Then came my favorite thing of the entire meal: the birria ramen. The noodles had that perfect bouncy chew, the egg was cooked beautifully, and the broth somehow found the sweet spot between traditional ramen and rich Mexican birria. It didn't taste like someone simply dumped birria into a bowl of noodles and called it fusion--it actually worked. The chicken mole enchiladas were enjoyable, but didn't execute that traditional flavor coming across a bit bland and lackluster. I also assumed there would be cheese inside with the chicken, and there wasn't. That's on me! Next time I'm asking for cheese because I think that would've made a huge difference. And finally, the molcajete arrived. Loaded with grilled meats, seafood, vegetables and fresh cactus, it was extraordinary. So many different flavors and textures packed into one dish, and the cactus was especially good. Definitely one of the highlights of the meal. We asked them to fix it or redo the order and the cashier said all we are gonna do is add pineapple and then charge you 15.00. (Obviously the order was keyed in incorrectly). We said no, we will take it as is. They issued a credit for our trouble. Then the "new order of loaded fries" came out WITH AIOLI!!. Gross! They went into the garbage, and we left. VERY POOR CUSTOMER SERVICE. So it cost $44 to get one order that was correct and that we split and enjoyed. Side note... After placing our order, we watched multiple guests place their orders, receive their orders and for the 3 that were to stay 2 of them (1 family of 4 and one party of 3), sat, ate their meals and left before we got our food.
