It's never a bad time for pho but as the colder days approach, I decided to treat myself to Simmer before tonight's graveyard shift. I walked in at 4:30 PM when they reopened and was seated immediately. Had a great dinner width excellent service tonight. Sarah was friendly and the food came up quick. I had the bbq pork spring rolls to start. A little chili oil in the peanut sauce was amazing on those! I would consider making those my main next time and being another appetizer to enjoy. As it was, I had the cabbage salad with lemongrass chicken. So much food and such intense flavor! I took half my food home (including more chili oil in the peanut sauce) to enjoy later. I brought my mom and sister here for dinner during a trip to Graton Casino. The restaurant is very cute and spacious. Parking is ample. Service was speedy and friendly. We started off with the fried calamari. I would give it 3 1/2 stars. It was crispy, but chewy... maybe overcooked. We did family style entrees to share. I like they included a big portion of green salad on the plate. We enjoyed the yellow curry chicken and garlic noodles with no cheese. I love the lemongrass spicy beef. It was bold and full of flavor with tender beef. The ginger chicken was tasty. We had a wonderful dining experience. We will return again. FYI - Simmer is located less than 10 minutes away from Graton. It's the next exit. I would dine here instead of paying for overpriced food at the casino... just saying.... Love the bowls and they are ample. Bring your appetite. I started with the spring rolls with peanut sauce. These are large, definitely for sharing. The peanut sauce is a bit too sweet for me, though it worked with the rolls. Then I got the lemongrass chicken with vermicelli rice noodles. The service was good. Everyone who helped us was super nice. We ordered the garlic noodles with bbq pork and springs rolls with bbq pork. The food was somewhere between ok and good. The noodles were kind of bland and didnt get any garlic flavor. Biggest complaint was the meat. Bbq pork had good flavor but there was barely any in both the garlic noodles and the spring roll. The spring rolls were between 90-95% veggies. In the garlic noodles there was maybe 2oz of meat, but alot of noodles. The ratio is way off and pretty expensive for the amount of meat. We have been going to this restaurant for a while, and I always order R7 either with rice or vermicelli, So on Friday 5/22/26 I ordered the same dish and dish looked delicious but the egg whites was not cooked enough and it was not so good, so I put the whole egg on the side and I was ready to ignore that and keep eating but the pork chop was not good at all no flavor at all and I know how it supposed to taste after getting same dish every time. So, I did not want to make a big deal but if I paid for my meal, I want it to be good, so I talked to the server (very nice young lady by the way) and I told her about it and I said that I want to order something else she went inside but the manager said that they will be charging me for both dishes and we were like WTF, so we just got up paid and I asked to talk to the manager I wanted to say that I don't think was fair for me to pay for a dish knowing that my R7 was not cooked well, so the young lady came and said that the manager spoke only Spanish and he won't be able to communicate with me (well... I Latino and my first language is Spanish) so the young lady went inside and of course the (manager) made another excuse not to talk to me (What kind of manager is that) to me sounds like the manager's feelings were hurt because seems to me that he was cooking and obviously was doing a bad job. I hope there is someone to translate to the manager since according to him he does speak only Spanish. I ordered the Beef Pho Combination with the short rib pho and combined them. The short rib was cooked perfectly. Fell right off the bone. Also ordered the cream cheese crab puffs as an appetizer. Lots of cream cheese, can't really identify the crab, it may be real or imitation. But you cannot tell.. or taste it either way. More of a deep fried cream cheese ball. Still tasted good! All the food was good, just wish the employees were more attentive. Water glasses were empty on the table the whole time we were eating. Came here to try the viral short rib pho that I saw on IG and It did not disappoint! Meat fell off the bone, broth was flavorful. Ordered via Doordash so this review is specifically food related. For the cost, I personally don't think you're getting your worth. I didn't take as many photos as I should've and I apologize because it would help people understand why I say that. Combination Pho (Lunch) ($15) with extra tendon ($3 added as it comes with as well) The soup was fine. They forgot the meatballs. The amount of meat otherwise was 4 small cuts of brisket (the size of two thumbs), 3 THIN (could compete with bacon in thinness) index finger length tendon pieces total, a good amount of tripe cut up. I'm still hungry and normally I'm able to split my pho in half still feeling full. Grilled short ribs ($20) with extra ribs ($5 added) The amount of meat is honestly laughable. 2 Small short ribs for the bowl itself and an additional 2 for the extra (see pic for reference). Absolutely will not be ordering again or going in person. This is what happens when you cheat on your regular place. Read some reviews and decided to stop in and try this place. Super glad I did! The atmosphere was great - the lights were turned down a little bit and nice decor. It was also busy which is a good sign. My waitress was super friendly, and I let her choose the beer for me. She chose asian brothers Vietnamese IPA that complemented my meal perfectly. My meal? Oh yeah, it was filet mignon Pho! Say what!? Yeah, filet mignon Pho! So nice, I had to say it twice! The bowl was piping hot with layers of flavors and fresh tasting ingredients. Simmer has apparently gained recognition from San Francisco Chronicle as a top Vietnamese restaurant in the North Bay in 2013. We stopped in to try a few dishes during their weekday lunch rush. Ordered the spring rolls with pork and shrimp ($12.50), salt & pepper chicken wings ($8), Cabbage salad with lemongrass chicken ($16), Cabbage salad with grilled prawns, and a Pork Vermicelli bowl. All the dishes were nicely made and flavorful. Tasted pretty authentic to me, and my friends. We'll be coming back the next time we're in the area.
