This spot is perfect! The vibe, the lighting, and the decor!!! We made reservations during our stay and were so lucky to sit at the beautiful bar. It was so beautiful and the person working that night was so knowledgeable about the menu. He made many recommendations and explained the menu in full. We ordered the canned tuna which I was on the fence about but so glad we ordered. The presentation was one of the best I have seen and the freshness was out of this world. I had the rockfish which came in a tho broth which was really good but wish maybe I tried something else. My husband had the black cod which was melt in your mouth delicious. I live only a 25 minute drive but still enjoy taking a little drive to enjoy different scenery and a break from the routine especially on a beautiful sunny Sunday. It was bit overcast so I was offered a seat by the fireplace! I ordered a sparkling water and the rose crush cocktail, very refreshing and not too sweet. I ordered the wagu cheeseburger with truffle fries and it was juicy and the bun was perfectly buttered and toasted. The fries were the perfect size and came with this yummy lemon aioli...for dessert I had the apple tart that was topped with a scoop of vanilla ice cream... the pastry was flaky and the apples were tender and went so good with the ice cream! The serving was amazing and they were attentive just enough! After my meal I found a spot near the restaurant with a fireplace and just lounged around and relaxed. I absolutely loved my 50th birthday breakfast at Solbar before indulging in the Calistoga mud bath experience! Five stars, hands down. Easy reservation, great property and grounds, and lovely ambiance at the restaurant. I checked the menu ahead of time and really wanted both the duck confit benedict and lemon ricotta pancakes, so I told Chris, the server, about that and asked to check if they can do half the pancake order. Little did I know that Chris already had something special cooking - he brought out the little lemon ricotta pancake with blueberry sauce, real maple syrup and a birthday-engraved chocolate piece in addition to my duck confit! Amazing food! No kidding, this place deserves all the praise! Unfortunately we didn't make the breakfast menu like we planned but I'm happy we waited a few minutes for their lunch hour. We started with the artichoke dip with the bread, and we both had salads with their grilled chicken. The bread melted in your mouth! Delicious! We ended up splitting a dessert even though it was lunch hour, lol! It was some type of lemon cake, it was so soft and flavorful. It reminded me a bit like a strawberry shortcake. If you are in there area treat yourself to SolBar. Note that it is located inside of a resort & spa. We were staying nearby at another spa and walked over. It started with a bent fork in my silverware--small thing, but it set the tone. We ordered sourdough bread and oysters as appetizers, but the timing was off. The bread came with our entrees, and they planned to serve the oysters after the meal, which makes no sense. We ended up canceling the oysters. As for the food: * The Reuben was good, but lacked that zest of flavor you'd expect. * The potato salad had a strange herb in it that we just couldn't get behind. * The black cod miso bowl was good, but could've been great with a little more depth. Drinks were also a mixed bag. My son really enjoyed the Clarified Rum Punch, but my Green Lemonade tasted mostly like cucumber water with a splash of lemonade--not my thing. On the service side, the water server was excellent--friendly and on it. The main waiter was just okay, and we had to ask for the check after a bit of a wait. All in all, it was just okay. Our waiter was about 20 years old and clearly didn't belong serving in such a high end restaurant. A second glass of wine was ordered and he delivered it after our friend's dinner was taken away. Our waiter disappeared for large portions of time during our meal. The rockfish dish was sub par. It advertised "gulf shrimp" that were simply a frozen shrimp like a Chinese restaurant would serve. With 2 small slices of shishito peppers. Three of us ordered this dish and he brought 2 ceramics of coconut broth, telling us 2 of us had to share a carafe. The size difference in fish pieces were a kitchen fail. The rockfish quinoa was mushy. The black cod dish was very good and so was the butterscotch pudding. I went here on a Tuesday night with a few business associates to have a leisurely dinner. I was not disappointed. I started with a little gem salad, which seemed to have little cheesy crouton bits mixed throughout the salad. It was a nice change from larger croutons, and the salad itself was pretty fresh. For me, the best thing I had was the short ribs. The meat was perfectly tender, easily came off the bone, and whatever flavor and spices used in the meat, only serve to enhance the beautiful flavor of a perfectly cooked short rib. The charred broccolini was also a nice addition, and the entire plate was a good portion. The hazelnut crunch dessert was exactly as promised: like a giant Ferrero Rocher. The beautiful layers of chocolate cream, and hazelnut was absolutely perfect. The next morning, I ended up coming back for breakfast and tried there Chilaquiles with Housemade chorizo. This dish was outstanding! All the flavors from the various components came through on this dish. I could taste the beautifully spiced chorizo, delicious red sauce, sour cream, pico de gallo, and cheese. It tasted so good, I was a little sad when the meal was done. During a three-night stay in Calistoga. SolBar was one of our restaurant choices. The food was excellent, fresh, flavorful, and executed well. We were a party of two. The crudo of hamachi was the item we enjoyed most. We ordered the cod and the pork. I order cod often at restaurants, and this one was done very well. This is really picky to mention. I rarely give five stars, and I would have if the server hadn't come across as a bit fake and was trying too hard. It was a turn-off. After dinner, we decided to check out the bar for an after-dinner drink and had an Elephant's Memory. The cocktail was enjoyable. If you like mezcal, you should try this cocktail. The service and ambiance here is on point. Unfortunately the food quality and plating has changed so much. Oysters were great. Love the way they serve the mignonette and hot sauce. We ordered an oz of caviar. It was served it on top over a half cup of cream fraiche... I was surprised to see them combined the caviar. Also, they didn't give us a non-metallic spoon which I think is a huge miss if you're being served caviar. The blt was good but it was smothered in avocado sauce and was hard to eat. While the practice is understandable (I used to serve large tables myself), the lack of service provided because of guaranteed gratuity is not. What could have been a great experience was brought down by lackluster hospitality.
