"We don't have a cocktail menu, but we can make anything you'd like." That was one of the first things our server told us, and honestly, it was refreshing. These days, it feels like every bar has a cocktail menu full of creatively named drinks that require reading a list of ingredients just to figure out what you're ordering. At Governor's Tavern, if you want a gin and tonic, you simply ask for a gin and tonic. The only decision you need to make is which gin you'd like. I'm not much of a cocktail person, but I appreciate that not every place feels the need to reinvent the wheel. The place was packed at lunchtime, but we got lucky and grabbed a pair of seats across from the bar. The server who I quoted was genuinely friendly and welcoming. I ordered a Guinness, but unfortunately the keg had just kicked. She recommended the Samuel Smith chocolate stout instead and even brought me a sample before I committed to taste since I never heard of it, which was a nice touch. For food, we ordered the State Grill burger and the Nashville Hot chicken sandwich. Both were excellent, and each came with Belgian-style hand-cut fries. If you're spending the day browsing the boutiques and antique shops along Warren Street and want a drink, a good meal, and a lively mix of locals and tourists, Governor's Tavern is worth a stop. read more

5/19/26: Stopped in for a quick lunch while in Hudson, NY. There's seating indoors and outdoors. Inside, the decor consists of old time murals from the 1800s. We sat at the bar. Shared an OG Chicken Sandwich $13. It was buttermilk fried chicken with tomato and lettuce on a roll. Sandwich was pretty tasty. Service was just average. Otherwise, I would've given it four stars. Attentive Service, good selection of local drafts and excellent Wedge Salad. The wedge was so crisp, with the perfect amount of dressing, tomatoes and bacon. My Wife ordered the BBQ wings and enjoyed them but found them lacking in flavor. I ordered a cheeseburger and didn't love it as I prefer a smash burger and this one was extra chunky. Although it was cooked well and flavorful, I fought with the burger as the bread fell apart, making it hard to eat like a sandwich. We had a dog with us and this came up as a suggestion. They have about 6 outside tables on a deck. It was a pleasant day and it was perfect. The menu is not huge, but we enjoyed our choices. Two of us had the OG chicken sandwiches, one got a caprese chicken sandwich and my nephew got chicken strips. They all came with fantastic fries. Service was friendly, but a bit harried. Simply the best wedge salad I have ever had! I ordered the salad with the buffalo chicken, which came with a very generous portion of bacon and blue cheese. And while they had a nice selection of beers, many on the heavier side, I enjoyed a local pilsner beer, which was perfect for this wedge dish. Service was outstanding too! We were looking for a late night bite after a bit of a disappointing dinner (I promise I'm not always negative) and stumbled upon this because their kitchen was open later and it was within walking distance. We walked in and there was a decent amount of people sitting at the bar and a few tables available. The place is juuuust the right size to be cozy but also spacious. Also for a classified 'dive bar' it was pretty clean as well. They had a good draft list (according to my boyfriend) and the service was very quick and friendly. Additionally, prices were very fair. Now to the best part, the chicken sandwich. Wow! Just wow! I ordered the Killah Bee and it was perfect. It was breaded to perfection and definitely not previously frozen! The chicken itself was a large piece, maybe 2? The sauce was sooo good. The fries were your basic fries but it didn't matter because the sandwich was the star of the show. The fried chicken on Texas toast was so delicious with the avocado sauce on top! My friend enjoyed her burger. The food was top notch. We noticed that the place was packed with families and some young people at the bar. Either way, there was the olympics in the television playing the background. Stopped by here for dinner with my boyfriend. Our server was friendly and attentive, and our food was out fast. We ordered the popper roulette which was spicy but tasty and cheesy. The habanero one is hot! He ordered the Chicken Caprese (side Cajun fries) and loved it. The fresh Mozzarella cheese was delicious, the chicken was crispy on the outside and tender on the inside. The bread was a buttery Texas toast sure to please. I ordered the clam chowder bowl of soup and the Caesar salad. Both were delicious. The soup was creamy with lots of bacon and potatoes. I would've loved more fish though. As for the salad, it ranked top 5 Caesar in my book. The added breadcrumbs and freshly grated Parmesan made this simple dish phenomenal. Some room for improvement for the drinks. Mine were a bit weak but it might've just been a simple mishap. Overall, I would definitely recommend Governor's Tavern to anyone in the Hudson area. Very much a little gem of a place. Fast, friendly service, and a perfectly cooked burger--it's hard to find a place that can do a proper "medium" burger, but mine was spot on. The fries could have perhaps been a tad crispier, but they were most definitely handcut, and not at all greasy. Hubby and I stopped in on a Thursday evening around 9pm and it was quite the lively crowd - not overly crowded where you couldn't move but busy enough for a full bar and standing. We grabbed a table and were confused whether it was table service or not (it is) and settled on wonton nachos as a starter. These were amazing and had the right amount of crunch. I just wish the jalapeños were actually spicy. I liked how the wonton didn't get too soggy and held the toppings. The state burger was cooked to perfection (medium rare) and very well seasoned. The pickles tasted fresh and the crispy onions added just the right amount of texture for a perfect burger. I was really in the mood for spice and the waitress was kind enough to offer a mango habanero sauce on the side (it really was spicy). Just arrived in Hudson, NY for the weekend and wanted to grab a quick bite to eat. Total local bar with the typical bar scene. We sat at the bar and ordered a couple drinks while checking out the menu. I wanted a Moscow Mule, which wasn't bad. Seemed the ginger beer was a little sour tho. Unless the bartender loaded it up with sour mix. My wife wanted a beer and asked for suggestions. The bartender didn't seem interested in playing that game and didn't offer much insight. Forget what she grabbed, but she thought it was meh. For food, we ordered some wings, which I think this was the bartenders thing. When asked which of the many flavors we should choose. He offered up his little creation and placed the order. Seemed like a mix of bbq, wing and honey sauce. Definitely tasty tho. Grabbed a burger and it really wasn't cooked properly. Wanted medium, came out well. Made it dry, bun was a nice buttery potato roll. Hand cut fries, were a plus. Overall, nothing to special. The crowd seemed local and maybe 8-10 tables with a 12-15 seat bar. Guess I can't be upset, wanted no frills average bar after driving and that's what we got. A great, no frills spot with some cold beer and fresh eats. With not much seating, this classic tavern is a perfect place for cheap eats and a small menu. My partner and I sat outside on the small patio. The beers are all found on a QR code. Our waitress was so nice and attentive. We shared the wedge salad which was a great choice with lots of bacon and fresh ingredients. We also split the Nashville Hot sandwich. It was SO good. The chicken was so tender and moist. It's no wonder a fellow Yelper suggested this spot. Governor's Tavern is warm and inviting. Trendy but chill. Feels like a home-town bar where good people gather. If the feel good vibe and great bar staff weren't enough selling points, the food was spot on! We started with the Thai chili wings. They were flavorful, crispy and saucy. Followed up with the State Grill burger and New England clam chowder. The frizzled onions, horseradish and au ju on the state grill makes it one of a kind. I highly recommend! I'm even thinking that I need to have it again before my weekend in Hudson is up! The clam chowder didn't disappoint either. We we drove 7 hours all the way to Hudson from canada for a concert and stayed in this town for a few days and ate / shopped around. Governors tavern was like the perfect vibe for our last night in here let me tell ya. You kind of have to fend for yourself when it comes to getting drinks and served or even seated, it's a little bit of a zoo but it's worth it trust. The veggie burger was reallllyyy good, the fries were pretty bad and browned which means they probably don't change the oil much but it was BUSY in there so I get it. Fabulous time at Governor's Tavern. We came here last year in October and had such fond memories we decided to make a trip pre dinner. They have outdoor seating nicely spaced and it is right off Warren so there isn't much hustle and bustle interrupting your tables. Perfect. The service was excellent. Very friendly and attentive. While we didn't get food (pre dinner!) the drinks and fries were so great! The bahama mama packed a good punch and the umbrella was a nice touch.
