Oh man, this food truck is FANTASTIC! My husband and I flew in from Las Vegas and went straight here from the airport. We were quite hungry at this point, and everything looked so delicious that it was challenging to order since we wanted to try everything! We ended up starting with the Persian Cherry Drink, which reminded us of an upgraded Capri Sun - def took us back to our childhood days! We also got the Pineapple Watermelon Juice, and it was so refreshing and crisp - it was like biting into a ripened watermelon and not needing to chew, haha! For food, we shared the Persian Fries, which were so darn delicious. We definitely appreciated the layering of flavors, and everything complimented each other. Totally unexpected, and totally yum! My husband ordered the Crunch Wrap, and his description was that it reminded him of a Taco Bell Crunch Wrap, but with waaaayy better quality ingredients and tasted far superior. He's also a vegetarian (was Omni most of his life), and he said he'd have no clue the ingredients were entirely vegan. He also mentioned that the hot sauce truly is hot, and def added to the dish. Two thumbs way up from him! I went for the Crispy Chick'n Sandwich, and it's not something I would typically order, but man...it just looked so darn good...and it exceeded my expectations! All the ingredients perfectly balanced out each other. The Chick'n was juicy and cooked on par, the pickles added a great crunch with the housemade honey mustard and housemade ranch give just enough flavor without overpowering anything, and that fluffy pretzel bun... Yeah. I was sad to take my last bite. As for the customer service experience, Tabay is such a sweet soul! Every interaction with him showcased a genuine smile, and he made us feel very welcomed! He even walked our order to us and delivered it by hand - that's atypical by Las Vegas food truck standards, and it made us feel cared for and well-taken care of. We definitely plan on stopping by here at least one more time before the end of our trip. We've gotta try some of the other amazing menu items! Coming from people who live in a touristy, customer-service driven town, we were wowed by our experience here. Don't sleep on this gem. Just go! read more

I have been missing a proper vegan/vegetarian food truck! Upon walking into the food trucks at Costco, Tabay greeted me and I went up to him to get a menu. Didn't know they've been open since July! I was excited seeing the options-there is quite a lot, I had a hard time choosing! I had a craving for something spicy so I got the Spicy Chik'n Sandwich, and also wanted hash browns (happy to say they serve breakfast all day!). I also wanted to see what drinks they had, so I ordered the Pineapple Watermelon Juice. I love a good saucy sandwich, so I was glad to see the patty covered in it! It was such a great comfort sandwich, and the pickled jalapeño added a sweetness to it! Hash brown was warm and crispy, and the pineapple watermelon juice was very refreshing! As someone whose spice tolerance is low, it was perfect for me-a nice build up as I ate. Tabay was wonderful and he checked on us at our table to see how the food was. Everything was amazing, and I was super satisfied. I definitely will be returning soon! :) read more

I enjoyed the Mexican Pizza at Tabay's Mindful Kitchen food truck. It was a generous portion and a wonderful combination of flavors. I recommend using a fork because it is packed full. It was fun to eat in two layers because the top and bottom layers separate in a good way. The best part was the texture of the crust. It was browned perfectly and had a light and crunchy texture. I have enjoyed their food every time I've visited. read more

5 Stars!!! Soooo good. My wife and I are not vegan but Tabay's impressed us greatly. The food was so tasty. My wife got the Persian Kabob Wrap and I got the Mexican Pizza. The Kabob Wrap had wonderful seasoning and flavors that took her back to when her dad would make kabob. The Mexican Pizza was delicious with the perfect crispy and flakey crust. I added guacamole and pickled jalapeño peppers and it was amazing. We both couldn't believe it was Vegan. To top it all off, meeting Tabay and his mom Sahel is one of our highlights of our trip to Maui. Both are infectious, kind, and great people. Sahel's Cordon Bleu training and Tabay's two Culinary school degrees show in the wonderful creations. They both have a passion for delicious healthy eating. You must meet them. The food truck is parked next to Costco in a food truck park. Easy to get to and great parking. They also have one of the largest menu's I have seen in a food truck. You will be impressed when you see the menu. We highly recommend Tabay's Mindful Kitchen. You will not be disappointed. Tabay, wish you the best and great success. I see a popular restaurant in your future! read more

Delicious vegan food! We first learned about this vegan food truck last year when we stopped by for lunch, as we were staying next door at the Courtyard by Marriott. We just got married at Baldwin Beach- Maui is amazing and such a beautiful place to be in! Visiting Tabay's Mindful Kitchen was the best decision I made. I couldn't believe how tasty the food is! So flavorful and fresh! I've had vegan food before (being a native Chicagoan) and nothing compares to this vegan food! 1 year later, we are back, and celebrating our 1 year anniversary. I guess we just can't resist coming back for more! My favorites are the Mexican Pizza, Human Style Fries and the Baja Fish Tacos! Oh and Loco Moco was also delicious! Don't take my word for it, just come by their food truck and try something. You won't be disappointed! Since we visit Maui every year around September, we will be back again next year, God willing. If only they had a location in Illinois! :-) read more

After missing a flight with my wife, two young sons, and mother-in-law, we stumbled upon this gem next to the Courtyard Marriott. The food blew me away! I had the Persian Burger and cherry drink, thanks to a very attentive and informative walkthrough of the menu by Tabay and his mother. I'm a meat eater, and I was genuinely surprised the meal was completely vegan -- it was packed with flavor and not gimmicky at all (which, unfortunately, I've experienced before due to my wife's lifelong vegetarian diet). The service was just as amazing as the food. Tabay and his mother are incredibly kind people, and their passion really shows. If I were a Maui local, I'd be a regular without a doubt. I'll definitely be seeking them out again when I return to Maui -- hopefully in the very near future! read more

Found the most incredible vegan food in Maui! I got the fish tacos, breakfast sandwich, chicken nuggets, chicken wrap and chimichangas. Everything was beyond delicious and my non-vegan family couldn't tell the difference haha..that's how you KNOW it's great vegan food. I got to meet Tabay and he was such a bright light with amazing/kind energy. I got to meet Sahel after coming back and she is SO sweet too! She makes one of the best hot sauces I've ever tried!! It had the perfect heat level with SO much flavor!! I found out I can pre-order a bottle of it so I'll be coming back for it as well as more food read more

Saw a friend of mine post about Tabay's food truck on IG. Living close by we went to try the food on their opening day event. I'm not a vegan but I really enjoy vegan food. We got couple of burgers and a fries to share. The big stack burger is quite decent in size, I ate half of it and I was full. I'd love to go back and try other dishes, especially the breakfast. I saw Tabay's on social media and couldn't wait to try them out. I took my lady friend to the Laguna Hills Vegan event and there they were. We opted for the Sunrise sandwich, and the breakfast burrito. Both were cut in half so we could share them. I'm new to Vegan food but am really having fun eating Vegan and doing Happy Cow reviews. Both my lady friend and I loved our food. I thought everything tasted like it was really made from animal product. It shows how Vegan food has changed. Their menu is incredible. They have burgers, dogs, tacos ,wraps, fish, chicken, soft serve ice cream, and more. We both agree that we want to try everything on the menu. I hope they can make it to the Santa Ana Vegan fair. I'd even like to see my work book them when we have food trucks. I know everyone will love the food. read more

Tabay's Mindful Kitchen is a plant based delight for your senses! I had eaten there before and was a fan, so when I heard the Food Truck was being relocated to Montana, I knew I had to take my mother and niece there to have one last taste! Tabay and his mother, Sahel, are true ambassadors of legendary Persian hospitality. Even though TMK is a food truck located in the Kahului Food Pod, the two of them greet you like a guest in their home! Sahel is all smiles and 100% focused on the craft of preparing savory plant based culinary adventures for guests. Tabay himself often hand delivers your order to the table with a larger than life smile and persona! What originally peaked my interest, were the raving reviews of the Persian burger. It tastes like authentic Persian kabob without the meat! Adorned with cucumber yogurt sauce, sumac, pickles, sweet onion and a toasted bun, the symphony of flavours will be something your taste buds won't soon forget. The chicken sandwich with a crispy crust and delightful special sauce will leave you satisfied in a way on par with any other standout chicken or mock chicken sandwich you may have enjoyed elsewhere. Reminiscent of true Persian flavours and hospitality, the "TMK Experience," is truly one-of-a-kind. Bozeman, Montana you're in for a treat having such unique and tasty plant based options coming your way! Best wishes and a hui hou (until we meet again)! read more

Delicious array of food offerings, from Persian to classic American (burgers, chickn sandwich, fishy taco) to Tex Mex AND soft serve. The Persian burger is my favorite - so flavorful and homemade with whole food ingredients. Best yet - their menu is entirely plant based. The drinks are refreshing and sweetened just right. This place hit the spot on a hot Kahului summer day. Tabay and his family that run the truck are the nicest people and made an effort to remember us when we came back! They're located in the food truck across the food court side of Costco (not the food truck lot by the Costco gas). There's just enough parking in the adjacent lot. read more

I highly recommend this place if you are vegan, plant based, even if you're not! ( my partner loves meat) Tabay and Sahel made us feel like we had a family here away from home, such pure hearts. This food is exceptional and it is clear that it is made with love. Don't let the fact that it is plant based scare you into thinking that all they serve is lettuce. The fish tacos were out of this world good and my wife loved the Mexican pizza. If you're looking for an extra treat, and want to splurge a little the fried Oreo is absolutely delicious. Wow, just wow! I am not a vegan, but everything I tried was delicious! The menu has many different options for everyone. They also made us their new menu item to try, which is a Persian potato patty and it was delicious! We also got the Persian cherry drink and it was so good!
