Escargot Stuffed Mushrooms- a bit tiny, but packed with buttery goodness. Entrees: A5 Wagyu Flat Iron- this was a special and it wasn't tender enough to cut with just a fork like I've experienced, but still pretty tender and very juicy. Seasoned perfect to eat by itself, but it came with 4 different restaurant-made steak sauces. Mesquite Smoked Short Ribs- very tender and can be torn to shreds with a fork. Comes with mash potatoes and gravy and some crispy noodles for texture. Very flavorful. Sides: Maple Bacon Pecan Brussel Sprouts- very delicious and flavorful. Smoked Mashed Potatoes- very thick and smokey, but delicious. Definitely need some water lol. Poblano Creamed Corn- my wife liked this, but I didn't care for that creamy corn texture lol. Dessert: Marie Antoinette Cake- chocolate mousse cake that was perfectly rich with some kind of raspberry or berry drizzle. Also came with these super delicious alcoholic infused strawberries that paired super well. Overall, it was a pricey dinner, but not as pricey as I thought. Had an awesome dinner at The Republic. The Gulf Shrimp Beurre Monté was a killer appetizer -- perfectly cooked and packed with flavor. The ribeye was cooked right and tasted incredible. The poblano cream corn might be one of the best sides we've ever had. The key lime pie with the almond graham cracker crust was the perfect way to end it. It was our last day of training and we decided to splurge at The Republic on a Thursday evening. We had no reservations and the place was packed! But no worries! We were welcomed at the full service bar by an attentive bartender. I ordered the Wedge salad which was a solid appetizer accompanied by the complimentary bred and butter. This is one of the very few fine-dining establishments in this small city of ours, and it does strive to provide a very authentic high-end steakhouse experience, be it in terms of service, presentation, or the food itself. I had been waiting to eat here for a long time, and finally got the chance to do so. I will say that I have had better steak for similar (or lesser) prices elsewhere (nowhere in College Station though), given that I couldn't even notice even a hint of dry-aged flavor on the steak (although it was soft like butter). The oysters were good, but again, I have had better. The sides (mashed potatoes and asparagus) were like standard steakhouse sides. We had mocktails which were rather nice. So overall, a very nice experience, but maybe not worth the eye-watering prices. Also, maybe age the steaks more so the dry-aged funk really comes through. read more

Listen! I am one of those people that orders my steak medium well or well done. So let me get that out of the way first and foremost. I am also one of those people that absolutely loves to put A1 steak sauce on my steak. Say what you want, you're not eating it. This place did not have A1 steak sauce. I was skeptical at first, but because I was with a group, I just went along with it. The prices are on the expensive side, which I kind of expected. But, never in my life have I eaten a steak without steak sauce, and said that it was the best steak ever, until I had a steak at this place. Can't believe I've been going here for over 10 years now. Made it back down there for a game twice this season and had several new items that were incredible. I'm more of an app person so I try to get two or three apps each time so I can try several things. As always the drinks are great. Big pieces of crab, mixture seasoned very well and cooked perfectly. Served with several sauces. My favorite was the creole burre blanc. Shrimp Burre Monte is insane if you're more of a sauteed shrimp type person. Can't go wrong with this one. The most recent app I tried was the Gulf Coast Shrimp Cocktail. I never would have ordered it until I heard the guy next to me at the bar telling his girlfriend "holy S*#! that's good" at least 3 times. Couldn't NOT get it after that. My husband I love this place. We usually get the butchers cut, NY strip, Ribeye, or Filet. Yesterday I tried the redfish and loved it. We've also enjoyed the steak tartare and escargot stuffed mushrooms. My favorite sides are the macaroni and cheese and asparagus. The mashed potatoes were a little too smoky for my taste. The crème brûlée is excellent, and so is the chocolate mousse cake. They have a great bar, including nonalcoholic beer and mixed drink options (the strawberry cucumber smash was outstanding). A play on a carprese salad, they use formed ciabatta deep fried croutons. Didn't care for those, I believe if they would have torn ciabatta bread, drizzled some olive oil and baked till crunchy would have made that salad so much better. We made a last minute reservation and headed over for a celebration dinner. We ordered a bottle of 2018 Peju Cabernet Franc. Peju is a premier winery located in the heart of Napa's Rutherford AVA. Their Cabernet Franc is dry and dense like a cabernet sauvignon, but with more earth notes and less fruit forward. Delicious. I ordered the Prime Bone-Off Ribeye black-and-blue. The steak was crazy big, juicy, with little fat, and no sinew. It was perfectly done with a nice surface char. My wife ordered the Grilled Texas Red Fish. While the fish was delicate, juicy, and nicely spiced, she was initially shocked at the Cajun take on risotto. After the initial disconnect, she enjoyed its slightly tomatoey Cajun twist. We ordered the Pecorino Creamed Spinach and Prosciutto Almond Green Beans. Both were wonderfully flavored. The green beans were firm and short of al dente. The wait staff were attentive and helpful and friendly... not intrusive. They rounded out the amazing dinner with their great service. Came to town on business was able to get a seat. Came here two different nights and outstanding service from Joseph and Heather and a very nice dinner. I went with the Sirloin with Shrimp Beurre Monte topper. We shared their generous sides with the table and got the Bacon Roasted Yukon Gold Potatoes, and the Brussel Sprouts. I was very impressed with the drink selection. One of the coolest things I've seen is their bourbon bracket game they play. They match various whiskey's against each other and the selection costs $12 to play and you get two of the current "teams" playing. You tell the waiter which you like better, and place your vote. Once you vote, they tell you which you got and the winner moves on to the next round the following week or bracket. Super fun, and had some great new whiskeys I hadn't tried before.
