Simplee Pho is definitely one of those hidden gems in Apple Valley! We stopped by around 6 p.m. on a Saturday and were pleasantly surprised by how quickly we were seated. Our server took our order right away, and our food came out surprisingly fast, especially considering it was dinner time. I ordered the steak and meatball pho, and I thought it was an excellent value for the price. The portion was generous, with plenty of rich, savory broth, lots of noodles, and a good amount of tender beef and meatballs. The broth was flavorful without being overly salty, and the meat was well seasoned. It was the kind of comforting meal that leaves you full without feeling overly heavy. While I stuck with the pho this visit, several other dishes on the menu caught my eye, so I'll definitely be back to try more. The restaurant itself is clean and spacious, with plenty of seating, and parking was plentiful and easy to find. Between the fast service, generous portions, and delicious food, it's easy to see why this spot has such a loyal following. We enjoy Pho a minimum of twice a week. On a good week, every other day. This is the worst place in the Twin cities/Rochester, MN region that we've had to date. YOU DO NOT PUT ANYTHING IN THE BROTH FOR TAKE OUT!!!!! They put all of the severely lacking supply of veggies and herbs in the broth ... including! ... slimy CANNED MUSHROOMS!!!! There weren't enough veggies in this vegetarian pho to fill half of my very small female hand!!!!!!!!!!!!!!!!!!!!!!!!! RIPE OFF!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!! I work across the street and decided to try this place out after it changed hands/ownership. I ordered the chicken with mixed vegetables lunch special. I never leave Yelp reviews, but couldn't even get through my lunch and decided I needed to. Basically, the brown sauce and vegetable are soggy and gross and flavorless. It actually reminds me of chop suey. The old place had nice fresh clean veggies. This place uses a frozen/canned vegetable slop. Not sure I will try anything else there, but perhaps the soup is better. Otherwise, their "Chinese" food suuuuucckkksss... I want my $$ back. read more

What a wonderful addition to Asian restaurants in Apple Valley. With a variety of choices, Simplee Pho is without a doubt, the BEST. The restaurant is operated by Lauren and her family. This is one of those places you'll immediately feel like family too! We've been to Simplee Pho twice now and absolutely LOVE everything we've tried including their soups, homemade egg rolls, lo main, yummy egg foo young, pork chop and lets not forget the cream cheese wontons. Service was terrible. They have kids running the front desk answering the phone, waiting tables and cleaning the back kitchen. The little boy wasn't more than 10 years old. I've ordered pho here multiple times and it's great. Good broth and is always something I order…read morewhen I'm not feeling well. The spring rolls are also really good and I love the fish sauce to dip the rolls in. I usually get this delivered, and I once stopped in to pick up and was shocked at the restaurant. It was so cluttered and appeared very dirty. I don't think I would ever eat in the restaurant, and I should be nervous about eating the food, but the pho is always good.
