This was mushy and wet (not moist, more like it was boiled?) and very pale with little taste. If this did start as Brisket, then what was done to it is borderline criminal. Overheard another customer talking to the owner (I believe), commenting on the unusual choice of cornbread waffles with the Chicken Fried Chicken, and her response was that she was from "up North", and didn't understand "Texas Toast" served down here. Maybe that is the issue. When you hear a name like "Let's Eat Texas" you are expecting food cooked a certain way, with a certain taste. Maybe they should rename it "Let's Eat New Jersey", at least then you would know what you were getting into.
