking, so I took a chance and parked by Starbucks. Just know that they charge gratuity for large groups. Looking forward to returning!

    Listen! I am one of those people that orders my steak medium well or well done. So let me get that out of the way first and foremost. I am also one of those people that absolutely loves to put A1 steak sauce on my steak. Say what you want, you're not eating it. This place did not have A1 steak sauce. I was skeptical at first, but because I was with a group, I just went along with it. The prices are on the expensive side, which I kind of expected. But, never in my life have I eaten a steak without steak sauce, and said that it was the best steak ever, until I had a steak at this place. This was hands-down the best steak I have ever eaten in my life. The bartenders, they were knowledgeable, funny, and non-judging of my well done steak preference. This steak, this restaurant, will single-handedly keep college Station, Texas on my list of places to revisit. Period if you are reading this, find a way to get to this restaurant. Damn that was a good steak.

    I'd rate it 3.5 stars if I could: the food is overpriced in my opinion ($46 + tax + tip for a Prime Ribeye) but you're really paying for the experience. * Attire: The Republic is the epitome of "fine dining": be prepared to wear a suit or an upscale dress! * Ambiance: The atmosphere reminds me of a modernized 18th-century manor and the decor is pretty chic, with lots of wood and fancy-looking tables and chairs. (Although, this is specific to the room where I was sitting. I believe there's a bar with stools.) * Food quality: I will say the Prime Ribeye was very tender although it could have used a tad more spice. The bottle of wine we got was incredible: the best red I've ever tasted! * Portion size: the cheese plate was a tad small to share between 8 people, but the Prime Ribeye was massive! * Service: The servers were so wholesome and friendly! You could tell they were passionate about their job and they were very prompt, despite managing many tables.

    Was there for business The service was on point I can tell that they train their staff correctly However the steak I had was so tough and full of fat it was the worse I have had in a long time They labeled it "Prime NY Strip" There is no way this was a Prime steak, more like local cow . They are not checking their vendor or quality checking . The product doesn't match the beautiful place They should take a trip to Houston and eat at the top Steak Houses here and compare meat quality. I should have gone to Salt Grass at least I know what Im getting

    Food is amazing. This is probably the BEST New York strip -- scratch that, the best steak I've ever eaten and that is coming from someone who has eaten at top Dollar steakhouses like Vic and Anthony's and Eddie V's. IT WAS SO TENDER. I ACTUALLY THINK THAT IT BEAT THE $150 WAGYU THAT I'VE EATEN AT VIC AND ANTHONY'S The scallops were fresh and light and the orzo just complemented it so well. The place has an amazing ambience and definitely a place where you would want to dress to impress. The staff, namely, Brooke, was super nice and accommodating with us, celebrating my brothers graduation at a later time due to the travel. our server, Grace was also prompt and attended to us throughout our meal. Overall, this was a great experience and we will be coming back!

He was very knowledgeable and kind. It wasn't too strong, great ratio from alcohol to juices. I will get that again. On Friday night, I went down to the bar again to try another drink. This time, I can't leave College Station without trying the 1791 Old Fashioned. All I can say is this particular drink is in my top 3 hands down and I had many old fashions in my time working at my current job (on my day offs, of course). They put a teaspoon of brown sugar to tone down the strength of the Whiskey (Buffalo Trace) but not for the Whiskey to lose it's purpose. I will most certainly get it again. They also have a food menu just in case you want to order something to eat. Next time I'm in College Station and staying at The George Hotel, I'm coming back. Good job everyone that worked, this past Thursday and Friday night.

As for execution and delivery, I didn't find the cocktails to be amazing by any means, but for the pricing, we were quite happy. But more importantly they serve excellent cocktails! They have over 100 different cocktails and from what I could judge from the couple that I had, they must all be excellent. I started out with a caipirinha which just how I like it - not too sweet. My next drink was a pisco sour. It too was excellent and both were super-refreshing! But the kicker for me was that they have cigar smoking section. Since it's not a cigar lounge, they have a tiny cabinet humidor, but their policy is that as long as you drink you can smoke your own cigars. I came prepared with my own cigars and that made the experience that much more enjoyable. Next time I'm in town, this will definitely be a stop! Finally, they have a sister lounge that is a speakeasy that doesn't even have a name. We went to the speakeasy after dinner and the drinks there were also excellent. If you go to West End, ask them about the speakeasy!

When we arrived, the first thing I noticed was the views over Bryan/College Station, they are truly amazing. We were there not only for a birthday but to watch Texas A&M kick off their season. They had the game on several TVs around the rooftop and with lots of comfortable seating, watching the game was almost like watching it at home. Credit here goes not just to the setting, but to the exceptional team on duty Mattie, Georgia, and Jordan. Their service struck the perfect balance: attentive without hovering, genuinely enthusiastic, and clearly invested in making sure guests felt welcome. It's rare to find staff whose energy elevates a night just as much as the food or drinks, but they pulled it off effortlessly. Speaking of drinks: Reveille's bar program is worth lingering over. We sampled a variety of their specialty cocktails alongside the classics, and not a glass disappointed. The food followed through with equal strength. Chef Keith Snook deserves applause for a menu that blends Texas heartiness with elevated execution. The Short Rib plate was rich and tender, the Texas Charcuterie board felt both rustic and refined, and the Pork Belly Burnt Ends were smoky, indulgent, and perfectly caramelized and were the kind of dish that lingers in memory.
