I've heard about this vegan food truck and couldn't wait to try it. I met Tabay at a networking event where I tried his Persian veggie burger. Ono! Had to find that food truck pronto!! In Kahului, across from Costco are several different areas with food trucks. Go to the one closest to the Marriott hotel and look for the bright, orange food truck. Omg, I couldn't believe how many choices there are!!! A vegan heaven !!! (The menu online doesn't show everything he offers.) I ended up ordering Mexican grilled wrap. (Not sure of name). It was HUGE!!!!! And had left overs for another day. The to go box even had a hand-written note in it. (Love is in the details.) And Tabay even delivered it himself. It's always great to find new vegan stops and Tabay's Mindful Kitchen was an EPIC find after a 12 hour day on the Road to Hana. We just made it to Tabay's about 30 minutes prior to closing and were warmly welcomed by Tabay with his big smile and positive energy! His truck is fun and was impressed with his great marketing and graphic work on his truck. Opening the menu was one after another thoughts of "Wow that sounds great"... "and so does that". After some contemplation and Tabay giving some feedback i landed on the BBQ Burger topped with onions rings. I had to add in the order of Buffalo Wings and an iced cold Lavender Lemonade. My family tried a wide range of different menu items like Buffalo Chik sandwich, Fish Tacos, and much much more. So let me jump right in and saw Oh My goodness... this was a massive surprise and everything we had was absolutely mind blowing. Now full disclosure. We are from Chicago and our entire family ( including 4 boys) have been vegetarian and spoiled with some of the best restaurants on the planet. Tabay's Mindful Kitchen literally just ranked to the top of my list. From the cute food court, clean kitchen, and infectious positivity I would fly back to Maui just for another visit to Tabay's! Oh man, this food truck is FANTASTIC! My husband and I flew in from Las Vegas and went straight here from the airport. We were quite hungry at this point, and everything looked so delicious that it was challenging to order since we wanted to try everything! We ended up starting with the Persian Cherry Drink, which reminded us of an upgraded Capri Sun - def took us back to our childhood days! We also got the Pineapple Watermelon Juice, and it was so refreshing and crisp - it was like biting into a ripened watermelon and not needing to chew, haha! For food, we shared the Persian Fries, which were so darn delicious. We definitely appreciated the layering of flavors, and everything complimented each other. Totally unexpected, and totally yum! My husband ordered the Crunch Wrap, and his description was that it reminded him of a Taco Bell Crunch Wrap, but with waaaayy better quality ingredients and tasted far superior. He's also a vegetarian (was Omni most of his life), and he said he'd have no clue the ingredients were entirely vegan. He also mentioned that the hot sauce truly is hot, and def added to the dish. Two thumbs way up from him! I went for the Crispy Chick'n Sandwich, and it's not something I would typically order, but man...it just looked so darn good...and it exceeded my expectations! All the ingredients perfectly balanced out each other. The Chick'n was juicy and cooked on par, the pickles added a great crunch with the housemade honey mustard and housemade ranch give just enough flavor without overpowering anything, and that fluffy pretzel bun... Yeah. I was sad to take my last bite. As for the customer service experience, Tabay is such a sweet soul! Every interaction with him showcased a genuine smile, and he made us feel very welcomed! He even walked our order to us and delivered it by hand - that's atypical by Las Vegas food truck standards, and it made us feel cared for and well-taken care of. We definitely plan on stopping by here at least one more time before the end of our trip. We've gotta try some of the other amazing menu items! I have been missing a proper vegan/vegetarian food truck! Upon walking into the food trucks at Costco, Tabay greeted me and I went up to him to get a menu. Didn't know they've been open since July! I was excited seeing the options-there is quite a lot, I had a hard time choosing! I had a craving for something spicy so I got the Spicy Chik'n Sandwich, and also wanted hash browns (happy to say they serve breakfast all day!). I also wanted to see what drinks they had, so I ordered the Pineapple Watermelon Juice. I love a good saucy sandwich, so I was glad to see the patty covered in it! It was such a great comfort sandwich, and the pickled jalapeño added a sweetness to it! Hash brown was warm and crispy, and the pineapple watermelon juice was very refreshing! As someone whose spice tolerance is low, it was perfect for me-a nice build up as I ate. Tabay was wonderful and he checked on us at our table to see how the food was. Delicious vegan food! We first learned about this vegan food truck last year when we stopped by for lunch, as we were staying next door at the Courtyard by Marriott. We just got married at Baldwin Beach- Maui is amazing and such a beautiful place to be in! Visiting Tabay's Mindful Kitchen was the best decision I made. I couldn't believe how tasty the food is! So flavorful and fresh! I've had vegan food before (being a native Chicagoan) and nothing compares to this vegan food! 1 year later, we are back, and celebrating our 1 year anniversary. I guess we just can't resist coming back for more! My favorites are the Mexican Pizza, Human Style Fries and the Baja Fish Tacos! Oh and Loco Moco was also delicious! 5 Stars!!! Soooo good. My wife and I are not vegan but Tabay's impressed us greatly. The food was so tasty. My wife got the Persian Kabob Wrap and I got the Mexican Pizza. The Kabob Wrap had wonderful seasoning and flavors that took her back to when her dad would make kabob. The Mexican Pizza was delicious with the perfect crispy and flakey crust. I added guacamole and pickled jalapeño peppers and it was amazing. We both couldn't believe it was Vegan. To top it all off, meeting Tabay and his mom Sahel is one of our highlights of our trip to Maui. Both are infectious, kind, and great people. Sahel's Cordon Bleu training and Tabay's two Culinary school degrees show in the wonderful creations. They both have a passion for delicious healthy eating. You must meet them. The food truck is parked next to Costco in a food truck park. Easy to get to and great parking. They also have one of the largest menu's I have seen in a food truck. Found the most incredible vegan food in Maui! I got the fish tacos, breakfast sandwich, chicken nuggets, chicken wrap and chimichangas. Everything was beyond delicious and my non-vegan family couldn't tell the difference haha..that's how you KNOW it's great vegan food.
