This is a YES for me. Wow. I walked by in the evening and it caught my eye, so I made plans to return for brunch the next day. They have a really cool menu where just about anything can be made gluten free and/or vegan. Tons of savory options, which I loved. I ordered online and got a California sandwich on gluten free. It was ready in 20 (on a Saturday too- impressive), and ready to go. The staff are awesome. They had such great energy. There were about 4-5 of them, all working on something, and it was nice to see a properly staffed place where each person was contributing without it feeling too stressful/busy. All good things to say about this place. Great ambiance and pretty artistic and cool place. Don't think there's a cooler way to enjoy waffles. They have both Savory and sweet waffles. I could have tried Savory ones but the only option they had was either with ham or beef - nothing I could eat. The sweet waffles also had some great offerings. We tried black berry one but I was certainly tempted with the Matcha based toppings. Another great aspect about this place is that they can make waffles glutten free and also vegan. You just need to ask. There is no taste different. Bottom-line - super welcoming people, LGBTQ friendly with amazing vibes. PS: Their restroom is pretty tipsy. read more

My 12yo (who hates most foods) and I went here on a whim today. This is a cute place with nice employees, a fairly simple but straightforward menu. The food came out quickly and was delicious, and included a mini dinosaur to be recycled later (see photos). My kid had what was basically a ham and Gouda waffle sandwich - I was dubious due to the inclusion of some aioli, but she ate the entire thing! Visiting from California, my family and I found this place looking for a good breakfast place. It was so good we had to fit in one more visit. We wish there was more than one of these places! They checked of the three main qualities of a great restaurant: 1. Food: You can't go wrong with anything on the menu. The flavors are extremely well though out and the waffles are subtly sweet and crispy. The prices are also very reasonable. 2. Service: The first time we visited the owner and founder himself was taking orders, cooking, and serving. He has created a quirky family like community at Sweet As Waffles. All the employees are super attentive and check on how you are liking it even though it's cafe style. 3. Ambience: The people definitely make this a warm place but on top of that, the decorations are very eccentric and beautiful. As a designer I am impressed with the thought and artistry put into every little part of this place from the food to the decorations. They also sell local artist work as well as adorable merch. What a fun cute spot! My boo and I did a recent Labor Day weekend getaway to Bellingham from Seattle (with dog in tow) and had our holiday brunch at this place. We didn't look up the place before stumbling upon it but I was initially struck by how a place could exist that pretty much served only waffles. After splitting a Canadian Quesadilla and seasonal peaches & cream waffle, I see how Sweet As Waffles earned its popularity. The outdoor seating was perfect for accommodating our dog and when I went inside for the restroom I also got to see the quirky art and merch that made me laugh out loud. What a delightfully quirky concept, and the balance of sweet and savory waffle choices washed down with a cup of tea made for a perfect brunch. Waffles. Not only do they bring back memories of growing up, but also those of shredding it on the slopes, or late night food runs to the dining hall. Sweet as Waffles is a new food truck located at Stemma Brewing, and I'd seen it a couple weeks ago but it was close. Much to my delight, I found myself ordering a waffle for their grand opening today. I opted for a savory one, though had I been in the mood, a sweet one looked pretty good. I ordered the Canadian quesadilla, which had three cheeses, bacon, and arugula sandwiched between two waffles, and I had maple syrup and hot sauce on the side. Is it a quesadilla? No, not really. But I also think that depends on what your definition of quesadilla is; if you're thinking it's a form of a grilled cheese, then the name fits, and besides. It was so delicious, that who cares what you call it? Despite the size looking for a small, there's definitely more than enough food there for a hearty snack. It comes with an itty bitty dinosaur on top, and a friendly face to deliver it to your table. I'm glad there's another food option, and I can't wait to try a sweet waffle. I love that Bellingham promotes diversity in all areas, including in its food trucks. read more

Stopped into Stemma Brewing specifically to try Sweet As Waffles! Waffles and beer, y'all! What could make it any better?!?!? Well, tiny dinosaurs and an otterlope, that's what! We both opted for sweet waffles - a Coconut Cascade, add toasted marshmallows, and a Baker Blast. Both were wonderful and paired nicely with Stemma's Pluitt Porter and Theee Points Berey Smoothie Ale, respectively. The waffles are warm and crispy and not too sweet. The toppings are plentiful without overpowering the waffle. Nicely balanced!! Oh, and each is topped with a tiny dinosaur. (My only question is trying to figure out "who they are as an artist" (h/t American Idol)... how do you tie together "Sweet As Waffles", dinosaurs, and an Otterlope?... inquiring minds want to know!) Just keep making those waffles!!! Stemma is a great venue - nice outdoor space with shade and sun, and a roomy indoor area. Lots of tables to enjoy your waffle (or Mexican delights from Chihuahua). And, of course, Stemma has great beer across the styles as well as a selection of hard seltzers and ciders. And if you need dessert after your waffle, they also have West Coast Pops! read more

Found this sweet treat when I was at Stemma. I ordered Da G.O.A.T from the Sweet As Waffles food truck that was recently been station at Stemma two months ago. Spoke with one of the owner, Graham. Check out their story on their website. Its pretty interesting on how Sweet As Waffles came from an idea of two friends to becoming an actual food truck in Bellingham. The back story is pretty good. Like any happy meal, SAW gives a dino toy with every waffle order. Just be careful you don't nawg on one by mistake. Mine kind of blend it with the greens of my waffle salad, so I almost ate it along with my waffle. I really love the concept of waffles for lunch and sweets, but saying that I was hoping for a more "savory" maybe even meaty option on the savory menubside. I am sure they will fine tune their menu as they continue to grow. My friend mentioned she was surprised they did not have a "chicken and waffle" on their menu being a waffle food truck and all. Been wanting to try this place for a while and I'm so excited I finally did! I split everything with my boyfriend and it was all delicious! We got the mondo sized canadian quesadilla with a side of syrup and hot sauce. It was really good by itself, with syrup, with hot sauce, and even with both syrup and hot sauce mixed together! Savory deliciousness for sure. For the sweet waffle we got the baker blast and added strawberries. It was good but I definitely am more of a savory waffle lover. You also get cute little dinosaurs on your waffles which I think is fun! In ordering, the service was friendly and kind! They asked if it was my first time and helped me in looking at the menu and answered my questions as well as gave me recommendations. They also gave me a punch card!
