12 oz ribeye, half inedible fat

I took my aunt and my 5 year old here for lunch on a Saturday. We were promptly seated and ordered our food. A petite filet, a 12 oz serving of prime rib, both medium, and a child's mac and cheese. 35 minutes went by between the my aunt's very simple side salad arriving and the entrees. Our server never appeared to explain or apologize for the delay. When our food was finally delivered and placed at the edge of the table by someone we had never seen before, the mushrooms and onions topping the prime rib were cold. The food had obviously been plated and sat for long enough to cool off. But our server never checked back in with us to see if the food met our expectations until after we finished our meal. What happened between some stranger dropping off the food and the end of the meal was the most irritating part of all: I discovered that fully 1/2 of my 12 oz portion of prime rib was a giant wad of fat. The waitress, upon finally reappearing to drop off the check, defended this by telling me that I had ordered a rib-eye, and that rib-eye steaks always have a lot of fat. I did not order a rib-eye, nor was I served one. This chain touts its hand cut steaks and legendary food and service. What a poor excuse for a steak, and even poorer service to defend it after I brought it to her attention. I've never had this problem at other locations, but now, twice in a row at this one. I won't be back.

We have had a lot of steaks at a lot of different places yet always find ourself comparing them to Texas Roadhouse. They are extremely consistent and everything always tastes great. They also seem to have the best side salads in town. Service always seems to be good though it is very loud as to be expected. This is not the place for a romantic date night but it's the perfect place to get a great meal.

Our food was very good. I was surprised at how salty the bun was on my veggie burger sandwich but it was still salty in a good way. The food took longer than average to come out, and that's the reason for the 4 out of 5 stars. We waited over 30 minutes for the food, and it didn't seem particularly busy, though the server seemed to be covering a lot of acreage with tables both inside and outside under her responsibility. She still did a great job, though. I look forward to stopping in again the next time we're passing through town.

The one bright spot of the night was the female bartender near the dance floor -- she was genuinely friendly and gave us the only positive interaction we had there. After that, we walked to the other side of the bar hoping maybe the vibe would improve, but it only got worse. There were barely any people there, almost all men, and the atmosphere became even more uncomfortable. The music was terrible, the crowd felt awkward, and the whole place had this strange, unfriendly energy that made us want to leave as quickly as possible. We finished our drinks and got out of there. Walking past those same creepy bouncers on the way out honestly felt like a relief. It's sad to see a place I used to love turn into somewhere that now feels so unwelcoming and uneasy.

The Fish & Chips saved this entire meal. There are a number of things to order from the menu at the bar. Obviously I would stay away from the CB, but I would definitely recommend the fish and chips! When I come back to Pueblo, I would definitely consider coming back here.
