I am obsessed with Sonshine Cheesecake's matcha cheesecake. I ordered a matcha cheesecake and normal cheesecake, and both had the best fluffy texture and were so airy. These cheesecakes were significantly more delicious than the other soufflé cheesecakes I've ordered in NYC/SF and honestly even in Hokkaido (they're all too way sweet and often lack the fluffy/bouncy texture and seem deflated).
