They prepare special cuts and roasts so beautifully, and have these incredibly fresh, organic, tender small Canadian chickens, organic pork chops and game meats. What a treat! I heard about this famous butcher shop and recently upon meeting a friend for breakfast had an opportunity to stop in. It has the feel of an old neighborhood butcher shop with quality meats and men who can provide the guidance to cook it to perfection. My quest for the visit was to purchase rubs. To my delight the guy spent 10 minutes schooling me on the different types and detailing how best they are to be used. I bought three and followed his directions with a great outcome. He also explained the aging of their steaks which will be my next purchase but first I need to cook the ones already in my freezer. I did purchase the oxtails which looked amazing. Love this butcher!! I was a little bit concerned at how 'vintage' it looked, thinking it was a newer addition to the neighborhood that went too far into the chintzy aesthetics. Turns out no - it really has been around forever, and I can see why. The meat that I got here was fantastic, and not too expensive. I was worried I wouldn't be able to find everything I wanted (cue the wanting meat jokes) but they actually have a lot more available than you can see in the display cases. The service was great, and definitely knowledgeable. Most things they get from the back, freshly cut. They also have a really good selection of sauces, cookies, frozen local specialties like Eton dumplings, etc, and all kinds of beautifully marbled meats that were super tempting. A girl just has to be realistic about how much meat she can handle at once (ba dum chhhh). read more

What a great butcher shop. it's hard to find a better spread of beef. The marbled beef is drool-worthy. I didn't see a porterhouse in the display case, so I asked one of the guys if they had any in back. They went to the back, and pulled out the biggest slab of beef I've ever seen. Then they asked me how thick, and cut a 1" slab for me. It was one of the nicest cuts of meat I've had. Definitely coming back for more. read more

Our local butcher is a great butcher. I believe they've been there for about 100 years and like a fine steak they have aged well. Excellent selection of grass fed meats as well as a lot of gourmet ingrediants to help you with your cooking. On top of that the owner is also our landlord and he's been pretty good at that too. I asked him once how many buildings he owned and it was something in the double figures. He bought them back in the 60's when you could buy a brownstown for 35K. What amazes me is that, even though this guy owns what is now millions of dollars of real estate, he still shows up every day to cut and sell meat. Everything you want in a butcher, even when you don't know what you want. Walking into the store, you're greeted by a wonderful smell - fresh, quality meat. A smell you might remember from childhood, if your grandma used to take you shopping with her. Oh Grandma, I miss you. But anyway, I've been going to Staubitz for 12 years, and they've never let me down. They have first-rate meats, and you can trust their advice. Once I wanted a brisket for a peculiar slow cooking recipe, and what they gave me was a rather funky looking piece. I called them to question it, and they assured me that for my recipe this was right and if it wasn't they'd refund my money. They were dead right of course, it came out awesome. They're always happy to cut to your specifications, make ground meat blends, and talk about cooking methods. Yes, they cost more than many other markets, but for the quality it's a great value. Called earlier in the day for 10 lbs of chicken backs to make stock and they put some aside for me to pick up later in the day. Was actually a little over 8 lbs when I picked it up which was alright by me cause that's actually all I needed. The butcher I dealt with was very friendly. I get most of my meats from The Greene Grape in Fort Greene, but since they don't carry veal and only carry chicken legs, breasts, and whole ones it gets pretty tricky to stockpile backs, necks and other delicious items that can be used for stocks, hence why I have to go to another meat market. They charged me 99 cents a lb which was less that Los Paisanos was trying to charge at $1.49. Overall, I'll be here again for more parts. read more

I went to buy a chicken today and wanted to order a leg of lamb for Easter. I was told I'd have to wait or call the order in. We shop here at least once a week and buy meat for holidays here. I received a cut of meat at Staubitz Market in Bklyn that i did not ask for. I mentioned i was dissatisfied & the owner said "I DONT CARE".

This is my ultimate go to for meat in Cobble Hill/BK Heights. They have a great selection of high quality meats and hard to find game meats. I walk in and feel like I've gone back in time, in a good, nostalgic way. There really is a noticeable difference between their meat and what you can get at Trader Joe's, even things like ground turkey taste remarkably better and I love their homemade chicken sausage. read more

Love, love, love Staubitz best meat market! I walked by forever and finally decided to stop in few months back and now has turned into a weekly must. I absolutely love this family business with the historic family portraits in the store over the years. Best meats and service in the area. They also have a nice selection of sauces, italian items, and Amy's Bread. Not sure why others have stated Staubitz is expensive, as I think they are very reasonable in comparison to Dellapietras. As Dellapietras which generally seems to run double the price no where near the same level of service. read more

I'm pretty sure this one of the primary reasons we moved to the hood. It just oozed goodness. Now that we've been able to sample everything (well, maybe not everything) since we've moved in, we're just stunned by how good it is. My dad walked in and said he'd never seen meat as amazing as in Staubitz. Our favorites are the veal chops, steaks, ground beef (you can tell the difference) and the fact that the prices aren't all jacked up bc the quality is so amazing. It's definitely on par with Fairway or Whole Foods, not that either of those are known for discounts, but there's certainly something about buying local. One minor inconvenience - the hours. Plan ahead, kids. They're not always going to leave the light on for you. read more

It's probably unfair that I review this place if I didn't buy beef... but I was looking for duck. They only had frozen Muscovy duck, but it was still very tasty. For fresh duck, I probably should head to Chinatown however this location is very convenient. The service here is impeccable and you get the feeling that they make regulars feel at home. read more

This is where you get the best meats in a neighborhood full of meats. Poultry, beef, lamb -- all better than the other options in the area. I have read much about the grumpy old owner of Staubitz but I guess experiencing it yourself is believing. I am planning a special dinner to celebrate my birthday and wanted to feature suckling pig. No challenge for a seasoned butcher one would say. I thought I would walk over since I am in the neighborhood and give Staubitz a try. Nice young man at the counter hands me over to grumpy old owner. You would think I asked for him to lasso the moon and wrap it up for me. He claimed that I could never get a 12 pounder, it would have to be at least 20 lbs. He would have to call upstate to his farmer to see if any sucklings were available. But no one was buying pigs this time of year so it would be difficult. The farmers don't want to sell sucklings because they can get more from full grown hogs. They charge more per pound the smaller it is. Wow! So much negativity within a three minute transaction! He took my number and promised to call me back with the info the next day. Never heard from him. As I turned away from the counter I heard him say to some one behind the counter ' I don't know why people can't leave those little baby pigs alone anyway". Not what one would expect to hear in a professional butcher shop. Not feeling at all comfortable with this encounter I phoned Los Paisanos the next day. What a difference in style.' When do you need it for? What size? Yes we deliver.' With no judgment or condescending attitude! So just like that we had a deal. I know from now on where my chops will be cut! It doesn't matter how great your product is if your customer service leaves so much to be desired. Especially with such great competition right around the corner. read more

I wish it had a better selection of fresh exotics but unfortunately i don't think they do enough business to have anything out of the ordinary that isn't frozen. I couldn't even get 5 pounds of chicken wings fresh. They said only frozen. Sometimes friendly, sometimes snooty. Now I just walk extra to go to Paisanos first, since I end up going there anyway more than half the time. They rock it there. read more

Although a long time customer, I will no longer go to Staubitz. The quality is only OK and the prices are exorbitant. The old man is - sometimes - just plain rude. He once berated me for wanting to stuff a tenderloin - some way to treat a client dropping a bunch of money for meat. When I am local, I go to Paisanos, they are consistently superior at a lower price point. When I have the time, I go to Florence Meat Market in the West VIllage where the prices are as expensive as Staubitz but the quality just blows the place away (dry aged beef hand cut right in front of you versus the marginal quality here). read more

this is my absolute favorite butcher shop in NYC. they carry the finest meats and really great cheeses, as well as a selection of crackers/breads, condiments, and spreads. i love making a nice spread out of stuff from here when we have guests, go to parties, or have picnics. these guys are always super nice, super helpful, and never make me feel bad when i say i want enough of X for 4 people instead of an actual weight. staubitz is the reason why i can't go back to being vegetarian. seriously. read more

I used to love this place, even though it's a bit expensive. I went there today and saw some incredible looking rare roast beef which I had no intention of getting, but it looked too good to pass up, so I bought 1/2 a pound. Got it home and they gave me, not the incredible looking rare roast beef, but some other grayish, barely okay looking roast beef. Just lost a lifetime customer! read more
