Duck Dynasty Dumplings $12 - Ok. Dumpling wrapper excellent , filling very dry and again off-putting taste. I like duck, but I should have went with the regular pork mix. Barely any sauce as well to dip. Signature Tonkatsu Ramen $20 - Good! Best part was the egg! I've had better ramen elsewhere. For $20 I expected more flavor and fillings. You can definitely customize and add, but at this price point I would rather have had base start at $24 and include wood ears, more veggies, bamboo, etc. Mine was basically the fat part of pork slices with 20% meat, one veggie, whole egg (which definitely was excellent), and a good broth. Thin ramen on this one, but again I've had much better broth, noodles and fillings. Burnt Honey Calamansi Tea $8- very good for about 12-14oz, but expensive. I understand Calamansi is not typical here in north Jersey and I'm certain they pay higher pricing wholesale, but it wasn't that superb to pay $8 for again. I was super excited to finally grab some Tenmomi! This spot is a ghost kitchen so it's pick up only! Also be aware to get your orders in early cause he sells out! I got some porky buns and the Ube sesame ramen. The bao buns were super soft, filled with tender pork and pickles that added a nice texture and acid to balance the fattiness of the pork ! Then comes a super unique blend of Filipino-japanese ramen. The fried thighs on top might have been some of the best fried chicken I have had in a while! Delicious ramen! I got the spicy miso ramen and the depth of the broth flavor is honestly ridiculous. Rich, creamy, flavorful. The pork flavor really shines through, too. Just a little bit of kick of the spice to round out the flavor. Noodle portion was great with perfect texture and bok choy was also perfectly cooked and tasted great with the broth. Ive gotten the spicy miso ramen which i believe is part of the permanent menu (the chef adds different items to the menu every few months or so, but ive always seen the spicy miso). The broth is phenomenal. Fatty, not overly spicy but not too mild, amazing. The noodles are so different from any other ramen places Ive gone to, more like smaller circular thinner noodles. AND I LOVE THEM. Perfectly al dente like I like it. Great broth to noodle ratio. The only "down side" is that I wish they gave more pork belly or confeit. The dumpling skin was still doughy and sticky so even the skin didn't get cooked. Chef said it's "par-cooked" and he fired it up for 4 mins. Why is pork served par-cooked and only cooked for 4 mins? That cook time is way too short for pork. If they don't even know how to cook meat to a safe temperature, THEY SHOULD NOT BE IN THE FOOD BUSINESS AT ALL!! I don't know if I'll get food poisoning, or worse, get a parasite. Absolutely unacceptable and disgusting. AVOID AT ALL COST!! THIS PLACE IS NOT WORTH THE RISK!!! DO NOT EAT HERE! STAY AWAY!!!!! I used to live in the area ; was up visiting family and I stumbled on this place by way of an IG reel so I figured I would give it a try because (a)-it was the Friday that NJ experienced a 4.8 earthquake and I most certainly didn't think I was in the right headspace to do any cooking and (b)-this place was literally 1 mile away from my mother's house so I figured I'd pay the extra overhead and have it delivered because it was so close. When I called the establishment Chelf Salty communicated his dismay and stated he would remake my order for in person pick-up; I appreciated his effort to make this right so I agreed. I'm glad I did. I ordered the spicy miso ramen, the tori katsu ramen, and the stamina ramen (was sharing with mom). The spicy miso ramen has a nice kick, the ramen noodles have a good chew and the pork confit was silky. Katsu ramen and stamina ramen though brothless had great balance of flavor between the amazingly dressed noodles (again nice kick in heat/flavor that wasn't blindingly spicy), perfect jammy eggs and the the chicken katsu was DIVINE..perfectly crisp..juicy..and again..great balance of flavor in the chicken. If you don't feel like getting in your car to drive to a ramen place and just want to tuck into some yummy ramen at home do give this place a try..I'm glad I did. Is it the best ramen I have ever had in my life? I read so many rave reviews, I felt I had to try it. I was disappointed. I got the karaage bao and the signature tonkotsu ramen. Both were different from what I'm used to (compared to specialty restaurants in NYC). The karaage (I love karaage) was heavily battered and fried to a dark hue but as a bao, it was still good. I didn't like the ramen noodles (skinny noodles with no chew). In my opinion, the broth wasn't anything special and I think it gave me heartburn. The pork was half fat, which I threw away. I just went to get the Ube and sesame ramen because the purple noodles intrigued me. The noodles were the right amount of cooked, kind of al dente and not soft. They weren't soaked in soupy sauce and had a nice flavor. The chicken was a 10 of 10 because the batter was crispy and the chicken was choice meat not the fatty parts. There was something so unique about his Ramen that my girlfriend told me she wanted to have this for her birthday. The sinigang ramen gave just a tiny hint of sinigang, interesting, but wont be on my list of things to order again. The tonkotsu ramen, which only came with a few pieces of greens and not the usual ramen toppings and veggies, was ok, at best. The experience was so disappointing! I went there hoping for the ramen of my childhood. The thought of mushy overcooked noodles, in a sodium heavy flavor packet was what I was craving. When I tell you that is the furthest thing from what I got, buckle up. First the noodles were chewy in just a way to give great texture. The broth it was in was so unctuous that I could still taste it hours later leaving me wish I had more. The meat, done to perfection, why can't he just overcook his meat like other places, what's he trying to prove by cooking food the way its meant to be eaten, and the creamy egg, I wept. Never have I ever had a bowl this good since I lived in Japan. This selfish chef has ruined the "Top" stuff for me for the rest of time. If you like cheap noods then I implore you... DON'T GO HERE!!!
