The wait time for crawfish was 45 minutes so we ordered and had a beer that we brought along in our coolers. (There are non-alcoholic beverages at the vendors but you have to BYOB.) I ordered 3 lbs of spicy crawfish with mushrooms and spicy garlic butter. The crawfish were decently sized, perfectly boiled and the spice was on point! Texas Crawfish Co, also previously known as Big Cabs is one of my favorite places to get crawfish. They recently opened a brick and mortar but the Spring location is closer to me. It's behind a gas station at a food park. The flavor, the size, the service is always great! They are very consistent and always ensure the customers are satisfied! I ordered 5 pounds of crawfish for $25 extra spicy, and let me tell you....finger licking good! It has a slight citrus taste if that's what you like but they are juicy, big and always clean! Big Cab's has rebranded as Texas Crawfish, and appears to be under new ownership. I stopped in to see if they are holding up to Big Cab's reputation. I got a pound of crawfish, a potato, an ear of corn, and the butter sauce. The crawfish were great. Right now is the perfect time to get them. They were big, cooked perfectly, and the regular spice level is plenty hot for me (they will make them spicier for an upcharge). The potato was also done just right and the corn was plump. It was a really satisfying meal. The evening was gorgeous, and Texas Crawfish was taking responsibility for trash collection that evening at La Plaza de los Food Trucks. That's appropriate, since crawfish generate so much trash. The cashier told me it would be a 25 minute wait (they had a line), so I settled in, but mine was actually ready in about 10 minutes. You get a full roll of paper towels to help clean up, but don't pitch it if you don't use it all! They will take it back. $13.95 for this meal is quite reasonable. I can't find anything to note. Upon our arrival the environment was mildly intimidating in terms of the location behind a gas station. However, my group was quite hungry. Parking was easy, the crawfish were big, and the service was very kind and communicative. We got the regular spicy crawfish that satisfied our expectations. Drove to big cabs where I noticed there was a food truck park . Ordered online, hours are 4:30-8:30. Walked up and there was no line. Picked up my Togo order and they mentioned they sold out of potatoes, corn and sausage by 7:30pm. Grabbed my order and left. Went home, opened order and there was butter sauce ALL over my bag. This was my first time tasting big cabs compared to other crawfish places I visited and favor. Crawfish was huge and flavor profile was good. The kick was just right but it also encouraged a lot of restroom use though so beware! Overall, 8/10 for the flavor, peel was 7/10, some of them was still hard to peel as if they were under cooked a bit. Overall, I would visit again but eat there immediately instead of taking it home.
