Overheard another customer talking to the owner (I believe), commenting on the unusual choice of cornbread waffles with the Chicken Fried Chicken, and her response was that she was from "up North", and didn't understand "Texas Toast" served down here. Maybe that is the issue. When you hear a name like "Let's Eat Texas" you are expecting food cooked a certain way, with a certain taste.
