Located just off the Old San Antonio Road near Fredericksburg, one of the newest wineries has…read morejoined the Texas Hill Country family. This venture has been a dream for owners Mike & Rosann Mitrione. Their first vineyard was established in the Texas High Plains in 2018, where they planted around 15 varietals across 27 acres. In 2021, they began designing and planning their new 38-acre Texas Hill Country vineyard. They started planting their estate vineyard in 2022 and have now expanded to 9 acres of vines including Albariño, Petite Sirah, Montepulciano, Syrah, and Aglianico. Since opening to the public in summer of 2023, they've maintained a steadfast commitment to producing 100% Texas wines. When you enter the tasting room, you will immediately notice the impressive Texas granite structure adorned with a symbol that reflects the Ross family's core values: Faith, Family, Friends, and Fellowship. The two-story, eco-friendly tasting facility is semi-circular and built into the hillside - reminiscent of a piazza in Italy. It has an upscale vibe, high-end design, and comfort in mind lending to its artistic flair. Facing east, the tasting room stays cooler both inside and out, enhancing the experience. Another notable feature are the large tables made from repurposed old pecan trees found on the property. Well known Texas winemaker Tim Drake has been helping in the crafting of some very fine wine here. Most focus has been primarily on Italian style wines which reflects the owner's wine travels. Most grapes are sourced from the High Plains vineyard estate with some future Hill Country estate wines to come. First to sample was the '23 Sauvignon Blanc which is sourced from the High Plains estate vineyard. Citrus & melons will be the first notes to light up your wine palate followed by zesty acidity. The second white wine sampled was the '23 Bisaccia. This Italian style blend, named after Michael's grandfather's Italian town, was crafted with 57% Trebbiano, 39% Albariño, and 4% Pinot Grigio. It is dry with dried apricot notes and minerality. An extra white wine treat was the Windswept. This Rhone style blend (yes, departure from the Italian theme, but that's ok) is a blend of 52% Viognier and 48% Roussanne. It is a lovely lighter Rhone style wine with buttery notes, a tango between apricot and pear, and a hint of minerality. Moving to the Rosé wines, the first to sample was the '24 Sangiovese Rosé. It had a pink colored hue with notes of watermelon and strawberry coupled with good acids. It also had more of a Provence style feel to it for an added pleasant. The next Rosé wine sipped was the '24 Vega. It is Malbec based with some raspberry notes and a nice soft and refreshing feel. Moving into the reds, the first to sample was the '23 Grenache. It was aged in Russian oak (yes, for real), exhibited a deep brick rusty color, lots of good fruit forwardness and a touch of smoke. Next, was the '22 Piazza Rossa. This super Tuscan style wine has 67% Sangiovese, 22% Cabernet Sauvignon, and 11% Merlot. To say it has a big nose is an understatement, but you will also be impressed by its deep dark color, and notes of fig. Plus, the finish is to die for! Saving the best for last red to sip, was the '22 Envisage. This right bank Bordeaux style wine (yes, not exactly Italian, but still great) was carefully crafted with 46% Merlot, 38% Cabernet Sauvignon, and 16% Malbec. It has nice rich dark fruit, some baking spices, good tannins and acidity, and a smooth finish. Overall, it was a very fine and enjoyable tasting session with everything being spot on. When dreams are realized, magic happens. You can see this not only in the quality wines produced, but the tasting room design, décor, and cool vibes. There is a food truck on site that will whip up some good eats to pair with your wine. You will experience great hospitality here as well. The team is very professional, knowledgeable, and attentive to help ensure you have the tasting experience you desire. You will feel well cared for and comfortable here and will want to return. Cheers!

We were kind of concerned as it is in the opposite direction of all the other places. Upon arrival we were greeted by the host in the outside foyer and taken to our table ( they take reservations but we did not have one). We were sat and promptly greeted by our server. She explained the options for tasting to us and informed us that there was a food truck onsite as well. We opted to do the red wine tasting . The tasting started with a Grenache ( full bodied, very fruity but not sweet) the grapes really shine, next was the Sangiovese which was even better. We went through a series of 5 wines that all were made with exceptional care as none were left to waste. My favorite was the 1 Sangiovese, 2 Grenache, 3 Tempranillo. We also purchased a pizza from the food truck onsite. It was a margarita pizza ( large enough for two to share as a medium snack). If your hungry you made need more. They have more than pizza as well. We bought a bottle of Sangiovese and will definitely return. Excellent live performer and extraordinary service !!

What was supposed to be A Day to remember, it turned out to be one of the worst experiences I have…read moreever had. We visited Saturday to celebrate an engagement of our children. We had been to a few other spots before and literally got red carpet treatment and people were genuinely happy we were visiting their establishment. However not the case at The Resort" We walked in and sat down and immediately the server came to take our order. She carded the newly engaged couple and asked them both for their ID's. When she realized the bride to be had a different last name then her mother, they asked for proof they were related. That's when everything got uncomfortable. For the bride to be does not share her mother's name has her mother was divorced many years ago. The server then asked to show proof of insurance where it showed that the mother paid for the daughters insurance. Being restaurant owners themselves, the mother questioned why she was being asked this, and mentioned to the server, it was getting very uncomfortable and to just forget about it. We would take our business elsewhere. The father of the bride to be felt horrible for all of us and went in to speak with a manager. The manager was rude, and started spouting off Texas ABC laws, which again our friend was a restaurant owner himself, and said there is no law that says a daughter and a mother have to share the same last name for proof of identification. By this time, the server had already packed up our wine, instead of putting it in nice bags , she put them in plastic bags, and taped them up, as if we were hobos (see pics), and brought us a bottle of wine, which she indicated was a "gift" as we think she felt bad for what had happened. The wine was not even from their winery. It was a bottle of Martha Stewart "Two Buck chuck wine". As we were leaving, the manager was in the bar, and I went over to tell him how horrible the experience was, instead of pulling me to the side to have a conversation he started yelling at me in the bar, he started quoting the same laws he had referred to previously, and told me I was never allowed to come back. I of course, said we were never coming back anyway. He was yelling at me as I left the bar. And yes, owners of the restaurant you can go back and see the video tape and watch him, follow me out yelling at me, in front of your whole restaurant. Customer service 101, even if the customer is wrong, you do not chase them out of the restaurant, make a scene in front of all your other customers, and never follow them to the parking lot,Not just bad customer service, but 100% uncouth. Then, he proceeded to tell me to fuck off as we were standing outside of the restaurant, in front of customers entering the restaurant, my son and our friends. I literally felt like I was at a low budget establishment, or bowling alley. So incredibly disappointed. Shame on you to the owners or lead manager of this establishment. You need to do better. (Im including a picture of how our wine was packed that day- where is the other open bottles from the other visitors were not sent home this way. They were sent home in nice carry bags with the Ventor's name on them)

This is the kind of place that reminds you why you love supporting small businesses…read more My wife and I booked the wine and chocolate pairing experience at Hill Country Chocolate in Fredericksburg, and without question, it was the best tasting experience we've ever had. From the moment we walked through the door, Dan and Melanie made us feel like welcomed guests instead of customers. We were greeted immediately and escorted upstairs to a beautiful tasting room where we spent nearly two hours enjoying an unforgettable experience. Dan is one of the most knowledgeable and passionate business owners I've ever met. He walked us through not only each DKM wine and handcrafted chocolate pairing, but also the fascinating story behind how the business came to be and the meticulous process that goes into making every product. His professionalism, attention to detail, and genuine love for his craft were evident in every minute of the experience. And the products? Absolutely phenomenal. I can honestly say every single wine and every single chocolate was outstanding. The Moscato, sparkling wines, and red wines were all incredible. The chocolate pairings elevated everything even further. The turtles, brittle, chocolate-covered raisins, chocolate-covered strawberries... every bite was memorable. It was one of those rare experiences where you keep waiting for something to be "just okay," but it never happens because everything is exceptional. The factory itself is spotless, beautifully designed, and it's amazing being able to look through the windows and watch the production area where everything is made. The retail shop is equally impressive, filled with beautifully packaged chocolates, wines, gifts, and treats. We told ourselves we weren't going to buy much... that lasted about five minutes. There was simply no way we were leaving empty-handed. What impressed me most was the precision and care that Dan and Melanie have poured into every aspect of their business. From the presentation, to the storytelling, to the products themselves, every detail has been thoughtfully crafted. It's rare to find a place where the customer service is just as exceptional as the products, but Hill Country Chocolate absolutely delivers on both. If you're visiting Fredericksburg, do not skip this experience. Whether you're a wine lover, a chocolate lover, or just appreciate passionate business owners who genuinely care about giving guests an unforgettable experience, this is a must-do. Bravo, Dan and Melanie. Thank you for an incredible afternoon. We can't wait to come back and will be recommending Hill Country Chocolate to everyone we know. 5/5 without hesitation.
