Almost immediately, the queso hit the table. The salsa was out of this world good. I seriously almost ordered a pint to go, it was so good. Not hot at all, but rich with tomato flavors and subtle heat and spices. The queso was thin, and stayed workable throughout the meal, which is a huge plus for me. Flavorwise, it was slightly rich, very Monetery Jack flavored with noticeable hints of jalapeno. Great queso. My entree hit the table quickly, while I was still face deep in queso and chips. Beatifully plated, I hoped the taste lived up to the appearance.... and it did. While it was all good, surprisingly the rice turned out to be the unexpected star. It takes effort to make a simple rice dish standout like this. Light and fluffy, the flavor was borderline intense, for rice. It had a hearty undertone that I couldn't place, but I loved it. A lot. Nothing but rice... no corn, no peas, no nonsense, no kidding. The Chile Verde was outstanding. Probably one of the top three I've had in the area. Not sure if they slow cooked the pork with the sauce like is proper, but if I can't tell, then I'm not gonna care. The meat was properly shredded, tender and moist, and full of both meaty and saucy flavor. The beans were also really well done. Well colored (not gray), and with some noticable flavoring in the chile powder spectrum, I dipped chips into them until they were gone. Overall, nothing about my experience was less than great. My server was amenable enough, but didn't really engage in any interaction. No issues there, just a difference in styles, that didn't detract at all. With the queso and an iced tea, the bill was just over $22, and for what I got, I came away quite satisfied.

Our server, Caley, was particularly warm and friendly. She gave us more than outstanding service. We tried Chimmi's today because they're on the Southwest Airlines Rapid Rewards list. We get 3 points instead of 1 for every dollar spent. We are trying to get another companion pass so this is a good incentive to get Southwest customers to try the restaurant. Last time, Dan got a lunch chicken enchilada and substituted tomatillo sauce for ranchero sauce. Their tomatillo sauce is good but not worth the substitution charge so this time he got a wet burrito, which he didn't like. It was filled with too much rice. It is a large, very large crunchy flour tortilla grilled to a slight char. You can smell, see, and taste the char of the flour tortilla. Yes, on purpose. This one filled an 18" aluminum pizza pan. The charred tortilla was covered with refried black beans, sliced cabbage, avocado, tomato slices, and a grilled serrano. Mine ordered with chopped grilled chicken. It was also supposed to have, Oaxaca cheese, carrot and onion; all missing! Something went wrong in the kitchen..... This the lightest, healthiest Mexican dish I have ever had. As you would expect, light, healthy means bland. And it was. The missing ingredients made it even blander. Salsa to the rescue! Indios Verdes has very good salsa. The tasty red that comes with the chips, and the plastic squirt bottles of red and green that are a staple of authentic Mexican restaurants. A liberal application of all, was necessary to give my taste buds something to do. Not a top choice for a diner with a palate tuned for OkieMex. You don't know until you try it! Now you know! My wife went with the Wet Burrito. A large flour tortilla filled with beans, rice, steak and oddly, lettuce; not mentioned on the menu. The very grislily chopped steak was unseasoned. Tasteless and chewy. Except for the very good authentic red sauce, the burrito was disappointing. So much so, that my wife gave up on the burrito to help me with my salsa covered Tlayudas. The service was excellent. Only one friendly young lady with a beautiful smile was doing everything; cooking and serving us while prepping ingredients for the restaurant's evening dinner meal. Her other duties may have contributed to the missing ingredients on the Tlayuda. Next time your cousin from California starts shooting their mouth off about their "Authentic Cali Mexican Food" just ask them, "What's the biggest Tlayuda that they have ever had?"
