I left this meal feeling both impressed and confused, which is probably the most honest review I can give. Let's start with the star of the show: the fried soft-shell crab bao. Good grief, this thing was phenomenal. It may have been the single best item we ordered. The crab was cooked perfectly with a satisfying crunch, the bao was pillowy soft, and they showed admirable restraint with the sauce. Too many places drown everything in mayo and call it creativity. Not here. Every bite was balanced and absolutely delicious. Then there was the pork belly burger, which looked like it was about to become my new favorite burger in Fort Worth. Unfortunately, it never quite got there. The pork belly hadn't rendered enough, making it chewy and difficult to bite through. The beef patty also seemed oddly resistant to being bitten. I shouldn't need the jaw strength of an alligator to eat a burger. My wife ordered the black garlic ramen. She loved the broth and thought the egg was excellent, but the noodles were surprisingly firm and ended up mostly untouched. The kid's meal was probably the easiest win of the night. My son happily devoured the chicken tenders and was thrilled to discover that dessert was included. The Cookie Monster ice cream may have generated more excitement than anything else on the table. Overall, this place feels like a restaurant with some genuinely brilliant ideas and a few execution issues. When they're on, they're REALLY on. That soft-shell crab bao alone is worth the trip. In the mood for a hot bowl of noodle soup on a rainy day, we stopped in for some ramen after seeing they have black garlic tonkotsu which is my favorite. Walking in the interior is bright and spacious and we were welcomed in immediately. There's plenty of seating for small and large parties including counter seating facing the window. I wanted to try everything on the menu including bao buns, round baguette banh mi, burgers, and fun appetizers. The staff member at the counter was very friendly and patient as we browsed the menu. He asked if I wanted my ramen spicy and of course I said yes. I also opted for a pork belly bao bun because I can never resist one. The food came out fairly quickly but it was a light week day dinner crowd. The ramen looked and smelled amazing. The taste? Yes. The chasu was tender and the portion was enough to satisy. The noodles were a nice texture and the broth was rich and flavorful. Loved the toppings that included corn, bamboo, spinach, fried garlic, and two jammy egg halves. I inhaled it. I would definitely come back for another bowl. The pork belly bao bun, which they call sumo sliders, was ok. The bao buns were thicker than what I'm used to but I suppose makes it more filling. This new family-owned Bistro blending Asian dishes with Smash Burgers is a delicious addition to the local food treasures in the Alliance area. The menu is a colorful collision of familiar and unfamiliar, the kind that insists upon being explored. We have tried the Black Garlic Tonkotsu Ramen, rich with ingredients and flavorful. My other half likes hers very spicy and had to ask twice or additional chili oil to bring it up to her level. Fair warning we were charged $1 for each spice level. We also tried the Spicy Miso with corn. Spice level was also relatively mild. The Tokyo Lights and Shroom Burgers are both outstanding. The bottom of the bun is slightly toasted, which helps hold the ingredients. Both have complexity, making each bite slightly different. Of the two, the Shroom Burger pulls slightly ahead for me. The burger itself was not enough for me, so I added Cajun curly friends once, and the sweet potato waffle fries another. Both were good, not great. I would have liked them slightly less cooked. The only reason I'm not giving five stars is the prices seem a bit high. Each add on costs something and there are no combos. So A burger and dries will be $15-$17 or more. The Bao Bun sandwiches are delicious, utilizing a steam-cooked bun stuffed with ingredients. Though not enough for a meal, they are worth a try for sure. I recommend a couple as shareables. If you're reading this in November 2024, they are offering 20% discount on the ticket until their grand opening. Highly worth a trip! read more

This place was previously Char'd Kitchen. I'm so glad they have a Vietnamese-Japanese fusion eatery now. First off, I really miss the popcorn chicken from a good boba place. I haven't really found a favorite in Fort Worth yet. The popcorn chicken looks on the paler side, but don't be deceived. Once you bite into them, they're so delicious! I usually eat steamed bun with my Peking duck, but this takes it to another level. The sumo's butter bun was so fluffy and soft. I would definitely save stomach room for something under that category. If you're a fan of banh mi, I would get the VN grilled pork baguette bun. It's a good size, but not as large are your typical banh mi. There are plenty of seating inside. They make their food fresh, so there may be a little bit of a wait after you order. I placed an online order for the VN grilled pork, one of the pork belly bao, and the garlic butter pan ramen, and unfortunately the experience was really disappointing. The cucumbers were spoiled and gave everything an off taste. I tried removing them hoping it would help, but the pork itself was still terrible. It didn't look grilled, was extremely tough to chew, and had a strange taste that honestly made me question whether it was overcooked or undercooked. I ended up throwing it away because it completely grossed me out. The only thing that was somewhat okay was the ramen, but even that is not something I would order again. I'm not sure if it was just an off day or an issue with the cook, but the food quality was really bad. The cucumbers especially need to be checked because they literally tasted spoiled. read more

If you've had Bao, and Ramen before...unfortunately Sumo Smash does not fit the bill. I was excited to try it, but overall the flavor profiles were weak; seemingly tempered for a bland palette lacking depth, and the value was poor. Bao - The buns themselves were very plump, thick. They were tasty. However the actual contents were poorly flavored. Example, shrimp were miniscule and the spice profiles was clearly...tobasco. That's the hot sauce they also had by the soda fountain. It's an Asian place....wth?! no Sriracha? Chicken had a good flavor. Soft shell crab tasted like fryer oil. Ramen - felt like they didn't make their own broths; chilli oil was not "spicy". Very little flavor depth. The pork belly was decent but incredibly thin slices. If youre looking for an authentic taste this place is going to absolutely disappoint you. Even Jinya a National chain tastes better. Hope they realize that they don't need to replace western flavors to attract locals. We need the real stuff. read more

Sumo Smash in the Alliance area has been open for two weeks, and wow, we're definitely going back! There are a lot of modern twists to vietnamese classics, which I absolutely love! The VN grilled pork baguette bun looks like a sandwich bun but tastes like a crispy banh mi. And let's not forget the loaded smashed baguette which has mayo, pork floss, Chinese sausage, and the iconic sweet and spicy chin su sauce. Yum-my! We also got the suMo...zzerella, spiral fries (had amazing salt and pepper with grated parmasan on top!), the lemon grass tofu sumo slider, the shrimp katsu baguette bun, the sumo pro, and the k pepper cheesesteak. The ice cream looks like a collaboration with Sugar Crush, we tried the matcha and banana pudding. Everything had great flavor and texture. I stopped in here after being at the UPS store next door because I saw that they were had just opened. They weren't super busy when I came in at 4:30pm on a Thursday but the staff were so friendly. I had the pork belly bao, but unfortunately, the dough in half of the bun was raw and runny. The pork had pretty good flavor but was a bit chewy. I also had the black garlic tonkatsu ramen. A couple of my neighbors and I have been wanting to try Sumo Smash, based on the reviews we've all read. So I offered to pick up some items (to go) so we could give this place a try (note - we live about 7 minutes from the restaurant). [[HIGHLIGHT]]The first thing I noticed was how sticky the entire floor in the dining room was and that some of the tables hadn't been wiped down. Not the best first impression.[[ENDHIGHLIGHT]] The associate at the register was friendly and engaging, but he was pushing the sale of some boxed snacks they were selling too hard (almost pushy, like a car salesman). What was ordered - neighbor 1: pork belly slider and a side order of potstickers / neighbor 2: Chicken tenders plate (came with curly fries and a side of slaw), selected the Sumo Sauce (had an option of ranch or a honey mustard as well) / I ordered the spicy miso ramen (regular spicy). Our thoughts about the 3 different orders: 1. Neighbor 1 - Unfortunately, the bao bun became soggy and completely fell apart. While the flavor of the slider was good, it was very difficult to eat, was extremely messy, and the soggy bao bun was a bit more unappetizing for her. The potstickers were just okay, she said. The order she received seemed to be a bit overcooked - she said they tasted a bit burned. This was a fail for her. 2. Neighbor 2 - in the short timeframe it took me to drive from the restaurant to my home the breading on the tenders and the fries became soggy. He thinks neither were cooked enough, and because they weren't crispy before being packed everything became limp. He said the Sumo sauce was basically spicy mayo. His verdict - so-so, but very disappointed that neither the tenders or fries held up. 3. My order - First, I LOVE a good spicy miso ramen (it's usually my go-to ramen order when I order this) and I am a fan of spicy foods. However, I didn't detect any miso flavor in the broth and the amount of chili crisp that was added to my soup was so overpowering it masked the flavors of the rest of the ingredients. The ramen noodles were decent, and I liked the fresh spinach and the types of vegetables included with the pork belly (which was listed as Char siu pork, but it was definitely NOT char siu in flavor). I wish there had been just a bit more of the vegetables. I wasn't about to pay an additional $1.50 for a couple of extra leaves of spinach. It was okay, but I've had spicy miso ramen at other restaurants that I prefer more. Sadly, we all kind of agreed that this was a disappointing experience for all of us. Maybe the food would have been easier to eat if we had dined in. I'm not sure if my neighbors will go and try Sumo Smash in a "dine-in" capacity, but I'm most likely not going to go back. Between the lack of cleanliness and the quality of the foods we ordered, this is not the place for me. read more

My fiancé and I went there to get a quick lunch and I have heard good things about this place. While the service is good and the food came really fast, I was a bit disappointed on our food. We ordered the shio and black garlic ramen. My shio ramen was okay. I like the noodles and I was able to finish the noodles, but I kind of questioned about the broth. It had an okay flavor but the oil they used tasted like olive oil and it left a bad aftertaste. My fiancé couldn't finish his ramen because it was too oily to the point that his noodles tasted mushy.
