And i wish it were open at 8 am on Saturdays instead of 9 when many of of us are out and about shopping. This is a very old school meat shop. I would say they mostly specialize in beef products but they really do have a mix of everything. While they unfortunately do not offer sandwiches like many of the other slightly less old shops nearby, they do have a terrific selection of goods. Yes they are pricey but it's an old beef shop in the middle of a fancy part of Brooklyn so I'm not exactly sure what you're expecting. I personally go here for their outstanding roast beef. Honestly baffled by my experience. I ordered a piece of meat days ago- they called me today to confirm I was coming in, and I said I'd be there in 20 mins. I arrive - give my order number - and wait 20 mins for them to cut it??!?!!!? It doesn't make sense. No explanation, no apology. There were two other customers in the store and 5 or 6 people working behind the counter. I gave them a try, I regret it and I definitely won't be coming back. I'll start with the fun facts first because... well, they are fun! Staubitz is New York City's oldest butcher shop - bet that's not on your tourist guide for NYC so ya welcome! Also, you may have heard of bodega cats, but have you met the lovely white feline that resides in this shop? He is a beaut. I am a carnivore, and over the past several years of living in Brooklyn, I've been on a journey to try as many butcher shops within a five mile radius as possible. It was the best of times, it was the worst of times. Some simply didn't have a wide enough selection to satisfy my gluttonous heart. Others made me feel instantly inferior with that snobby attitude that I could not possibly know meat like they, the professionals, know meat. But my biggest bone to pick (pun intended) with most is that they are quick to charge the premium prices, yet are not so quick to trim my precious meat of fat or rid it of the weighty bones. Staubitz Market has earned the spot of my regular butcher store. The service is quick, knowledgeable, and friendly. The prices are quite reasonable, especially for the quality I've been consistently getting. They've got the meats! Steaks galore, lamb, rabbit, boar, endless options for sausages, duck, ribs, oxtails, rotisserie chickens, just to name a few things to get your hands on. Heck, you can even order a whole pig here if you're in a pinch for a luau. I also like that I can pick up basic provisions here to go with my meat when I'm not in the mood to schlep all the way to a grocery store. My grandmother introduced me to Staubitz a decade ago. I never went a holiday without preparing perfect steaks, chickens, pork, rabbit and more from this butcher. The quality was unparalleled. Family & friends begged for my dishes on every occasion. We used to have their charcuterie on every board. That was until recently. We've noticed quality has suffered in the last few years. It's still great, but it is not as excellent as it once was. I've found myself too old and too busy to wait for hours in line after placing orders days or a week in advance. My advice for the owner: Please fix the quality issues with your supplier. Please work out a better system for order pickups on high demand holidays and busy weekends. I find myself using other butchers and it really breaks my heart since my family was always so loyal to Staubitz. read more

If I'm being 100% honest, I don't know much about butcher shops or meats, but this place and the people who work here make it easy to get what you're looking for and are more than willing to explain the differences in certain meats and cuts if you're as lost as I am. There's a solid selection of items from sausages (breakfast, spicy, etc.) to steaks, to pork chops, and I imagine you can absolutely find whatever meat it is you're looking for. I even heard the guy behind the counter ask this customer one time if they wanted the type of pork that was grass fed/etc. or the standard, and I appreciate the fact that they make sure you know which one you're getting, even if you don't ask up front. There's also an entire wall of sauces and seasonings and pastas and other gourmet type items -- if you're looking for something a little different than what you'd normally find at Trader Joe's. These items are pricier, but that's expected, and the meats are priced very decently. read more

Downhill alert. I get the old time butcher thing, but this place is resting on its laurels. Just spent an hour in a pre-Xmas line, incredibly slow, lackadaisical service like it was a Tuesday in July. That would be excusable if the meat were special. It is not. While waiting outside I saw them bring in chicken from Bell & Evans (fine, but Key Food), Leidy's (Bell & Evans-level pork), and then, shockingly, Tyson Meat, which is more like Purdue level. Just cause you put these things in a case doesn't make them special. Don't be fooled by the bougie stuff on the shelves. Paesano or Dellapietra the better bets. read more

I'm a huge supporter of locally owned business. They take pride in work and this is another place that deserves to be recognized. I just started to wander around Cobble Hill and found this place. It's a little butcher shop with a cool neon sign. Once you walk inside the smell of fresh meats hit you. It can vary from person to person whether or not it smells good or bad to them. They have a few good selections of sauces, marinades and spices. The staff is very helpful to any questions you have. If I wasn't going to be walking around most of the day I would have picked up some meat. I didn't want to be "that guy" on the train with a bag of smelly meats. It has always been considered a high-quality, high-end butcher, and I used to walk from lower Pacific Street to their Court Street location for their excellent meat and service. It's all about the quality and the customer service here. Such an old school place, the kind my mom used to take me to as a little girl when she was doing her weekly grocery shopping. The guys at the counter (and one girl) are super friendly (if not a little shy at times) and I always get the feeling that besides slicing cold cuts they would do almost anything for me if I gave them half the chance. This is the best butcher shop around, bar none. My grandpa was a butcher, and going there is like visiting him. Only, they're a tad nicer and a lot less lecherous. I mean, they're not lecherous at all -- simply kind and pleasant. Beyond that, the meat is excellent quality and the service is great. These are nice people who have been in the neighborhood a lot longer than any of us, and they know their business. They give great advice on preparation, cooking times, etc. I've run my plans by them and been corrected several times, and their advice is definitely good. They also carry a good, small selection of cheeses, condiments, and frozen foods. There is also a small section of fresh breads. They will take debit for any amount and Mastercard/Visa for larger amounts (over $10 or $20, can't remember). They carry Schaller and Weber's to-die-for double-smoked bacon. Then one of my old friends tells me he's getting married & moving to the UK & another who's err single now, tells me he misses my cookin... The first time I heard of Staubitz Market was from an old California acquaintance who'd been living in Brooklyn for about ten years. He spoke of suffering the owner's derision after asking if they carried turkey sausage. He also told me about meeting a Scottish professor at a party who recalled his own experience at Staubitz. The man asked the same owner if they carried haggis, and the owner welled up with emotion, explaining that they were prohibited, but added "God bless you for asking." In an age of marauding vegans, an old school butcher shop like this is a rare and treasured find. The guys behind the counter will gladly help you with special cuts, the quality is unbeatable, and they deliver. Update: July '08. I wanted to bar b que something special for a group of seven or eight young ladies stopping by the neighborhood, and I called Staubitz to ask about a Chateaubriand cut. The fellow on the phone asked how many I was cooking for, and when I explained that it would be eight or nine people he said "so you want the entire tenderloin?" I went ahead and gave him my credit card number and when I stopped by the market to pick up my steak, I could tell by the weight of the bag that it was a serious cut of meat. When I looked at the receipt inside, my heart skipped a beat - one hundred and forty one bucks. Having said this, it was more than enough to feed the entire party, provided sandwiches for the entire following week, and most importantly, was the most tender, juicy cut of meat that I've ever had the fortune to grill. This is an AMAZING butcher. I get all of our meat here. they are so friendly and helpful. I walk in and they greet me by name. Hows that for neighborhood? The beef stew cuts are the most beautiful- it almost seems a shame to make a stew with chuck that nice. the filet mingnon is beyond beautiful. Great place -- especially for veal, veal shoulder, calves liver and other delicate cuts. But it's *WAY* OVER-PRICED. And the steaks? Think again. Why? 1. They are prime steaks but they are not AGED. BOOO!!! 2. The steaks are pre-cut. That means you cannot determine the thickness of your steak when ordering. All the steaks tend to be 1/2"-3/4" thickness which precludes the Strip House/Spark's/Del Frisco experience at home. Other local butchers (like Paisano's) pull out a full, dry-aged standing rib roast and cut to order. 3. They don't have NY strips -- only bone-in shell steaks, also at 1/2"-3/4". 4. Finally, their prices for steak are $10 per pound higher than Paisano's, where they dry-age their beef and cut to order (it's not prime but it's better than Staubitz's steaks because of the aging.) If you insist on prime strip, filet or rib-eye steaks, the butcher at the Garden of Eden on Montague is a better first stop -- and it's $2/pound cheaper! read more

This place has been around since the early 1900s at least, but probably earlier, with different owners. I work across the street and always see the butchers taking cigarette breaks against the wall of the next-door funeral home. Their stained aprons against the white brick walls are very weirdly picturesque. But I digress... I got a pork shoulder to roast for Thanksgiving, which I rubbed with cocoa and spices. So good! When it starts to get cold, I like to make short rib stew in my slow cooker. It's sort of my intro to November, if you will. Anyway, I decided to check out Staubitz for short ribs. I was afraid that they would be very pricey, since this place has a reputation for costliness (as well as quality). The short ribs were 9.99 and looked lovely. Oxtails were 7.99. I thought the pricing was fair. I know this is not bargain-basement pricing, but I went ahead and bought the shortribs, which were very nicely wrapped for me. Out of curiosity, I stopped in at Union Market and their short ribs were 12.99 a pound, and no oxtails. Stew turned out great. I don't cook red meat all that much but when I do I think I'll give Union Market a miss and head straight to Staubitz. read more

There's often a massive line out the door of Staubitz, and for good reason. The narrow space is packed to the ceiling with pastas, condiments, specialty preserved goods. On the left is the counter, with a huge selection of conventional and dry aged, grass fed beef. I've been a handful of times--for a delicious, grass fed ribeye, beef bones for Pho, and tenderloin for tartare that they ground for me. The last time I went, I paid $38 for a 16oz dry aged, grass fed ribeye, and a 10oz portion of tenderloin: Slightly pricier than Whole Foods but the quality of the product is so much better. read more
