My girlfriend took me to Sybaris for my birthday last night. I had been previously at their old location and did not particularly like the food. I've 100% changed my mind. First we arrived 20-30min prior to our reservation. The lady at the front was sooo friendly I was taken back! We asked if we could sit at the bar and get a drink. Of course she said yes. The bar is super cute and I love the hours off-set the restaurant hours so you can enjoy drinks prior to and after dinner. The bar tender was super friendly and you can see he enjoyed his job. The drinks were really good! Our friendly greater came to get us promptly when our table was ready. The table was ready with fresh baked bread and butter. Our waiter was Jessie; what a gem! He was so friendly and helped us with the menu and gave excellent recommendations. We started off with the bar fries (Jessie's recommendation) wow! They were amazing not super heavy and a perfect starter. I had the special which was a NY steak, with Hatch Chili polenta. My steak was perfection and the polenta was delicious. I loved the gravy as well. Superb blend of flavors. We ended the night with the flourless chocolate cake and espresso martini. The atmosphere was very ambient. It brought me back to my childhood. The waiter was very patient. He performed lots of waiting during our time. The food was good too. There were so much many options that they served us paper lists with descriptions to help us decide. We were pleased to find that utensils and dishes were included in the bill, there was no separate fee. I was very pleased with the beef cheeks. From the moment you reach the entrance you are stepping into a wonderful dining experience. The attention to the detail that makes a difference from an ordinary dining experience and a special one is evident here. from the gas lanterns and twinkle lights at the entrance to the tea lights at the table, the ambience is really nice. the butter is served on little black stones, the bill is brought to you in a beautiful cigar box, the fireplace with candles, the long drapes on the windows giving you the feeling you dining in a beautiful mansion, and the music of the era playing in the background all make this place special. the food was cooked to perfection and the service was exceptional. even the restrooms are works of art! This was our first time here and we came for a special occasion. Based on the reviews, I thought it would be great but we left very disappointed. The tomato appetizer that everyone seemed to rave about was ho hum and several of the sliced tomatoes were already mealy. We left it half uneaten. Entrees were another problem. The steak was over-marinated, so it became mushy even though apparently grill marks were attempted. The fish was poached, which can be good, but it arrived cold & was un-appetizing. It came with seasonal succotash underneath the fish but that was grayish, lumpy & also cold, so it was scraped to the side. Most was left uneaten & when offered to have it boxed up, we declined. I know there are not a lot of options in Albany for "fine dining" but this place is not worth the prices they charge. read more

I am so conflicted about this place and definitely will go back and try it two or three more times in hopes that tonight was a miss. First the positive we arrived and were greeted promptly by a very friendly hostess. She let us know we could sit in the bar and have drinks and appetizers while waiting for our table to be ready in the main dining room. I like that style of attentiveness. The drinks offered on the cocktail list are a solid variety and the names are organized to lend to the theme that you're eating in an old train depot. I liked that. What I did not like is that the bar program is not sophisticated enough to make really any off menu items. For appetizers, we ordered the chicken taurine. We all agreed this was the best bite of the night. It was complicated and textured and very well thought out. The other appetizer we ordered was "chilled ahi rillettes". Just knock off the fancy name and let people know that what you're getting is an $11 scoop of bland tunafish salad and a few store-bought crackers all of which is a huge skip. The wine pairings with dinner were appropriate and tasty. The real problems occurred with the main entrées. Two of us ordered the rockfish and both felt the fish was poor quality. The sauces were over salted and bland and the rice it came on was a mealy mush. I don't know what happened, but this dish is bad and shouldn't be on the menu. The other dish ordered at the table was the scallops which my friend said was "fine". Hmm just fine, ok. The shiny star of the night was our server Jesse, but of course everybody in Albany loves Jesse. I will go back and recommend you try this place at least once to form your own opinion. read more

My husband and I had the absolute pleasure of trying Sybaris today. We had not planned ahead and hoped for the best. We were so excited to be able to be dine without a reservation! The lamb with chimichurri sauce and tapenade was absolutely amazing!!! The wine pairing suggested was perfect! Jesse did a fantastic job throughout the meal. He warned there were reservations we could be worked into and we reassured that we could be patient, but we felt very well attended to at all points. The roulade appetizer was wonderful! Sybaris is another hidden gem of Albany. Menu is seasonal and has a rotation that does not overextends the kitchen. Great portions and super tasty options. The secret star was the sauces. From the appetizer, entree, to dessert, the sauces continued to wow. Just elevated each dish. The service was exceptional. Friendly, great recommendations, and made the evening. Crab cakes with lobster bisque (hit). Mom's Apple cake ( brandy butter sauce) are a must. This place is spacious. Great for small or large gatherings. Street parking. Thank me later. read more

Impeccable service from Sean our server. He knew exactly how each dish was prepared, was unobtrusive but friendly, made us feel like we were special guests, brought us extra butter before we even asked, and water was readily refilled. The restaurant is spacious so you don't have to hear other dining groups' conversation. The food was well thought out, beautifully presented, bread was warm, flavors were creative. Peanut sauce appetizer, chilled watercress soup, pan-fried sole, Mom's graduation dessert, all so delicious! Wonderful food and top-notch service. And while there are some very good, nice restaurants in Corvallis and Albany that we also enjoy, the service at Sybaris puts it at the top. My husband and I ate at Sybaris last Tuesday. Love love love the duck liver mousse followed by the Jamaican shrimp. We are frequent flyers at Sybaris and try not to miss our monthly treat of going there. The waiter staff is the best (Janel, Jesse, and Mary). We appreciate their suggestions and their wine pairings. Ug highly recommend for a date night. Ug and cavemate celebrate 16 years bonded and they didn't know and we still received the best of service. Very comfortable ambiance. Food was so delicious and portions were bigger than Ug expected. We sat and enjoyed many things over a 3 hour period as after every dish we just wanted to try more and more. Good selection of libations and delicious non alcoholic drinks. The habanero one is a must try if you no drink anymore like Ug. Ask for extra spicy. Ug take dessert to go and enjoy later. Tough experience tonight at Sybaris. I would like to start by saying that the food was very good. We get the opportunity to eat here once or twice a year on special occasions and have done so for the past 16 years. It is always a big deal for me when I get to tell my wife that we are going to Sybaris. Tonight was going to be even more memorable because we brought our daughter along to celebrate Mother's Day. Our problem began when we ran into traffic and were 15 minutes late. At the door, our waiter informed us that the restaurant seats people every half hour. I apologized and we were seated. If I had known what was coming I would have turned around at the door and left. What followed was two hours of some of the rudest service I have ever experienced. I spent much of my youth working in restaurants in Upstate NY. I know that customers can be a pain in the ass sometimes, but our only mistake was that we were 15 minutes late. We spent the whole meal being polite while this guy continuously made us feel uncomfortable. It's difficult to describe the way this guy was acting. The food came out and it was good, but the waiter was coming off like wise ass. At the end of the meal there were hardly any people in the restaurant. The waiter gave me the bill then waited 15 minutes to pick up my card. I guess he got his satisfaction. If there was any doubt about his intentions, when we were getting ready to leave, he kept asking me if I wanted more water. That's an asshat move. Much to my wife's dismay, I tipped him fair because that's just what you do. My daughter gained a learning experience on the nature of jerks so I suppose that's something, but overall it was a sad twist on what was supposed to be a grand event. Of course we can't ever come back, but please take this information and remind your staff that they are a big part of the dinning experience. read more

I am a native of Albany OR (born in Corvallis in 1956), so I have seen 70 years worth of dining establishments in the mid-Valley. I moved away from Albany at 20 and also have had the fortune to travel the world through my adult life. I can honestly say that no restaurant I have ever experienced is better than Sybaris in its entirety: convenience, setting, ambience, personal attention to detail, food quality and variety, and price. Gables in Corvallis was the old high quality special place in the past, but it closed in 2008. Sybaris compares well, if not is better. I have had dinner at Sybaris maybe 25 times in the past 20 years visiting family. I have never been disappointed, unless it was so busy we had to wait an hour or two to get a table. The fact Sybaris has survived in downtown Albany (not a thriving business district) is a testament to the restaurant's quality. 5 stars are not enough, but all that I can give. read more

My family of 6 had dinner last night and I would say it was about the worst expensive meal I have ever had. The server was lovely and sweet but that did not begin to make up for the awful food. The bread on the table was cold, served with butter served on small rocks, which could be cute, but with cold and somewhat stale bread should have been a warning of what we were in for. One person at the table had a martini (meh) but the other spicy cocktail was delicious. Wine was served too warm, warmer than room temp and while the wine itself was tasty, a restaurant this price range should know what temperature to store and serve wine. I had the lamb, which was over cooked but at least edible. The vegetables served with it were cold and unseasoned. My partner had the osso bucco - how they could call what they put on that plate osso bucco is beyond me. It was completely inedible. Dry as a bone, 100 percent flavorless and without sauce. When the server picked it up and could see that it was completely uneaten, they might have asked if it was ok. The only reason my lamb got eaten is that it was better than the osso bucco and we were seriously hungry. The lamb was served with what was supposed to be Shepard pie - it was NOT that. It was a thin layer of potato over a dish of foul gravy substance with a handful Of arugula tossed on top. Unseasoned, disgusting texture. Another person in our party had the steak. Now I completely understand that when she ordered it medium, the chef probably rolled their eyes but that is in fact how she ordered it, right or wrong, the n it came out closer to Rare and it had to be sent back. In fairness I will say the desserts were delicious. The chicory ice cream was amazing. The port was lovely. The coffee was good. But would I go back? Never. Having the tip automatically added to the bill Was insult to injury. We would have tipped the server well regardless - we were just coming from our Moms celebration of life, no one wanted a scene and the server was lovely. It just was eye rolling lay pretentious and bad. read more

Great food, friendly service, pleasant eclectic atmosphere. This place was everything I hoped that it would be. We were looking for a nice dinner after several days of casual eating while visiting the Albany area. Based on recommendations this seemed like the perfect spot. The menu seems to change on a regular basis depending on what is in season and available to the chef, always a good thing. A nice selection of craft cocktails (as well as the standards) are available. Also a good selection of wines. We started with a fresh selection of local heirloom tomatoes. It was fabulous! My wife enjoyed the lamb meatball and I had the duck. Both were well prepared and tasty. Accompanied by appropriate sides and a glass of wine recommended by the staff. The Chocolate Hazelnut Cake is their signature dessert, and well deserves its reputation. In the Albany area you can't do wrong with a meal here! read more

Came to Sybaris for the Bill Carr Scholarship Fundraiser Dinner and WOW! The food and service was top notch! A special menu fit for the pilgrims of today! Venison terrible, clam fritters, silky squash and roasted pepper soup, butter roasted cod and lobster succotash, duck confit and stuffed pumkin and warm hasty pudding! It was all amazing! I went here for an anniversary dinner and it was phenomenal! The restaurant is cozy but still spaced out well where you can enjoy your own meal without being crammed. They had a huge drink menu and some great nonalcoholic beverage choices as well. Our server was top notch and very enjoyable. He had great recommendations and was very attentive. I had the successful Michigan Hunters mixed grill and it was delicious. My girlfriend had the sturgeon which was also great! We had the apple cake for dessert and loved it. What a satisfying experience. First off, they're working through the Covid thing like everyone else. With that, I mean one glaring thing I've noticed with a lot of businesses is they tend to go overboard, often leaving me feeling like a Leper. This was NOT the case for Sybaris. They've limited tables, have outdoor seating (which is super nice on a good day), and they have a seating arrangement that is limited, but still feels natural. A blast from the past so to speak, like 2019. Lol. Anyway, I took my wife here. The occasion you ask? We found a babysitter, so, "because reasons," as I like the say. We made reservations and arrived on time. Our table was ready and waiting. We had one of the most amazing servers. I wish I remembered her name, but she really created and supported a great experience. Food. Wow! I had the steak, which isn't typical of me. The steak was seasoned well. Unfortunately, it was a bit undercooked. Despite this. It was served over a bed of, essentially very tasty and crispy hash browns. Excellent idea. It was paired with a few asparagus. I do with there was a little more. Other than the undercooked part, it was fantastic and Id still recommend it to the next guest. Wife had the earth day dish. This was great. I thought it tasted fresh, with a bit of earthiness to it, and had a lot of flavors. Excellent idea. We shared a Salmon Cake. It was great and went even better with the bread they serve with the table. I wish they would have had some crostini type options to go with it. Ugh, that would have made it phenomenal. Overall, this restaurant has a dark, romantic setting inside. It was quiet, warm and inviting. The service was a 11/10. The gal we had was outstanding and a true gem to the restaurant. I wish I could remember her name. She was always attentive and drinks were never empty, ever. I digress in saying, come here for a nice date with your significant other.
