Non-traditional tacos. Not Mexican. The first time I came here a couple of years ago I enjoyed my tacos. This recent visit last month I was so disappointed. The quality has gone down and the tacos were flavorless. We didn't even finish our meal and half of it ended up in the trash. And we were so hungry! Let me start off by saying I am from socal and we KNOW TACOS AND MEXICAN FOOD. Randomly driving in the area and noticed this hidden gem off the side of the road and had to pull over and check what it was about. Yes the same place has a pizzaria (I will be trying when I come back) and this taco spot in the same location.. let's just say holy $h*t the mole tacos were on freaking point! Not too bitter like some moles , not too sweet like others but this was just like grandma made it back home. The tortillas are handmade with imported masa from Mexico I was told my the owner who is an San Fransisco native , it was a perfect taco meat / sauce / flavor combo will kick your butt in the good way and makes you think you are sitting at a taco trunk at 2am in socal eating tacos! Loved this place! We only had the tacos but the pizza looked fantastic too. Real food made by hand. The tacos are the best I've found on the island. We took some caramel lilikoi Pana cotta and chocolate mousse home and it was some of the best dessert I've had since moving. Wow!! Met the owner of this spot at a farmers market randomly so came by to try the food. I had the uala (purple sweet potato) tacos and dayum!! Super impressed by the flavor profile on these tacos. Comes with Hawaiian sweet potato mash, onions, cilantro, pickled jalapeños, tomatoes, cotija cheese, and lettuce on a house made double corn tortilla. Doesn't need any other toppings or dressings, tastes perfect as is. Plenty of free parking and seating. They also sell pizzas and salads here which look very delicious. read more

It's 8:37 pm, we drove all the way from Hāpuna beach to try this place. What a disappointment. The meat was so bitter, we could not eat the tacos and the burritos. The pizza was decent. I had a business meeting in Waimea and after the meeting I had a hankering for some Taco's. Well.. I always have a hankering for tacos but that's besides the point. My usual place Big Island Brewery was closed for some reason and I fired up Yelp to look for Taco's nearby. Lo and Behold Taco Rosa popped up and it was close by. It's located behind Merriman's Restaurant in a little strip type mall. It is a small, clean and colorful storefront with Pau Pizza next door and I believe sharing some of the kitchen facilities. It was sprinkling a bit so it was relatively quiet. The menu itself is focused on tacos and a few other things. Not pinto beans only black beans. That was a little disappointing but not a deal breaker. Also, no carnita meat... WHAT? So I asked the friendly person behind the counter his recommendation and he said the beef verde taco's. There are a few tables outside and a larger covered seating area behind the building. Shorty wait and my taco's arrived. Very delicious. The sauce was really great, the black beans were very good and the rice was also very good. The only negative I have is it is a bit pricy. 2 taco's with a small amount of rice and beans for $14. While not outrageous, I think three taco's for that price would have felt more realistic. The food was fresh though and well seasoned. Funny side note. I order my taco's without cilantro or raw onions as I just can't eat either. I could here the chef say when the order arrived in the kitchen..." 2 taco's no joy" haha. I thought that was funny. The Good: Clean, friendly service, fresh delicious taco's The Bad: A bit pricy and no carnita meat or pinot beans (no deal breakers) Chances I'll be back: YES! when I visit Waimea this is my new go to taco place. Don't come here if you're not a local. Super rude cashier taking our order. Looked at us like we had 10 heads when we asked if they have chips and salsa. Sorry every taco spot I've ever been to does. She could have been polite and said unfortunately no we don't carry that but she chose to be rude about it and responded in an unfriendly tone. We also asked for to go utensils and she just points. Just a real rude person. Probably should have someone with a little friendlier personality talking to your customers. Food wasn't that bad. I love this place so much and was so surprised to find real tacos in Hawai'i! The tortillas are nixtamal and homemade. The carnitas is a gift from the gods. I enjoyed the sambal chicken and the potato taco as well. The Keiki quesadilla I can eat all day, everyday with toasted cheese on the outside and melted cheese on the inside--yum!! We stopped at this small place after the great Midweek Farmers Market in Kamuela. We both ordered combo plates to go. I had the pork and teriyaki tacos; my partner had the chicken and pork. Comes with delicious rice and beans. The tacos were sooooo delicious, fresh, and juicy. Great meat with what seemed like homemade sauce and spices. All 4 tacos were homeruns. The service provided by the young lady at the counter was very poor. They don't serve you and everything is take out but the young lady will ask for a tip. The quality of the food was also poor and flies were in the rice and bean containers which were served to several customers ahead of me. After picking up my order I saw the preparation area which was not clean and I will not return to this restaurant. Additionally, beverages were stacked by the door but not in the refrigerator so you can enjoy a hot bottle of coca-cola if you would like. Don't be underwhelmed by the quaint size of this establishment. Immediately when you walk in, the atmosphere is that of a Mexican street. These tacos are better than anything I have had in San Francisco. These guys are banging out these tacos and they sell out every day! The authentic, thick tortillas are the base of these mouth watering tacos. Can't decide which one to get? Get them all! The meat is tender, juicy, and full of spices and flavor. The vegetarian option will not disappoint. On top of that, the rice and beans are full of flavor. If you are feeling thirsty, the drink selection is unreal! Grab a jalapeño margarita, or a refreshing brew. I went there 3 times on my vacation because I could not get enough. I was fortunate enough to meet the main chef, Victor Moreno. Such a surprising gem in Waimea! We were vacationing on the big island and went out of our way multiple times to get tacos and burritos from Taco Rosa. The food here is AMAZING, they use extremely high quality ingredients and you can taste the attention to detail.
