I needed cupcakes for my graduating preschool class.( Big order). I wanted a big cupcake individual wrapped for each graduate and a mini four pack individual wrapped for each family as well. My mother went into this shop this morning to ask about a cake for my one year old daughter. Nothing special, just a sheet cake with some flowers and a little pink smash cake. She was treated very awfully by a women who she thinks was the owners wife. The women refused to look at the pictures my mom brought in, stating that they can't do a custom cake order this short notice. Had she looked at the pictures she would have seen they were both generic cake designs that I confirmed they can do with a few days notice. We have purchased many cakes from this company in the past, one being a wedding cake that made the newspaper. The women was snippy with my mother throughout the entire experience and told her "good luck finding someone to do your cake, no one will do it on such short notice". My mother went to Raleys who obviously had no issue doing a small sheet cake and smash cake by next Saturday. My mom was very upset about her experience and we will no longer go through this company for our special day cakes. Edit: in reply to owners comment, it appears we are both playing the hand of "telephone" as we are both receiving secondhand information. Although I appreciate your response, I don't appreciate my mother's feelings not being validated. The woman did not offer the cakes to my mother the way you described them to me today on the phone. We weren't expecting a custom order cake and something that was made for a little girl would be perfect. The pictures weren't seen because the woman was not interested in seeing them. Now I hate to criticize but my cupcakes had so little filling in each one I couldn't have filled more than a half teaspoon, no joke, I was super shocked. I'm a bit apprehensive to go back again. Mid-day Redding heat....a bicycle....a box of cupcakes.... and a mad dash home on the town streets. Not a situation that usually ends in success. But I'm a gal that will brave through all kinds of weather if there is a good cupcake for me in the end. And miraculously, the cupcakes survived and I was a happy camper...or, ahem, eater. So were the cupcakes worth the trip? Well, the first cupcake I actually tried was at the Sublime storefront. The place is brightly painted with lovely decorated cakes lining the walls up front. There is only one table to sit at inside. They have binders on the counter containing photos of past decorated cakes, and they all looked truly amazing. They mainly specialize in designing and decorating cakes for special occasions so I will definitely consider Sublime the next time I need a layered cake. There were four varieties of cupcakes on the counter, each lightly decorated and each containing a filling and a dollop of frosting.There was a red velvet w/ cream cheese frosting & chocolate filling; a pink champagne cake w/ Bavarian cream filling; a chocolate cupcake w/ chocolate frosting & filling; and vanilla sour cream cupcake w/ caramel filling & butter cream (called the "Cloud 9"). The Cloud 9 was my favorite with its delicious vanilla cupcake base, a tasty white coating on the top, and a smooth, not-too-sweet butter cream frosting that balances the sweet caramel filling. Their frostings are made with butter so they do not leave that sickly, lardy film in your mouth like many other shortening-type frostings. Each cupcake is $2.50, and a dozen costs $24 (becomes $2 per cupcake then). I don't know how much their fully decorated cakes cost. The aspect that made this a truly five star place was their customer service. When I and my fellow biking partner walked in and really liked the description of the Cloud 9 cupcake, but noticed there were none left, one of the owners, Wiley Saccheri, offered to make a batch just for us. We didn't want him to go to the trouble, but after insisting that it wouldn't be a problem, he went back to kitchen and made two cupcakes then and there for us to eat. Most places would just tell you sorry if a cupcake flavor was sold out. Saccheri as well as another owner of the shop, Jackie New, were both incredibly friendly to us and willing to answer any of our questions. When we announced our crazy plan to carry a box of cupcakes back home in 100 degree heat, they were more than accommodating by providing a sturdy box, napkins to stuff the inside, parchment paper to cover the frosting, and tape to close the lid down. Due to all this, I am able to happily report that the cupcakes survived until their not-too-much-in-the-future consumption. So are cupcakes worth a bike trip through heat and crowded Redding roads? Always. And Sublime cupcakes are definitely no exception. read more

FANTASTIC cupcakes. Honestly. But keep in mind they really focus on custom ordered cakes and I'd recommend these people first to any of my friends for their birthday or wedding. The cupcakes, which is what you can get by just dropping by, are rich and moist with balanced flavors. Some of the cupcakes feature fillings and when they are they are well executed and complement the topping. Speaking of. Of their 8-10 flavors (depending on the season) I have tried 7. Of those 7, four have ganache. Ganache people! The entire head of the cupcake is glazed in a nice even coat with a dollop of buttercream icing on top. This duel combo allows for more flavor, more texture without it being too overpowering. The cupcakes that feature only buttercream often mix it up by having a filling inside and their buttercream is silky and creamy with nary a gritty or grainy texture in sight. Wonderful wonderful place to go. These are the people you want to cater your event, these are the cupcakes you want to pick up on your way to a party if you really want to wow people. Most of all, if you need a custom order, can't believe how good it is, fantastic looking cake for a birthday or wedding....this is the place to go. I'll give the lowdown of the flavors I've tried with the descriptions so you guys can anticipate the bliss to come! Cloud 9: Vanilla Bean Sour Cream Cake with a caramel filling, white chocolate ganache and a buttery buttercream icing. Okay people, vanilla cake is what you turn to for supreme moistness. And sour cream is what you turn to (not the flavor, just part of the batter) is what you turn to for fluffiness and even more moistness. For the sweet tooth. Chocolate: Rich chocolate cake with dark chocolate ganache and a rich chocolate cream filling and icing. I thought I'd be more of a fan because I'm a chocolate girl. But when I'm craving that rich dark indulgence I'd prefer either their "loco mocha" or "peanut butter bliss" (see below). The addition of coffee/peanut butter adds such dimension that the regular chocolate loses me a bit. Redding Velvet: Velvety moist red velvet cake, white chocolate ganache and cream cheese buttercream icing. Okay, I'm not a fan of Red Velvet. The first place I ever tried it was in Hollywood by this bakery that Oprah said was the best in the world. Whatever. I wasn't sold. The owner challenge me to try it and Oh.My.God. Red Velvet doesn't load it on you by flavor...it plans a more subtle attack by texture. This one is hands-down, the best I'd ever had. It's dense and moist and rich like you wouldn't believe and the white chocolate ganache coupled with the real deal cream cheese icing...perfect. Think Pink Lady: Most pink champagne cake filled with Bavarian creme and topped with vanilla buttercream. This is my least favorite. Pink champagne cake sounds impressive but doesn't add too much sparkle. Bavarian creme is likewise more texture oriented making the small bit of vanilla in the buttercream the most powerful flavor. That's right, not much. Still an incredibly moist cake, this is the one I'd vote for a remix though. Loco Mocha: Rich coffee chocolate cake with a white mocha ganache and coffee buttercream. Perfect cake. Cake so rich and moist and dense I was trying to figure out how they did it. Would not change a thing about this cupcake. The flavors balance perfectly. You know there's mocha and can taste it but it just feels like CHOCOLATE X 2 while eating. The filling is especially rich and indulgent in this one. Lemonista: Lemon pudding cake with a lemon creme filling, topped with buttercream. One of the first cupcakes I tried because I'm a huge lemon dessert fan. This is, in my opinion, the moistest cake offered up here. Cloud 9 is second, but this delicious lemon one takes home first. I'd like the lemon to be more tart which would allow it to couple with a white chocolate ganache (White chocolate and lemon are one of my favorite flavor pairings). Still a good cake any lemon-lover would enjoy! Peanut Butter Bliss: No description, newer flavor. The cupcake is as rich and dense as the Loco Mocha. If you read above I might be able to end it at that. It has a peanut butter buttercream icing drizzled with caramel and peanuts and a caramel filling. It has the taste of your favorite candy bar but with sophistication and such a rich lovey balance of flavor. One of my tops. Other flavors that I've not tried is a Boston Creme, Peanut Butter and Jelly and a special Seasonal Pumpkin Spice. Anyway, go to Sublime. Order cupcakes to treat your kids, surprise your coworkers or enjoy yourself. If you need a cake, these are the people to go to. Other places offer more of a "hang-out" vibe which sadly, Sublime does not yet but I would bet on their actual awesome produce over anyone else in the area. read more

Extremely disappointing. Wylie told my husband and I that our request to do a wedding cake with us sitting on a tree wouldn't be too hard for him, we even drew a picture of exactly what we wanted. He called the day before he started making the cake and assured me that the cake would be great. We picked up the cake and were immediately disappointed. The cake was air brushed a rock gray with two logs on the side of it. Had Wylie told me that this would be the outcome of our cake I would have told him just a plain cake would be better.. But there was no hint of it being unsuccessful. After our wedding (which was on a day he would be out of town) we called him and he reimbursed us with 2 dozen cupcakes of our choice, but when we picked them up they just sat them on the counter, no apology for ruining our wedding cake- which cost $400.
