I've been remiss in not singing the praises of this joint in a more timely fashion. First, this little gem is located in a nondescript strip mall. Though it's a high-traffic area, it's still easy to miss. I'm not even sure how I ended up ordering from here a couple of years ago, but when I did -- and mentioned it to friends -- I learned that I was late to the game. All of my orders have been to-go, but I have been impressed with the linen tablecloths and suave dress of the staff every time I have gone in to pick up my food. I've also been impressed with the politeness of the service here. I'm a drunken noodles (pad kee mao) guy, and the stuff here is outstanding. The rice noodles have always been perfectly cooked with the perfect amount of basil. The beef is a little on the tough side. The chicken version is more tender. And don't let the menu description fool you though, because it is hardly mild, which is a good thing! As delicious as the noodles are, this joint's fried eggplants might just be the stars of the show. They are fried very crisp -- so crisp that they are still crispy when I microwave leftovers two days later -- then drenched in a mild sweet chili sauce and garnished with chopped peanuts and cilantro. Beulah Land for sure! Though I could live on the drunken noodles and eggplants, I intend to make my way through the menu. I have little doubt that I'll be just as impressed.

Alright, alright. I'd like to consider this place a bit of a hole in the wall. This place has some CHARM, ya'll. I'll admit, it's a little off-putting. The whole setup can be seen as a bit goofy--almost as if I'm on a set for the hit show, Squid Game. You aren't in the fanciest of areas but the management/owner insists on keeping the theme he's owned since the first decade of the 2000s. Tables are well dressed and stemmed glasses are present. You will likely run into a well dressed gentleman who will pull a chair for you and will also flick the napkin gently over your lap. Now that doesn't mean you're paying extra for such care; prices are still rather affordable. Ughhh, but the walls and the carpet just don't do it for me, man. This place most definitely has potential and it could benefit from a face-lift. It's not too far from Bay Area, which is constantly in the flux of growth--perhaps the place will eventually be considered a diner on the outskirts of a growing food hub that "in-the-knowers" can pivot to. But hey, let's talk about food. HOLE-IN-THE-WALL food, at that. If you're a fan of Thai food and live in the southeast side of HTX, this is definitely a place you must visit. If you're constantly making stops to Thai Cottage because it's the only Thai food source you know, you're missing out on flavor bombs. Flavors with a bit of smoke to it, a hint of charcoal here and there, and places with real character. You won't find that at run-of-the-mill Thai chains. I mean, LOOK AT THE PLATING. It's art. Isn't it nice to know they care? Service can be a bit slow due to their minimal staff. I admit I would be a bit worried for a busy day. I feel there are little things you can do to front load and allow you to be present for your diners. Recommended items: Fried eggplant - this batter is just awesome. I left my fork in one just to show you how crispy this son of a gun is. Textural heaven. Crispy on the outside, soft on the inside. All around delicious. Crispy duck - Holy--like, nothing beats Asian duck (except maybe perfectly cooked $300 French cuisine options). Guys, this is some serious baaaaaang. And the skins? You HAVE to try this. Pad Kee Mao - Flavor wise, this definitely has a flair of its own. Great use of spices. I would say the protein to noodle ratio is way too heavy today, and the noodles seemed to be purposely cut way too short. It's like pouring the last bits of cereal out of a box and eating them. I would also maybe substitute the beef out for a different protein next time as those cuts just didn't do it for me. The flavor is most def' there. Mango sticky rice and coconut ice cream - Yes..! Every proper Thai restaurant should have this. I like mangos at any age, but for these kind of desserts I tend to prefer them more on the ripe side. I can't help but to root for these guys. They seem like a quirky bunch that know good Thai food and try their best to bring you an elevated experience. Hmm...well, I like quirky. Come support these guys and see if you feel the same way I do about them.

Really nice restaurant, food was amazing. Everyone in our group enjoyed their dish. The menu is quite big but this offers much more options.

Merlion was super busy yet the service was surprisingly attentive from the entire staff despite having to park several blocks over due to the crowd! I actually came back to update this review to give a shout out to our waiter Bryan. He's been our waiter the last 5 or so visits regardless of when we come or what part of the restaurant we sit in, and he somehow manages to elevate the already fantastic experience we have. He's insightful on the menu without being pushy, remembers our unique requests, checks in on us without being too much, and strikes a great balance on engagement without intruding. I haven't been writing as many reviews as of late but Bryan's service had me dusting off the old digital keyboard. All that to say thanks Merlion, I'd say never change but over the years every change yall have made has been for the better!

The experience was --- interesting. As is common with tasting menu restaurants, there was a story to go with each dish presented. Also as common with this sort of thing, some dishes were better than others, and many were just okay. At $150 per person, it was on the expensive side, and I question whether it was worth that. Perhaps $100 would have been appropriate. A wine/cocktail option was offered for something like an additional $125, but everyone declined. We were filled to excess by the food, and found it difficult to imagine having space for drinks on top of that. An interesting experience, but we are unlikely to return at this price point. I think that I have decided that tasting menus just aren't my cup of tea, and I really prefer to go to a place where I can select exactly what I want.
