The old pit, the brick walls, the long tables, the signs on the walls, and the simple serving line all remind you that Fresh Air has been doing this for a very long time. One thing worth knowing before you arrive: this is Carolina-style pulled pork with a vinegar-forward sauce. If you're expecting sweet barbecue sauce, reset your expectations before that first bite. This is a different barbecue tradition, and that's part of what makes the experience interesting.
