This brewery only serves beer, but they encourage bringing your own food. I just happened to stop in here looking for a meal, but that's not possible. I tasted two of their brews (just a taste) and both were very good. They have an indoor seating area and a large outdoor seating area. Suarez has quickly become famous for more than its association to Hill Farmstead. Their collection of expertly crafted lighter options is up there with anywhere else. They are seeking perfection in more approachable styles as a art form, not a business strategy, and are not engaging in an arms race for bigger beers. Greatly appreciate this, which is why I patronized them since opening. This review specifically covers the brewery space versus solely the beer alone. First time I came with a few buddies, when they were located in their main business. Place looked like an art gallery, which fit oddly well versus being off putting. It fit the beer well. Their canned options were limited, however we had plenty of the stuff on tap. Not many seats however plenty of standing tables which was fine given how long we had been driving. Winner was Crispy Little, which we grabbed a few 4 packs of. Greatly enjoyed the place, as it was one of the best and most enjoyable breweries we visited. Coming back the next year, the setup had become downright lame. Instead of using the indoor space for beer, it was just for merchandise and bottles to go. If you wanted to drink, they had an 'outdoor beer garden', which consisted of a small patio in the parking lot with a few barrels thrown about. With only 2 beer options. And the bartender couldn't be bothered to pour them correctly, in between bad mouthing another brewery down the road. Not exactly a good look, even though the schwartzbier I had was solid (have had Bones Shirt a ton). Need to loop back and try it again now that the taproom in the back has been opened. May revisit this then. I just hope they got rid of that bartender, as microbreweries bashing each other is not cool; he wasn't one of the owners/main guys so at least there's that. Downgrading this 1 star because of that until I can revisit. read more

Suarez Family Brewery is a craft brewery that opened in Livingston, New York in August 2016. It was founded by husband and wife Dan and Taylor Cocalis Suarez. The couple first met when they both lived in Brooklyn. Dan started out as a homebrewer living in Brooklyn and eventually he got a job working for Sixpoint Brewery in 2007. He later connected with Hill Farmstead Brewery founder and brewer Shaun Hill. In 2011, Hill hired Dan to be his assistant brewer. The Suarezes left Brooklyn and moved to the Vermont countryside. After Hill took Dan on an inspiring beer trip in Belgium, the Suarezes began to look for a place to start their own family-run brewery. They re-settled in Livingston, New York because the Hudson Valley resembled the same idyllic, bucolic charm found in Vermont. The Suarezes set up shop in a disused, all-brick warehouse. Dan works as the brewmaster while Taylor runs the business side of the operation. The brewery specializes in lighter ales and lagers, or what Dan likes to call "crispy little beers". The same year they opened the brewery, the Suarezes also welcomed their first child, Enzo. Since opening, Suarez Family Brewery has gained a reputation for being one of the best breweries in the Northeast. I recently visited Suarez Family Brewery for the first time while I was driving through the Hudson Valley with my two sons. I had previously sampled some of their beer at a craft beer bar in Brooklyn, but a visit to the brewery had been on my bucket list for a while. A sign at the old brick warehouse informed us that the taproom had been moved to a new structure behind it. The taproom was small, but quiet and cozy. There were only a handful of other visitors during my visit. There was a table with scrap paper and crayons, much to the delight of my two sons. This kept them occupied while I sampled some tasty brews. The ones I tried were "Walk, Don't Run" (Hoppy Blonde Ale), "Crispy Little" (Hoppy Pale Ale), and "Backroads" (Sumac Country Beer). All three were great, but the latter was truly exceptional! I was VERY impressed with the types of beer coming out of the brewery. Before leaving, I also purchased a bottle of "Lo And Behold" (Barrel-Aged Flemish Red Ale) to bring home. I highly recommend Suarez Family Brewery to all serious craft beer aficionados! read more

I love the building. The vines growing on it are absolutely stunning. But you can tell by the building that it's old. Parking lot is a gravel lot, where you kind of make your own spots. Door is on the side hidden with the vines. The inside is smaller than I thought. There are a handful of sit down tables and a few standing tables. We got the last spot to stand. There was not a lot of AC. I couldn't tell if it was on. The bathrooms definitely don't have any AC. We shared a bottle of White Lady, which had peach notes. I liked it, but I wish it was more peachy. It's a good size to get two glasses each. The pilsner I didn't really like. They had a small menu which is fine, but since it's mostly bottles, you can't try anything or get a glass. I wanted to try the cherry one they had but I didn't want to commit to a full bottle. They serve light beers which everyone says are fantastic but I still cant seem to understand why. I guess I don't have the pallet for their style of beers? They seem average to me. Finally got the chance to visit this famed brewery when my friend rented a house in Saugerties for his birthday (and this happens to be one of his favorite breweries) - so we headed here on a Sunday on the way back to NYC. While a bit out of the ways, a rustic setting really does add to the appeal of the place. Beer-wise, you'll find some amazing treats, from IPAs to pilsners, and even complex blends of sours. Delicious. There are also some bottles you can purchase to take with. I sure did. Food-wise, there's a small BUT delicious assortment of items available on-site for purchase, including soft pretzels (a MUST) and, at least while we were visiting, delightful pimento cheese bialy. In the American craft beer world of triple IPA after imperial IPA, Suarez is a breath of fresh air. They are brewing complex and tasty beers that I could happily drink all day...not just because they are often lower ABV, not just because they don't blow out my palate with the intensity of the hops, but also (and most importantly because they are tasty as hell. This is beer that is a pleasure to try and pair properly with food as well. Suarez calls their product 'country beer,' which I think is their moniker for a farmhouse ale not brewed in a farmhouse, with a little more nuance than the catch-all style of saison. These beers can be wildly different as they vary depending on where they are brewed (and who they are brewed by). They can be sour and funky and cloudy and sweet...as I understand it though, it's the mixed fermentation (both brewer's yeast and wild yeast/bacteria) that truly define the genre...but beyond the beer geek minutiae, it just tastes good. Personally, the Slow Bustle has been my favorite so far, but I'm down with the Big Night, the Merkel, and just about everything else I've drank. If you're from Brooklyn and you're reading this, keep in mind that you don't have to find a car and head up to the Hudson Valley to drink it. Suarez brews are in more Brooklyn bars than anywhere else actually. Check out Mekelburg's, Threes, Brouwerij Lane, Torst, Spuyten Duyvil, and the other best places to drink beer around here, and you'll probably stumble upon a couple. This is my kind of beer, and the relaxed, open, airy tasting room is my kind of place to drink it. read more

This Brewery is definitely a family with history, a great one to say...and it is found in their incredible beer(s). My fiance and I both enjoy trying out new beer, especially in drafts. It was our first time visiting and staying in Catskill, New York. He read up on breweries worth to visit in ny state and that's how we found this place. It was a brisk winter Sunday in the afternoon but not cold enough for skiing when we visited Suarez. The general vibe from the visitors -- Most would sit down to enjoy a glass or two of beer or and then also buys 1-2 half dozens of cans and some bottles to go. We, of course, did the same after trying out 4-5 different kinds there. They sell a glass (8oz) for $4 which is not bad at all. Each glass of beer is served with a dense, cloud-like beer foam (see photos). It almost looks like a frozen beer but it's not. The foam is normally not what people prefer but here, you should fully embrace the foam - it was good. My favorites were: -Hecto (draft) - dry-hopped pale ale -Stands to Reason (draft) - German rauchbier -Crispy Little (to go cans) - hoppy pale ale Beware of their limited opening hours. Suarez is such a killer spot. It's great to stop here after a day of hanging out on Warren Street to grab some beer to take home. I'm not sure what the building had before it but it doesn't come across as industrial like most breweries these days. I totally get the whole "hipster coffee shop" vibe given off but it doesn't bother me. Only once was I told my growler wasn't clean enough so I had to purchase another. Some might take this as pretension while I figured they didn't want to compromise quality. It's a cool spot to grab some drinks before/after your journey in the Hudson Valley. Their beers aren't really that expensive. $7 for a 750 growler fill is alright by me. The prices of their bottles varies but it's always something good & worth the coin. read more

Was excited about this place because I really love their light beers. We biked here with our family looking forward to a crisp delight at the end of the ride. We recently heard about the backyard beer garden set up and were looking forward to it. Was disappointed to learn you can only choose from one option. Also they serve beers in 8 ounce glasses for 5 dollars. They don't offer larger glasses. That amounts to 10 dollars a beer. I find this very steep and counter intuitive to creating any of local and community atmosphere. Instead this place caters to the distant crowd or those that are willing to be twice as much for a beer. I wanted to buy a Pilsner in their store up front and enjoy it in the beer garden but that wasn't allowed. This place has a ton of rules and is very expensive. A tasty beer but a shame it doesn't have much soul. read more

We ere down the road at Sloop Brewing and heard some other guests chatting about Suarez Family Brewery. I did a quick search and noticed the accolades this new brewery was getting and we decided we had to try it out. Located on a long farm road, Suarez Family Brewery is a beautiful breath of fresh air. It is a small operation but this crew is producing some amazing beers. Opposed to everyone else in the craft brew industry these days making juicy IPA and hop bombs, SFB is focusing on Pilsners, and light easy to drink beers. As we were driving my fiance and I only grabbed one to enjoy in the tap room, but both were delightful and refreshing on the hot spring day we arrived. Two pours were $8 total (a steal) and we grabbed a couple of bottles to enjoy at home. So far we have tried the 2016 Cherry Beer - a nice light sour that was perfect to enjoy on our sunny roof deck back home. Stopped here on our way back from SPAC, traveling first through Hudson, and then down Route 9. This brewery is set right off the road and is loaded with flavorful beer. The parking is in the back and to enter the building you need to walk to the front. It's brick and industrial, with an open space filled with a handful of long tables, string lights, and concrete floors. Suarez has a good selection of beer, and offer full pints or half pint tastings--no flights. We tried a few 8oz beers and were impressed by the variety of flavors and crispness of each sip. I tried the Palatine Pils and the Walk Don't Run selections. We arrived shortly after they opened and got a seat in the corner. We opted not to get any bottles or growlers but will come back again because we are regulars at nearby Sloop Brewery. This brewery is minimal, without gimmicks or loud music, long lines for specialty cans, TVs, board games, etc. It's about the beer, clearly. I do agree with Brendan's review, that there is something about the atmosphere that I can't quite nail down. I could see some people view the atmosphere at Suarez as that of a boutique coffee house. Still worth the visit! Some people brought their own food, like charcuterie or bagels. If you're hungry, that seems to be the best bet. Be mindful too that this is a family friendly brewery (literally). While we were enjoying our beers, there was an infant in the facility who was crying incessantly. The family attempted to placate the baby by rattling a toy that became quite distracting and unpleasant. The brewery is essentially a box, so the acoustics tend to echo. Furthermore, while leaving, I noticed that there were over four infants in the facility, as well as a few 5-7-year-olds who were just arriving. read more

My family and I did the Sloop/Suarez trip. Both were great and I recommend hitting both if you're in the area, but I'll focus on Suarez here. I love IPAs as much as the next guy, but they're all the rage these days and many breweries choose to focus on them. It's refreshing to find a brewery where you can order several different beers and each one is distinctly different. Plus, it's becoming so rare to find a well made pilsner being offered. I ended up getting 4 pours while at the brewery. Settle down and Homespun were the clear winners for me, but each beer I had was great. We also ended up getting several growler fills, 2 bottles and a 4 pack of Palatine cans to go. The beers offered by Suarez are simple and all generally lower in ABV than what most breweries are offering nowadays, but they're all very well crafted and balanced. read more

We were driving down to New York a few Fridays ago. From where we live in southern VT we take a ton of back roads until we get on the taconic around Chatham, NY. Kris asked if I would be game to stop for a few beers in Chatham. Apparently there is a new brewery, he tells me. And it's on the radar as the next best beer in New York. Like I was gonna say no to this? After a little Googling he realized that it was not in Chatham but Livingston so he got the direction and off we went. Suarez Family Brewery is kind of in the middle of nowhere on Rte 9. It's surrounded by farms on a beautiful stretch of road. The brick building has parking out back and tons of huge windows in the front (I'm glad they don't have parking there, the views were quaint and would hate to lose them). We went in and loved the space which was clean, warm, and inviting. They have great tables (I don't know how to explain them) at two heights: standing and sitting. In one area there was a group of people working on computers and eating snacks. They had two dogs and a baby and I'm pretty sure were the Suarez Family. Very cool to see a home grown business and everyone collaborating. The brewer was pouring and you could tell he cares about beer. Pours were precise and in the right glasses from clean lines (praise, Buddha). We tried four, the botanical sour being my fav (something about a call... I can't remember the name now but I will post my pics soon). The pours are a good size. They have bottles available to take. We got six that we brought to NYC where we drank one. The rest we enjoyed back home in VT. This is the perfect spot for beer lovers who want to enjoy a quiet setting where they can bring a few friends, maybe a board game or some cards, and spend a few hours enjoying some seriously high quality beer from people who know and take pride in what they're doing. We will definitely be back. We're actually headed down to NYC in a few weeks and I imagine a stop is in order! read more

I love this great little brewery. It seems to be making a name for itself Downstate as well as Upstate. I only wish they were open for longer hours. In these days of double IPAs and bourbon barrel stouts, these guys dare to make great beers of ordinary strength with simple ingredient lists. They make traditional lagers, including unfiltered pilsner. They make hoppy ales, the flagship of which is a hoppy American Pale Ale with wheat called Crispy Little. And they make farmhouse beers. I've posted a photo of what was on tap on a recent visit: 3 lagers, 4 ales and one farmhouse. My favorite beers are Crispy Little, the porter (don't remember the name) and the Palatine Pils. But I've never had anything here that was less than very good. They serve beer in 25 cl. glasses - an odd size of about 8.5 ounces - and fill growlers to go. They way they fill glasses of lager is reminiscent of a German bar - multiple pours with a big head that is allowed to settle and get thick. And the size of the pour is always generous. read more

We stopped here today to grab a couple beers before heading to our friend's house down the road. We ordered the Crispy Little (pale ale) and the Palatine Pils. We also couldn't help getting a couple of warm and freshly-baked pretzels that looked too inviting to pass up (FYI there's no other food here). Also, why no mustard?! :( :( :( There's got to be at least 5 artisanal mustard makers in the area, right? We loved both of ours beers though the heads on them were large--and not fashionably so. The space is open, airy, and unpretentious, and we had a pleasant toddlerless time chatting and enjoying the atmosphere. Looking over some other reviews, it seems that there have been complaints about snobby service, but we didn't experience any. The woman working the counter was really friendly and we had a nice time chatting with her. All in all, a great spot and worth hitting up if you're in the area. We're excited to add the beers we got on our way out to our beer fridge back home in Austin. read more

Keep in mind the business model is clearly focused more on making great beer than in running a bar. In other words short window to hit this place for a couple drinks and/or get some cans/bottles/growlers to go. Suarez is a craft brewery that specializes in some rather subtle styles but does it with obvious care. If you only drink hazy NEIPA style hop bombs you may not appreciate this place as much but if you want something more nuanced for a change of pace I highly recommend stopping in. Because we usually stop in while traveling to a spot a little further north we don't often hang around for beers on premises but it is a cozy little spot. The vibe is a little snooty but they are clearly proud of their product and that's not a bad thing. Overall the staff is friendly enough but they do take their beer seriously! A must stop for any open minded beer aficionado. read more

Another out in the middle of nowhere brewery here in NY, but one worth hitting. Nice selection of pilsner styled beers, and some lighter IPA offerings, which is a nice change of pace compared to so many breweries around here only having hi-octane IPA's, Stouts and sours. No real food offerings which is kind of a bummer, and the place inside could use some style (drab, white walls, and not very comfortable seating, plus NO bar area) but hey, the beer is great, so there is that!!! read more

It's you, your server, a large, comfortable area in which to sit and chat, the beer, and a basket of pretzels ($3 each). It doesn't get any simpler or better than that! I have driven past Suarez way too many times recently, and I'm glad I finally stopped in. The beers are quite tasty and very reasonably priced - smaller glasses at smaller prices makes it very convenient to sample quite a variety. My only complaint is that the room has super-acoustics, and it can get very loud and difficult to hear the other people at your table. But ... beer. read more

What a fantastic spot! If you find yourself in the middle of upstate New York, this is a must stop for any beer nerd. Their focus is primarily draught pilsners and country beers (aka saisons). Kinda refreshing to visit a place not trying to can another hyped IPA. Service is nice and feels slightly personalized. Very relaxed atmosphere to enjoy your beers. The place is very kid friendly to boot, which worked out perfectly for us. Keep in mind that Suarez is no longer dog friendly. Hands down the most pretentious brewery I've ever been to (not rude, just odd...). The atmosphere was more of a stuck up coffee shop than a brewery. We heard they had a connection to Hill Farmstead, so we had to visit. They don't serve IPAs, but it is refreshing to see a place focus on other styles and nail them so well. I've sampled thousands of beers & have never enjoyed a black lager until now. Their farmhouse, ales, & pilsners were all top notch. View is very pretty as well- will definitely come back! Side note - We were very confused why dogs weren't allowed inside despite their brewery dog wandering table to table. I went here with a small group a couple weekends ago-- It was my first time. While it was a rainy and cold day, but Suarez Family Brewery was warm and inviting and bustling with patrons. In my people-watching I noticed families (even a few babies!), couples, and groups of friends enjoying the delicious offerings. I had the Call to Mind, a "botanical country beer" with notes of chamomile that I could really taste. It was delicious. Nothin but good things to say about this place. To start, I'm usually a high abv IPA type of gal, and this place specializes in low abv non IPA beers. With that being said, I tried 5/8 of the beers on the menu and loved them all. A lot of their choices have a decent amount of hops and had unique ingredients.
